{Recipe}White Sauce Pasta

White Sauce Pasta is easy to make, 30 mins recipe. Restaurant style white sauce pasta can be enjoyed right at your home. It also can be best Dinner or Lunch menu. When you want to be light on your belly. Pasta is always been favourite among Kids and among all pasta dishes, white Sauce Pasta is demanded by most of the Kids because of its Cheesy and Creamy Flavor. In this Pasta recipe I have used colorful Bell Peppers but, you can enhance by adding some nutritious veggies like Broccoli, carrots, corns and many others as per your choice and can also be a great idea for Kids Lunch Box or the weekend meals too.


Pasta as we all know is an Italian delicacy, typically prepared from unleavened dough of wheat mixed with eggs or water and prepared into sheets or other shapes which can be cooked with veggies or meat. For the past recipe the base is either white or red sauce. More to speak about white sauce which is basically called as Bechamel Sauce which originated between France and Italy made from butter , milk, cheese and flour. This Creamy smooth Sauce brings amazing taste to pasta. The sauce is little on sweeter side. Perhaps you can always add spice according to your palette.

How to Prepare Perfect White Sauce Pasta.
  • Do Not over cook the pasta.
  • Make sure while preparing white sauce there are no Lumps in the sauce and for this always keep the flame slow.
  • Pre-Chop the veggies and arrange all ingredients required.
  • Cheese You can use either Grated or Cheese slice too as i have used i above recipe.
  • If No olive oil you can always use butter in preparation of pasta.

Ingredients
250 Gram Pasta(I have used Fusilli Pasta)
2-3 Cubes of Butter 
1 & 1/2 Cup Chopped Red/Yellow/Green Capsicum
1 Large Onion Chopped(I have used White)
10 Garlic Flakes chopped
Salt as per taste & Little oil

For White Sauce
50 Gram of Butter
3 Table Spoon Maida(All purpose Flour)
3 Cheese Slice or Grated Cheese  
1/2 Tsp Chili Flakes
1/2 Tsp Pepper crushed
1/2 Tsp Mixed dry Herb(or just Oregano)

Step Wise Preparation With Pictures

1.Arrange all the ingredients,the keep the pan with water to heat up and add salt and little oil.
               
 2.Once water starts to boil add the pasta and cook for about 10-15 min.Drain the water from pasta and keep it aside.
               
 3.Then in deep pan add butter,add chopped garlic,onions and the chopped bell peppers.Saute for 2-3 min and then remove in plate.
                
4.In the same Pan add 50 grams of Butter ,once melted add the flour and stir continuously so that it gets roasted well in butter.
                    
5.Later add the Luke warm milk slowly in maida and stir simultaneously so as to avoid lump formation in the white sauce .Also add the Cheese slices and stir well to get smooth creamy sauce.
                                                          
                  
 6.Add the Dry herbs and the sauteed veggies and the dry herbs.Mix all well and then add the boiled Pasta.
                        
7.Mix the Pasta in the sauce and there you have the delicious cheesy creamy Pasta.

(Recipe)Mango Popsicle

Mango Popsicle recipe pending to hit my blog. Recipe already available in my Instagram and Facebook. However, couldn't upload detailed recipe on Blog due to my hectic schedule last year handing little boss baby "Ronny" who was just a year old and along with Clive who felt ignored most of time. So there are many recipes resting in my repository since last two years.

The Mangoes I used are the Mankurad Mangoes which are  among the best mangoes found during the season. You can use any varieties of Mangoes as per availability but, make sure its fully ripe and sweet in Taste.

Ingredients
4-6 Ripe Mangoes
1 Cup Milk Maid
1/2 Cup Of Milk
1/4 Tsp Cardamon Powder

Step -Wise Procedure
1.Make sure to have some fully ripe Mangoes in your fruit basket.
2.Next step will be to wash the mangoes,then peel , scoop off the pulp and add it to the mixture jar.
3.Also add milk,milkmaid and cardamon powder.Blend all to fine paste.
4.Then pour the smooth paste to the Popsicle molds and place the lid. Allow the Popsicle to rest freezer for 4-6 ours until set.
5.Once you see the Popsicle hardened well then dip the end part of mold and slowly remove the yummy and chilled Mango Popsicle.

{Recipe}Ragi ladoo / Finger millet Laddu


Ragi or finger millet, you all are aware of its health benefits and i don't think i have to give further details  on it.
Its been in our diet from ages but because of its colour or flavour kids or even adults don’t like it. But as we see these days how modern food impacting our health so its beneficial that we redirect to basic food which is commonly available and so inexpensive as compared to junk food.

In early life Ragi was only used to prepare rotis or porridge.  But, today you have countless recipes, you can add ragi to any recipe and make the dish healthy. Name it Ragi dosa, idly, ragi poha,ragi cakes,cookies, in Goa we prepare dodol, Tizzan and the ragi recipes don’t stop here. So lately i make sure to add ragi in my diet regularly. Perhaps came up with this idea of ragi ladoo..

Gluten free, sugar free & and oil free Ragi ladoo...Super healthy for your kids and also Adults. Hungry tummy? just grab two and eat it rather grabbing chips or other junk food. You can see in pic my little one picking 😋 and elder one munching😍
Its been a month i got ingredients either to prepare dry fruit ladoo or ragi ladoo ,but after enquiring with my mum, my aunties i got idea about mixing the ingredients. Wanted to use jaggery but instead of jaggery used soft dates ,raisins and peanuts for stickiness and binding. While surfing you tube also got to know how dates or raisins can be used for binding instead of jaggery or ghee . And actually  flour nicely gets incorporated with dates , raisins and peanuts .

Servings 25-30
Total preparation Time : 1 hour

Ingredients
1 cup  of Ragi flour
1 cup roasted peanuts
1 cup of soft dates
1 cup of soft raisins
6 Cardamom
1/2 Inch cinnamon

Step wise method
1. Slightly roast the ragi/finger millet flour for 3 -5 minutes on slow flame and make sure you keep stirring it.This roasting method is to cut down the raw smell of Ragi.

2. Di seed the dates and cut half.Add it to mixer jar along with raisins and peanuts. Also add cardamom pearls n cinnamon to the jar. Grind it coarsely .

  3.To Mixer jar add ragi flour and grind all ingredients together. 
4.Once you see all incorporated well,remove it in bowl.Nicely knead the mixer and make round ladoo.


6.Once ladoo done store it in steel container or a glass container.At room temperature can be store up-to 2 weeks and for more you can store in refrigerator.
7.Healthy bite size power pack ladoo's are ready for your growing kids and your hardworking family:)

{Recipe}Potato Cheese Balls

It was Children's day Celebration in Clive's School and they had some cultural fest along with many Food stalls .so i was much relaxed today😁
But how could i not prepare something Special for my kids on children's Day😍.so prepared some yummy cheesy potato cheese balls for Tea time snack 🧀🥔.This recipe will post soon on blog.Already there are two cheese balls recipe on my blog

My kids enjoyed it and wiped out the plate so their tummy happy and their Mummy Happy😍❤

Kids Special

Ingredients
4-6 Potatoes boiled and mashed
1 Green Capsicum finely chopped
1/4 Tsp crushed pepper corns and chili flakes
1/4 Mixed herbs(oregano,basil,rosemary)
1 Cup of Cheese grated
1 Cup of maida slurry
1- 2 Cups White Vermicelli crumbs for coating 
Salt as required
Oil for deep frying

Step wise Method
1.Add Mashed potatoes along with all other ingredients like capsicum,herbs,pepper and chili flakes,cheese,salt as required.
2.Mix all ingredients well and make small bite size rounds.Place it on a plate and keep the potato ball in refrigerator for 10-15 min. 
3.until the potato balls rest in fridge,other side prepare the white vermicelli crumbs by spinning in mixture for few 2-3 seconds. 

4.Also prepare the miada slurry by add water in maida and the consistency should be little liquid and not too thick  . 
5.Like below pic.

 6.Then remove the potato rounds from refrigerator and deep in to the maida slurry .
 7.Remove from slurry and coat with vermicelli crumbs and keep it aside.On the other side keep the oil to head n a deep pan or kadai.

8.Once oil proper temperature deep fry the potato cheese balls until they get nice light brown colour.
 
9.See the below how light brown colour they got.You will notice the potato balls will be crisp from outer cover and soft from inside.Once fried place them on kitchen napkin to absorb extra oil. 

 10.Server these cheesy potato balls to you tiny kids or big kids with dip sauce like tomato ketchup or mayo or just like that also kids will enjoy these flavorful Potato Cheese Balls.

{Recipe}Mango stuffed Paratha

Today's recipe on my blog is Mango stuffed paratha. As i am very late in posting the recipe because it was prepared during mango season .I ended up preparing mango paratha is because the mangoes which i purchased to make jam were not that sweet and also more in quantity,so it was really a big question mark as to what to prepare out of these mangoes rather wasting it?.Then i remembered in 2010 when i was working with American Express we had mango fest in office and we had to prepare any dish using mangoes and during that time i had prepared mango paratha and it was a super-duper Hit.So these office memories helped me recreate my Mango stuffed Paratha.

Mango paratha can also be a good option for kids tiffin box as its sweet and also mangoes are loved by kids.A little time you will have to spend in preparing the mango mixture ,mango pulp being very liquidy it takes bit time to reduce it to thick consistency.But you will not regret spending some much hard time in kitchen because of the amazing taste of mango paratha's. Bet me you will get really great comments from your kids :).So chalo lets begin with the recipe.

Servings:6
Total Preparation  Time:1 hour
Cooking time : 2-3 min for each paratha

Ingredients
For Mango Halwa
6-7 Mango pulp
100 Gram unsweetened  koya
1 Table spoon of Cardamom powder
2-3 Table spoon sugar(add as per your tooth)
1 Table spoon Ghee

For Dough
2-3 Cups of wheat flour
Water  for kneading
Little salt
Oil 
Ghee for frying Paratha

Method

  1. First Knead the dough.(for kneading take flour,add salt and add water little by little and knead until soft.Then add little oil and knead again for 1 min.Once done keep aside in bowl by covering with cloth or lid.
  2. Then too make Halwa: In pan add Ghee once heated up at the mango pulp and stir well for about 10 min.You will see that once it starts to cook it will become more liquid so you require lots of patience. 
  3. After 10 min add koya and sugar .Keep stirring continuously  until it mixes well.Cook for more 20 min till you see the mango mixture thickens .The add cardamom powder and gain cook till its leaves the pan and becomes thick dough of ball.If it still little watery or thin in consistency the keep the mixture in refrigerator for half and hour.
  4. Take the wheat dough and make roundels and keep aside and also make small rounds of mango halwa and keep aside.
  5. Then take each round of wheat and make small roti and the place the mango halwa round as shown below.
  6. Then cover the mango round by wheat dough same as you do for potato paratha or purn polli.
  7. Roll the the same with  wheel pin in shape of chapati,making sure the mango stuffing do not come out.
  8. Fry the mango paratha on hot pan using ghee.
  9. Fry until light brown caramelise on paratha.
  10. Its done and  just perfect snack for you kid.
