Simple Toor Dal Recipe !!!

Servings 4-5
Total time 30 min  Cooking time 15 min

Ingredients
150 gram Toor dal(pigeon pea)
1 large tomato chopped
2 green chilies
1/2 tsp turmeric
5 cloves of garlic
1 large onion chopped
1 tsp mustard seeds
1/2 tsp cumin seeds
10 curry leaves
1/4 tsp Hing(asafoetida)
salt as per taste
green coriander for garnishing
oil for seasoning

Method

  • In Pressure cooker add toor dal and wash properly,and than add required water its shouldn't be more nor less,water can be little above the dal.
  • Than add chopped tomatoes,chilies,turmeric,salt and cook until 2 whistles ,if we take more whistles dal might over cook.
  • Mean while take a deep pan/kadai,add oil,once heated add mustard,cumin and curry leaves,than add garlic crushed and hing, stir all spices well.
  • Than add chopped onions and all then fry on high flame till translucent,than add the cooked dal and seasoned it,mix well and allow it boil.
  • Once boiling for about 7 min add chopped green coriander and serve hot with steamed rice and side dish can be rava(semolina) fried potatoes/pickle/papad.



Sprout moong salad recipe !!!!

Servings 4-5
Total time 2 day for sprout  Preparation time : 10 min

Ingredients
150 gram sprout Moong (green gram)
1 tomato chopped
1 onion chopped
1/2 vinegar
1/4 tsp pepper crushed
1/2 tsp lemon juice
salt as per taste
1/4 tsp chili garlic sweet sauce
1 green chili chopped

Method

  • To make sprout ,first soak moong overnight,than next day morning drain the water and tie all the moong into cotton or muslin cloth and place it into bowl ,keep it aside at least for 1 1/2 day so you get best sprout.
  • Than take the sprouted moong into bowl,add chopped onion,tomato,salt,pepper crushed,chopped chili,vinegar,chili/garlic sweet sauce,1/2 tsp lemon juice and just toss all the ingredients well.
  • Its all ready to be served.Full of nutrients and healthy salad.

Onion & Tomato Sald Recipe !!!

Servings 3-4
Preparation time : 15 min

Ingredients
3 White onions/red onions
2 tomatoes
1 tsp vinegar
1/2 lemon juice
1/2 tsp pepper crushed
salt for taste

Method

  • Cut onions into half moon shape and separate it from each other,cut tomato into half moon shape,
  • add onions and tomatoes cut into bowl,than add salt,pepper,vinegar and lemon juice.
  • toss all the ingredients well .Than add chopped coriander and toss again.
  • Server with spicy vegetarian or non-vegetarian starters.Enjoy the fresh and healthy salad.

Instant Raw mango pickle Recipe !!!

Servings 5-6
Preparation time 10 min

Ingredients
1 Large raw Mango
20 small flakes of garlic
1 tsp chili powder
salt as per taste
1 tsp oil

Method

  • First cut mango into small pieces or vertically as shown in pic,wash it well and towel dry it.
  • than add salt,crushed garlic,chili powder and oil.
  • mix all the ingredients well with hands,so the spieces get mixed well with mango.Just enjoy the mouth watering instnt Pickle.

Stuffed Aloo Paratha Recipe!!!

Servings 4-5
Total time 1 hrs including boiling potatoes  Cooking time 25 min

Ingredients
For The paratha Stuffing

6 potatoes boiled
2 green chilies
curry leaves
2 onions finely chopped
1 tsp mustard seeds
Green coriander chopped
oil for frying

For Dough
Wheat flour
water for kneading
little oil
salt

Method

  • First Knead wheat flour and keep aside,dough should be soft and smooth
  • Than take bowl and mash the boiled potatoes,add salt ,turmeric and green coriander and mix well.
  • In Casserole add oil,than add mustard and Curry leaves once they start to crackle add chopped onions and chopped green chilies.
  • Saute all well,fry onion till translucent,than add mashed potato and mix well in the onions.
  • cover the lid and allow to cook for five min on slow flame.Once cooked allow it to cool down so its easy to stuff and roll.
  • Than take the small round of wheat dough and roll it into mini roti by dusting flour.
  • Take a small ball size potato bhaji and place it in the centre of the roti,than cover the bhaji with roti and press it lightly so it gets packed well.
  • once you sure its packed properly than you can make roll into the safe of roundels, make sure the stuffing is not coming out.
  • Fry the paratha with ghee till golden brown and crispy.
  • Serve hot with Tomato ketchup or curd.

Green Coriander sandwich Chutney Recipe !!!

Servings 5-6
Preparation time : 10 min

Ingredients
1 bunch of green coriander
1 small cup scrapped fresh coconut
2 green chilies
1 inch ginger
5 flakes of garlic
1/2 tsp cumin seeds
1 small lemon
2 tsp sugar
salt as per taste
water for grinding

Method
  • Take a mixer jar and add all the ingredients mention above ie ,green coriander cleaned and washed,green chilies,fresh coconut,ginger,garlic,cumin seeds,juice of one lemon,salt and sugar.
  • Add required water and grind it into smooth and thick paste.
  • Best served as spread for sandwich bread along with butter spread on other bread.


Dosa Batter Recipe !!!

Dosa batter recipe i have mostly posted only for my young readers and friends who buy ready made batter :) Most of my goan friends must be wanting to learn how to make dosa batter so they can enjoy  Dosa  at home :)

Servings 4-5
Total time : 1 day   Cooking time : 1 min or little more per dosa.

Ingredients
3 small cups of Dosa rice
1 small cup of urad dal/black lentil
1/4 cub left over rice
1 tsp salt
1 tsp sugar for fermentation

Method
  • Previous day morning soak dosa rice,black lentil and cooked rice in water.
  • In the evening may be around 7pm you can grind all the ingredients into smooth paste and keep it in a large vessel.
  • Than add sugar and salt ,this helps in fermentation.
  • Next day morning make Dosa's round and crispy.serve hot with Potato bhaji or chutney of your choice. 

Rice+black lentil+cooked rice ground into dosa batter .

Note:
  • In Spring/cold seasons make sure you grind dosa batter little early because cold weather does not allow much of fermenting and which can spoil your wish of best dosa's.
  • At initial days you might have problem in making round and crispy dosa's but i bet you after some more practise you will make perfect dosa's like hotel.
  • Make sure you use Non-stick dosa pan for making dosa.

Potato Bhaji Recipe !!!

Servings 5-6
Total Time: 30 min   Cooking time : 10 min

Ingredients
6 boiled potatoes
2 onions chopped
1 large tomato chopped
3 green chilies chopped
curry leaves
1 tsp mustard seeds
1/2 tsp turmeric powder
1 bowl green coriander chopped
salt as per taste
oil for seasoning

Method
  • Pressure cook and boil the potatoes until cooked,once cooled down remove from the cooker and peel the potatoes and cut into small or medium cubes.
  • Keep kadai/casserole on stove ,once heated add mustard seeds,curry leaves and green chilies,once mustard starts to splatter add chopped onions and saute well,than add chopped tomatoes and cook for 2-3 min.
  • Than add turmeric and salt as required,mix well and add potatoes which are cut into cubes,just toss or mix lightly so the species gets coated well to the potatoes,cover and cook for 2 min.
  • Last garnish with chopped green coriander and serve hot with Dosa or puri.

Mutton Rassa recipe !!!

Servings 5-6
Total time : 1 hr  cooking time 20 min

Ingredients
1 kg Mutton pieces
4 onions
3 tomatoes
2 tsp ginger/garlic paste
2 tsp chili powder
1 tsp turmeric powder
1 cup scrapped coconut
2 large sticks of cinnamon
4 cardamom
10 cloves
2 tsp pepper corns
1 star mace
1/4 nut meg
1/4 tsp fennel seeds
1/4 cumin
1 tsp sesame
1 tsp poppy seeds
1 tsp coriander seeds
green coriander
salt to taste
oil for frying

Method
  • First boil mutton for that head oil in pressure cooker,add 1 onion chopped vertically,1 stick of cinnamon,2 cardamom,5 cloves,1 tsp pepper corns and tomato chopped,saute all the ingredients,than add turmeric powder,mutton and salt.Add water as required and pressure cook until mutton is cooked ,take about 6-7 whistles.
  • Now preparation starts for making main paste of the dish.Start with keeping kadai on stove,then add little oil,once heated add 1 sliced onion saute well ,than add scrapped coconut and toss till golden brown.remove in separate plate and keep aside.
  • In the same kadai toss all the dry spices ie 1 stick of cinnamon,2 cardamom,5 cloves,1 tsp pepper corns,1 star mase,1/4 nutmeg,1/4 fennel seeds,1/4 cumin seeds.1 tsp sesame seeds,1tsp poppy seeds,1 tsp coriander seeds ,toss all well but make sure its not burnt.
  • Grind roasted coconut,dry spices and green coriander into fine paste.
  • Keep deep kadai on stove ,add oil as required,than add 2 sliced onions and fry them till transparent,than add the boiled mutton and toss in onions for few min,add the ground paste and mix well into the pieces of mutton and cook on slow flame for about 10 min until the mutton cooked well in masala,than add hot water so that it becomes thin gravy and let it shimmer for more 10 min .Garnish with green coriander leaves.
  • Serve hot With Rice or pav.


Note: Rassa means thin Gravy.

Chicken Dry Recipe !!!

Servings 5-6
Total time : 1 hr  cooking time 20 min

Ingredients
1 kg chicken cleaned
4 onions
3 tomatoes
2 tsp ginger/garlic paste
2 tsp chili powder
1 tsp turmeric powder
1 cup scrapped coconut
2 large sticks of cinnamon
4 cardamom
10 cloves
2 tsp pepper corns
1 star mace
1/4 nut meg
1/4 tsp fennel seeds
1/4 cumin
1 tsp sesame
1 tsp poppy seeds
1 tsp coriander seeds
green coriander
salt to taste
oil for frying

Method

  • First boil chicken for that head oil in pan,add 1 onion chopped vertically,1 stick of cinnamon,2 cardamom,5 cloves,1 tsp pepper corns and tomato chopped,saute all the ingredients,than add turmeric powder,chicken and salt.Cook the chicken on medium flame till chicken is cooked.Add water if required or as can cook in the water which chickens leaves.
  • Now preparation starts for making main paste of the dish.Start with keeping kadai on stove,then add little oil,once heated add 1 sliced onion saute well ,than add scrapped coconut and toss till golden brown.remove in separate plate and keep aside.
  • In the same kadai toss all the dry spices ie 1 stick of cinnamon,2 cardamom,5 cloves,1 tsp pepper corns,1 star mase,1/4 nutmeg,1/4 fennel seeds,1/4 cumin seeds.1 tsp sesame seeds,1tsp poppy seeds,1 tsp coriander seeds ,toss all well but make sure its not burnt.

Note : do not over cook the chicken.

Upma Recipe !!!

Servings 3-4
Total time 15 min

Ingredients
2 cups Rava/suji
4 cups of water
2 green chilies
1 large onion
curry leaves
1 tsp mustard seeds
1 tsp sugar
cashew nuts
oil for frying
Green coriander for garnishing
1 table spoon Ghee for frying rava
salt as required

Method
First add ghee in kadai,once heated add rava and toss it well till light golden brown,than remove t in plate and keep aside.In other kadai add oil,than add mustard seeds +curry leaves ,once crackled add onion chopped,green chilies and fry well,than add cashew nuts and sugar .than add water ,once water starts boiling add salt and tossed rava,keep stirring so the lumps are not formed,Cover the kadai and make the flame on sim and let it cook for 5 min.Open the lid and sprinkle green coriander and again mix the upma well .off the stove and serve upma hot.While serving add Sev/chivda

Brinjal Bhaji with Galmbo(dry Prawns) and rice Bhakri !!!

Servings 3-4
Total time 50 min   Bhaji cooking time: 30 min
Rice roti : frying time 20 min

Ingredients
For Bhaji
4 Brinjals(preferably green brinjals)
1 large onion chopped
1 cup small dry prawns soaked in water
2 tomatoes
2 tsp chili powder
1/2 tsp turmeric powder
1/2 tsp garam masala
salt as per taste
2-3 pieces of dry mango /little tamarind

For Bhakri
Rice flour
hot water

Method
To Make Bhaji,first cut the brinjal's into medium pieces ,on the other hand keep on stove kadai,add oil once heated add chopped onions,saute well,meanwhile add soaked dry prawns and chopped tomatoes to the brinjals,also add chili powder, turmeric and salt in brinjal,mix all these well and than add in kadai,toss well and let it cook on slow flame for about 5-7 min.Than add 3-4 small dry mango or tamarind,garam masala and water as required .Stir well and allow to cook for about 20 min on medium flame.Serve hot with hot Rice roti

Method to make Rice Roti/rice Bhakri
keep a pan and heat water ,once water is boiling ad rice flour and mix well,off the stove and cover the pan with lit,once its little cooled knead dough it with your hand.Once kneaded make small roti's ,place it on hot tava and apply water on top ,once water is little dried turn the roti,fry till its nicely cooked.

Mackerel Recheado Recipe!!!

Servings 3
Total time 30 min

Ingredients
Fresh Mackerels 3
1 cup Recheado Masala
salt as required
oil for frying

Method
Take the Mackerel and give a deep cut on the backbone so you can add recheado masala,once the cuts are given add salt to the mackerels properly inside out(if salt is less fish wont taste that good),than apply the recheado masala again inside out of mackerels and allow it to marinate for about 10 to 15 min.Once marinated shallow fry till dark brown or until the masala and mackerels are fried properly.


On the Tava/Pan at the beginning


Few more minutes and it will be done !!!

Note:
To make Recheado masala(make 500 gram )
50 grams Red chilies
2 Large pods of Garlic
5 inch ginger
1 table spoon Cumin seeds
1 table spoon  pepper corns
1 table spoon cloves
2 sticks of cinnamon
1 small ball of tamarind
vinegar to grind and preserve for at least 6-8 months 

Chonak Fry Recipe !!!

Chonak Fish one more type of fish available in goan fish markets,in English its called as Giant sea perch or Asian sea bass and in konkani its called as Chonak !!!Most people in Goa relish this fish.If you guys visit Goa and want to taste chonak fry you can visit  Ritz Classic 10678 1st floor wagle vision building,18 June road ,panaji or Anandashram Rue 31 janerio patto colony,fontainhas,opposite to hotel venite,panaji......


Servings 3-4
Total time 45 min  Marinate : 30 min  Frying : 15 min

Ingredients
4 chonak slices
1 table spoon ginger/garlic paste
1 tsp turmeric powder
1 tsp chili powder
1 tsp pepper crushed
1 lemon juice
1 cup rava
salt to taste
oil for shallow frying

Method
Start with washing the fish properly,let the water drain out completely from the fish(can use kitchen towel to remove extra water )than apply salt,turmeric powder,chili powder,pepper crushed and lemon juice,mix the chonak fish properly in the spices,but make sure the slices don break than marinate for about 30 min.After 30 min take the fish and dab in rava till it applies on both side of the fish slice and shallow fry for about 15 min or till chonak is fried well. Can attack right after its out of pan !!!!

Capsicum and chicken fried rice Recipe !!!!

Servings 4-5
Total time 30 min  cooking time 10 min

Ingredients
4 cups Basmati rice cooked
2 cups chicken boiled and shredded
10 cloves of garlic 
2 onions chopped
2 large capsicums sliced vertically
4 red chilies
1 tsp pepper corns
1 tablespoon vinegar
2 tablespoon sweet chili/garlic sauce
1 table spoon soya sauce
salt to taste
1/4 tsp sugar 
oil for frying

Method
In pan add oil,once heated add onions and saute well,meanwhile roughly grind garlic/red chilies/pepper corns and vinegar  and keep aside.once onions sauteed well add capsicums,chicken shredded and the ground spices,toss all the ingredients well and allow to cook on high flame for 2 min,reduce the flame and add the sauces ie sweet chili/garlic sauce and the soya sauce,salt and sugar as required.mix well and once all the ingredients are cooked than add precooked rice and toss well .For about 2 min keep on slow fame and allow the flavors to enter the rice.Its done .

Penne Pasta in white sauce !!!

Servings 4-5
Total time 30 min cooking time 15 min

Ingredients
150 gram Penne  pasta boiled
chicken boiled and shredded
1 bowl capsicum cut into small cubes
2 medium size onions chopped
10 large cloves of garlic chopped
4 tomatoes chopped (blanched )
10 black olives
1 tsp pepper crushed
1 tsp chili flakes
1 tsp oregano
shredded cheddar cheese as required
olive oil

For white sauce
1 table spoon all purpose flour
1 cup milk
2 table spoon butter

Method
Preparation of white sauce ,for that add butter in pan,once melted add all purpose flour,stir well in butter,than slowly add milk and keep stirring so lumps are not formed ,if its too thick you can add little warm water or extra milk,for the flavor of sauce add little chili flakes and pepper.
make sure you have a eye on the pan were other stuff is cooking,
In pan add olive oil,once heated ad onions,capsicum , toss well,than add shredded chicken ,crushed pepper and chili flakes ,let it cook for about 2-3 min.than add oregano and white sauce and mix well ,than add the boiled pasta,toss well till its nicely coated with the sauce,at last add the olives and shredded cheese ,cover the lid and allow it to cook for more 2 min till cheese is melted.
