Sabudana Vada !!!

Servings 4-5
preparation time 30 min

Ingredients

2 Cup sabudana soaked  for around 5-6 hrs(tapioca sago)
4 Boiled potatoes
1/2 cup roasted and coarsely ground peanuts
3-4 green chilies chopped
1 cup green coriander chopped
curry leaves
1 tsp Garam masala
Salt as per taste
oil for frying

Method
First drain the water completely from sabudana so that its completely dry ,then in one bowl add sabudana,mashed potatoes,green chilies ,curry leaves,peanuts ground,garam masala,green coriander leaves and salt as per taste.Mix all the ingredients well and make sure the mixture is not sticky or watery,if its sticky then you can add corn flour for binding.
once done mixing is done then take small amount in hand round in shape of a small patty or rounds ,then deep fry in oil till light golden brown.Serve hot with tomato ketchup or green spicy chutney.








Methi sabzi (fenugreek side dish)

Servings 3-4
Preparation time 15 min

Ingredients
2 small bunch of methi
1/2 cup soaked Toor Dal(split pigeon peas soaked overnight)
2 medium onions chopped
2-3 green chilies
Salt
Oil

Method
Clean and cut the methi leaves and cut fine, in pan add oil once heated add onions and green chilies, fry well,then add methi,toor dal,salt and mix well, make sure flame is low,cook it on low flame about for 10-12 min. Serve with roti or as a side dish.

Royal Khoya and dry fruits Paratha!!!

Servings 5-6

preparation time :45 min

Ingredients

2 cups whole wheat
200 gram unsweetened khoya /mawa
150 gram of chopped dry fruits(almonds/pistachios/raisins)
1 cup of milk
1 tsp cardamon powder for flavor
4 tsp sugar
butter or ghee for frying
water for kneading flour
little salt

method

Knead the flour well by adding little salt,water and milk, knead till t becomes soft.allow it to rest for around 15 min.

For stuffing
In pan add khoya,dry fruits and cardamon,sugar and mix well and then cook on low flame till the mixture becomes little soft so its easy to roll the paratha.

Take the wheat which is already kneaded,make round in shape of small roti ,then add table spoon of the khoya stuffing and roll into small chapati,make it slowly so the stuffing is not spilling out.then fry on tava/frying pan by applying ghee or butter till golden brown.yummy dish for kids :)





Rice tossed with Chicken & mix vegetables !!!

Servings 4-5
Preparation time : 25 min

Ingredients

3 cups of rice cooked
250 gram boneless chicken
1 large onion chopped
1/2 cup carrots chopped
1/2 cup capsicum cut into julienne
1/2 cup french beans
1 table spoon red chili paste
2 table spoon tomato Ketchup
1 tsp pepper crushed
1/4 tsp basil leaves (dried)
1 table spoon Garlic chopped
salt to taste
vegetable oil/olive oil

method

In Pan add oil ,once heated add garlic and onion,let it fry for some time,then add chicken and fry well till it cooks well.Keep the flame on high while adding veggies ,then add the vegetables and toss well till it cooks well, then add red chili paste,tomato ketchup,pepper,basil and salt.once all the ingredients mixed well then add cooked rice and toss well till get the flavor of all the ingredients. Serve hot .

{Recipe}GoanPrawn Rissois

 It is a simply snack with cheesy prwan stuffing in the the roundels prepared of all purpose flour and then shaped in those tiny moon like shape and then dip in egg and roll in bred crumbs and deep fry,so yummm...Rissois  recipe on my blog but not that perfect how i prepared today. Specially prepared as clive was missing rissois and since mum with me taking care of little one i got time to focus on cooking


Serving: 7-10
Preparation time: 30 min

Ingredients

For dough
1cup Atta(whole wheat flour)
½ cup maida(all purpose flour)

For filling
½ cup boiled prawns
½ cup milk
1 table spoon butter
2 tsp Maida
1/4 tsp pepper powder
1 pinch nutmeg
2 tsp ghee
Salt to taste + cheese optional
2 cups water
2 eggs
Bread crumbs

Method

Keep a pan on stove, add butter and milk .once it becomes warm add 2 tsp all purpose flour and cook together by stirring continuously so no lumps are formed. later add prawns ,salt ,crushed pepper ,nutmeg and stir well till everything is mixed properly.

Meanwhile to make dough for pastry keep vessel on pan add water and allow it to boil, then add salt +ghee 1/2 cup maida+ 1 cup atta and mix well till flour observes water. Once the dough mixture is cooled nicely mashed it with hands and make nice soft dough.


Make small roundels in from of small chapatti (if not round cut the round with a round cutter or round Tiffin) then add the stuffing of the prawn and fold the other end of the roti and press it well  so  end  the filling doesn't come out, after that deep the pastry in beaten egg roll in bread crumb and deep fry till golden brown.





Pork Vindalho

Servings 6-7

Marinating time 2 hrs or can do overnight

Preparation time : 30  to 45 min

Ingredients

1 kg Pork
Salt
2 onions
15 red chilies
6  green chilies
1 large pod of garlic
1 tsp cumin seeds
¼ tsp turmeric
¼ sugar
Today Vinegar as required

Method


Start with cutting of pork into small pieces, wash it and towel dry each piece and apply salt. On other hand grind red chilies,garlic,cumin and required vinegar to grind it till smooth paste.Apply the ground paste to pork and marinate for 2 hrs or can do for overnight  leaving it in refrigerator .Arrange the marinated mixture in earthen pot or non-stick casserole,then add onions cut vertically ,sugar,vinegar little and salt as per taste ,allow it to cook on medium flame until pork is cooked well.Best to serve with goan pav or poi .

Yellow Pumpkin Bhaji ( Sabzi)

Servings 4-5
preparation time : 30 min

Ingredients

1/2 kg yellow pumpkin (cut into small cubes)
1/2 cup scrapped coconut
10 cloves of garlic crushed
5 dry chilies
1/2 tsp mustard seeds
1 large onion
1/4 tsp turmeric
oil
salt to taste


method

In a casserole pan add 2 tablespoon oil,once heated add mustard,garlic crushed and red chilies broken into two fry till it mustard crackers,then add finely chopped onions,turmeric powder and fry well till onion is becomes soft.Then add the pumpkin pieces and salt,toss it well until all masala gets coated to the pumpkin pieces,cover the pan and cook on slow flame for 10 min,later add scrapped coconut and mix well,again allow it to cook for 10 to 15 min on slow flame until it cooks.Serve with hot with Roti's or side dish with white rice.



Instant Coconut Laddu's

Servings 5-6
Preparation time 30 min

Ingredients

2 medium size coconuts (desiccated)
1 Tin of Milk Maid
1/2 cup Pistachio's chopped
1/2 tsp cardamon powder

Method

In one bowl add desiccated coconut,condensed milk,cardamon powder and crushed Pistachio's,(little desiccated coconut keep aside for rolling laddu's)mix all the ingredients well and cook in non stick pan on medium flame till the mixture becomes dry.Once cooked well allow it to cool down little(because laddu's will round better if the mixture is warm),apply slight water or oil and roll into round laddu's ,roll in desiccated coconut and place piece of pistachio.

Pan Cake with dry fruits

Serving 3-4
Preparation : 20 min

Ingredients

2 cups of maida (all purpose flour)
2 cups of milk
1/4 tsp baking powder
2 eggs
3-4 table spoon sugar(as per sweet required)
1 pinch of salt
one hand full of dry fruits(chopped almonds/raisins/pistachio/walnuts)
strawberry's
butter for frying


Method

In big bowl add eggs and sugar, beat both ingredients well,then add maida ,pinch of salt , dry fruits and mix well .once mixing is don keep frying pan on stove add the batter into small pancake and add butter around to fry, once fried well remove from pan and  place it on serving plate ,around add strawberry's.While serving can add honey on top little if you like.

Quick Chicken Mushroom and Corn Rice

Serving 3-4
Preparation time 10 Min

Ingredients

1 big bowl Left over rice
1 Small bowl Chicken cut into small pieces
1/2 bowl paneer cut into cubes
1/2 bowl corn kernels
small size onion chopped
1/2 tsp pepper crushed
1/4 tsp zeera/cumin seed
salt to taste

Method

In Kadhai add oil once heated cumin add chopped onion once fried add chicken ,fry till it is cooked well ,then add paneer and corn then add pepper and salt ,let cook well .once everything is cooked add rice and toss well till all ingredients gets mixed well.Sever hot. Specially good meal for kids since its so colorful :)

Evergreen Chicken Fry

Serving 4-5
Marination time 30 min or more as required
preparation time 30 min

Ingredients

1/2 kg chicken boneless or drums
1/2 bunch green coriander leaves
4 green chilies(add depending on spice)
4 tsp curd
1/2 lemon
salt to taste
oil for frying

Method

For marination in blender jar add coriander,chilies and curd ,grind to a fine paste and apply to chicken pieces along with salt and lemon mix well and marinate for about 30 min .Then fry the chicken pieces on non-stick pan till cooked well and colour turned to golden brown.Serve as a starter or side dish.


Mutton Shimmered in tomato and red chili paste

Serving 4-5
cooking time 30 min

Ingredients

1/2 kg mutton (if tender no need to pressure cooker)
2 medium onions (fried and make paste)
2 large tomatoes (paste)
2 table spoon red chili paste (soaked in hot water for 30 min and make paste)
2 tsp ginger garlic paste

Method

If Mutton is not tender then pressure cooker with little oil,small amount of cinnamon,5 cloves,2 ilaichi,pressure cook for about 15 min (approx 5 whistles).once mutton is cooked keep it aside,meanwhile in kadhai add little oil,then add onion paste and fry well,then add chili paste again fry the masala for 3 min, then add tomato and ginger/garlic paste, mix all the masala well and let it cook on medium heat for about 5 to 10 min till the oil separates from the masala's.Add mutton and stir well in gravy,  add salt if required,  let the mutton cook in gravy on slow fame for about 15 min, while serving garnish green coriander. Serve with roti's , Naan's or Rice.!!!!

Broccoli Pasta

Preparation Time 10 min
Serving 4

Ingredients

200 grams Fusilli Pasta boiled
5 big garlic cloves finely chopped
4 medium tomatoes blanched
1 large onion
1 medium size floret of broccoli
2tsp chili flakes
pepper crushed as per taste and spice
1/4 tsp oregano
1/4 tsp basil leaves dry or fresh
cheddar cheese grated
10 black olives cut into pieces
Olive oil


For Boiling pasta add little salt and 5 drops of butter or oil while boiling so pasta doesn't stick to each other

To Blanch the tomatoes boil the tomatoes and peel the skin and then chop


Method

In a pan add olive oil once heated add chopped garlic and onion ,saute nicely till onion turns translucent,then add tomatoes chopped,broccoli,fry well later add basil,oregano,olives,chili flakes and salt as required once everything mix well add pasta and toss it in the mixture well,last sprinkle the grated cheese and cover it for few min so the cheese melts.serve Hot.

Chicken Salami Sandwich Recipe !!!

Ingredients

Sandwich Bread
1 onion cut into thin rounds
1 tomato cut into thin rounds
1 capsicum
2 Cheese slice
2 Chicken salami's of your flavor


Method
First if salami is frozen allow it to be at room temperature.once the salami is soft shallow fry in on tava till golden brown,than take slice bread,place fried salami,than place the roundels of onion,capsicum and tomatoes ,last place the cheese slices and cover the sandwich with other slice.Lastly grill the sandwich in a grill or if don have one ,place the sandwich on hot tava and press the sandwich with your hands or any flat aluminum plate for about 2 min on both side till golden brown.for dip you can use ketchup.



Note : you can use mayonnaise also for spread on sandwich
