Peach Chicken fry

Fried chicken is loved by all and its also a yummy starter or an side dish .Fry chicken is demanded more  then Chicken gravy.I keep trying different ingredients when i plan of frying chicken.So today tried using peach as the main ingredient for the marination and for my surprise it turn out awesome. I made sure i din't over cook the chicken because i wanted to feel the juices of peaches to burst in mouth .

Once the Chicken was ready i din know what name to give because it was just and experiment in my kitchen :) ,so ended up giving the name "Peach Chicken Fry".All loved it in my home and it was awesome Sunday meal along with Vermicelli stir fry ....Recipe to follow in next post. ;)

Total Preparation Time : 60 min
Cooking Time : 20-25 min

Ingredients
4 Chicken Drumsticks
6 Ripped peaches cut into pieces
2 Table spoon yogurt
6 Cloves of Garlic
1 Table Spoon Pepper corns
1 Green Chili(can add as per spice)
1 Tsp of Gram flour(if required)
Oil for frying

Method
  • Take a mixture blender add yogurt,peaches,garlic flakes,pepper corns,green chili and grind all to a fine paste.
  • Then take the chicken drumsticks and make sure you towel dry them. Pour the ground paste over the chicken and also add salt.If you find the paste too watery then can add gram flour just to thicken it.
  • Mix all well and allow the Chicken drumsticks to marinate for around 30 min .
  • After 30 min of marination shallow fry the peach Chicken until golden brown.(If you have grilled pan it will be great.)
  • For serving place few roundels of Peach around.Serve Hot as starter or side dish.

Corn and Carrot Upma Recipe

Upma or Upeet as you know is very common breakfast in south India and Maharashtra. Upma is prepared by using semolina and other veggies for seasoning.Most commonly used veggies are green peas,carrots. Upma is also prepared just plain by just seasoning of curry leaves and mustard ( plain upma recipe). In this recipe i tried using sweet corn and carrots ,sweet flavour of corns also gives great taste to any dish.I was not that sure about Upma tasting so great after adding Corns.

Total Preparation Time : 15 min
Cooking Time : 5-7 Min

Ingredients
2 Cups Semolina
4 Cups of water
1 Cup of sweet corn and carrots(carrots cut into small dice)
1 Onion chopped
5-7 Curry leaves
1 Tsp Mustard seeds
Oil
Salt as per taste
1/2 Tsp Sugar just for sweetness
Fresh coriander for garnish

Method
  • First take the semolina and roast it in pan until light golden brown.You add ghee also while roasting but its optional.
  • In pan add oil may be around two table spoon,once heated add mustard seeds.After it starts to crackle add curry leaves and onions.
  • Stir the onions well and make sure it doesn't burn.Then add the corns and carrot.Once again give a stir and cover the pan and allow it to cook for 2 min.
  • Then add water,salt and sugar.Once you see water boiling reduce the shim and add the semolina . Immediately stir it well and cover the pan .Let it cook for 3 min approx or as the semolina will get stuck to pan.
  • Again stir well and switch of the stove .Its done.
  • Lastly garnish with fresh coriander and serve hot for morning breakfast or evening Tea time snack.

Goan Fish Caldine Recipe

Caldine or  Caldinha is a  mild yellow coloured curry with less of spice .Caldine is mostly prepared by using coconut milk and few spices and in that creamy curry add fish such as pomfret,King fish ,prawns or any other fish chunks gives the great Taste .Its also prepared by using combination of fish and vegetables too. Caldine is loved by kids because of its mild spice .Caldine is best to serve with hot steamed rice or Pao too,Its just Yum. Lets begin to make this yummlicious goan Caldine.
Ingredients
1/2 kg Fish Chunks(can take Pomfret/King fish/Prawns)
3 Table spoon Vinegar
1 Coconut
1/2 tsp Cumin seeds
10 pepper corns
1 Tsp Turmeric powder
1 Table spoon Coriander seeds
2 Onions sliced
2 Tomatoes Chopped
1 Cup Tamarind Juice
6-8 Garlic flakes
2 Green chilies
salt as per taste 

Method

1.Take the fish chunks,apply salt ,vinegar and keep aside.
2.Grind all the above ingredients into fine paste using water.
3.Extract the coconut juice into thick and thin juice and keep aside.
4.Cut the onions ,tomato and chilies into desire shape and keep aside.
5.In pan add little Oil and saute the onions,tomatoes and green chilies.After sauteing for few min add fish Chunks.
6.Then add the spices masala into the fish and stir slowly making sure fish is not broken.Cook for about 2 min.

 7.Add the extract coconut juices that is thick and thin juice.Stir well so that the spices paste and the coconut juices get mixed well.Add salt if required and cook the Caldine for 10 min on medium flame until fish is cooked.Once done Serve Hot with steamed rice.
