Veg Grill Sandwich


Sandwich is a food item consisting of one or more types of food,such as vegetables,cheese slice,or meat between the slices of bread .its served either just like that or grilled.Sandwich is just loved by every one whether small or big or old.The taste and crunch of fresh veggies is just great.Sandwich can be quick bite at anytime,it may be breakfast,lunch or tea snack or dinner.Its light to digest and we don feel heavy after eating sandwich.

Today my recipe is for grilled sandwich with some vegetables ,cheese,mayonnaise and lastly grilled to give that little smoky flavour.

Total Preparation Time : 20 Min
Cooking Time : 5 min

Ingredients
8 Slice Breads
1 Large onion cut into thin rings
1 Large tomato cut into thin rings
2 Small Capsicums sliced into thin rings
4 Cheese Slice
1 Cup Mayonnaise
Butter

Method

  • Take Bread slice,apply butter and place the first layer onions,then second layer tomato and third layer capsicum.
  • Than spread mayonnaise as required,place cheese slice and then cover with other bread slice .
  • Grill on electric grill or grill pan for 2-3 min.
  • Its Ready serve immediately with tomato ketchup.

Chicken PopCorn with oats coating

 

Chicken Popcorn is the deep fried Boneless chicken marinated with spices and egg and then coated with oats rather then corn flakes .I was very well aware of chicken popcorn fried with corn flakes but since i had lots of oats available i thought let me try chicken pop corn with oats coating.

The recipe is just yum and with lot of crunch,and chicken pieces being small and boneless easy for kids to eat.So lets begin with crunchy Chicken popcorns.
Servings 4-5

Cooking time : 20 min

Ingredients

500 Gram Boneless Chicken cut into small cubes
1 Table spoon Ginger/garlic paste
1/2 Tsp Pepper crushed
1/2 Tsp Chili flakes
1/2 Tsp oregano
1/2 Tsp dry basil
1 Egg beaten
1 Table spoon All purpose flour
1/2 Table spoon Corn flour
1 Table spoon lemon juice
1 Tsp Vinegar
Salt as per taste
Oats for coating
Oil for frying
Method
  • wash Chicken cubes well and towel dry.Than add salt,pepper crushed,chili flakes,ginger/garlic paste,lemon,vinegar,beaten egg,all dry herbs and mix all the ingredients well.
  • Add all purpose flour,corn flour and mix well again.Allow it to marinate for 30 min.
  • Keep oil for heating on the other hand in Plate take required amount of plain oats ,coat each chicken piece well and arrange the coated chicken pieces well .
  • Once oil is heated deep fry the oats coated chicken until crispy and golden brown in colour.

Mutton Pepper Fry


Mutton Pepper Fry Tried first Time and it was just classic.Recipe followed from Food Food Show by Chef Sanjeev Kapoor. Little procedure different from that shown in the original recipe.  Photo Credit to my Brother Lawrence Silveira.

Servings 5-6
Total Preparation Time : 1 hour
Cooking Time : 25 min

Ingredients
1 Kg Mutton
4 Onions finely chopped
4 Red chilies
1 Tsp Turmeric Powder
20 curry leaves
1 Table spoon garlic paste
1 Table spoon ginger paste
3 Green Chilies Slit
1/2 small bowl green Coriander for garnish
1/2 Lemon Juice
4-5 cloves
2 cardamom
1/2 Inch Cinnamon
Oil for cooking


For Dry Masala
1 Table spoon Peppers
2 Table spoon Coriander seeds
1 1/2 Tsp Cumin seeds
1 Table spoon Dry Coconut

Method

  • First wash the Mutton well and drain the water well.Than in Cooker add oil,once heated add 1/2 onions,10 pepper corns,cardamon, cinnamon,cloves and saute well.
  • Once onions are translucent add mutton,turmeric and salt.Saute the mutton on high flame.After stirring for 5 - 7 min add approx of 2 cups of water and pressure cook the mutton.Take about 4 whistles.(whistles depending on the tenderness of mutton)
  • On the other hand dry roast the Spices that is coriander seeds,pepper corns,cumin seeds, dry coconut and grid them all together roughly.
  • In other pan heat oil,than add curry leaves,dry chilies and remaining onions chopped and saute well.
  • Than ginger garlic paste and mix well,add mutton(if mutton stock is more then drain and keep in fridge for future use)and mix well.Make sure you keep the flame medium.
  • Than add the dry spice powder and saute well .Later add 1/2 lemon juice and again stir well.
  • Once all the ingredients are added into the mutton cover it and cook for more 5-7 min on slow flame and then its done.
  • Lastly garnish with green coriander and serve hot.Just Classic pepper Mutton.

Pomfret Recheado


Fish recheado is loved by all goan's and you can say fish recheado is common dish prepared in our homes.Its quite easy to prepare recheado because recheado masala's are always preserved in our kitchens .Red Recheado masala is blend of Indian spices for Spice ,vinegar for savory flavour and last sugar for the sweetness as most of the goan food is.So today lets stuff the Pomfret with recheado masala and fry till golden brown.

Servings 2
Preparation time :40 min
Cooking time:10-15 min

Ingredients

2 White Pomfrets (cleaned and give cut on the back bone of pomfret)
2-3 Table spoon of Recheado Masala
salt o taste
Oil for frying

Ingredients for  Recheado masala(grind into fine and smooth paste store in glass jar)
50 grams Red chilies
2 Large pods of Garlic
5 inch ginger
1 table spoon Cumin seeds
1 table spoon  pepper corns
1 table spoon cloves
2 sticks of cinnamon
1 small ball of tamarind
vinegar to grind and preserve for at least 6-8 months 

Method
  • Take the pomfret and apply salt to it,take generous amount of  recheado masala and stuff properly into the cuts of pomfrets.
  • Keep it side for about 20 min to marinate.
  • Add oil on to the pan and once heated shallow fry the pomfret till golden brown.
  • Once fried well serve hot with steamed rice,fish curry and recheado pomfret as side dish.yummy yummy tummy.

Tuna Croquettes Recipe


Tuna Croquettes a quick and easy snack for kids ,or for Tea time snack ,or can be one among the party snack.Since Tuna used is canned Tuna so much of struggle  is saved and just you can start with preparing the round cylindrical shaped croquettes by adding few other ingredients like mashed potatoes,herbs of your choice.some spices and additional veggies if required.

100 Garam canned Tuna
1 Large Mashed potato
1/4 Tsp pepper crushed
1/4 Tsp Chili Flakes
1/4 Tsp Garlic crushed
1 Table Spoon Coriander leaves Chopped
salt to taste
1 Egg
Bread crumbs
Oil for Frying

Method

  • Take a large bowl,in that add the tuna meat,add mashed potatoes,pepper crushed,chili flakes,garlic crushed,chopped coriander,salt.
  • Mix all the ingredients well and keep aside.
  • On the other hand beat one egg and place bread crumbs in a plate and also keep oil for heating.
  • Take the Tuna Mix and shape it into cylindrical shape and keep aside.
  • One bye one take the prepared croquettes,deep into the eggs then roll into the bread crumbs and deep fry till golden brown.  
  • The croquettes are done,enjoy it Hot with tomato sauce or ketchup.
