Potato and cheese omelette !!!

Servings 1
Preparation Time 15 min

Ingredients
2 eggs
1 large potato
cheese grated as required
1/2 tsp pepper crushed
salt as per taste
olive oil or butter for frying

Method
In as bowl break eggs ,add salt ,pepper and beat well,meanwhile peel potato and cut into extra thin rounds or you can use slicer.Than add olive oil in pan,once heated place the potatoes and sprinkle salt and pepper crushed fry the potatoes well till golden brown.Later pour on top of potatoes the eggs beaten and sprinkle the cheese grated ,fry well till light brown.Can eat plan as starter or make sandwich and enjoy .

Can Eat Just like this !!!

Prawn Balchao (Goan Prawn pickle)

Prawn Balchao is an authentic Goan dish inspired and learned from the Portuguese Cuisine !!! Balchao you can term as pickling of sea food or meat which you can preserve for at least for 6 months and consume without reheating :)that's sounds so amazing isn't it ??? and the color and the aroma of the dish is mind boggling !!!! So find below the secret recipe of prawn Balchao from my Mum's Kitchen.


Total time 2 hours

Ingredients
1 kg Prawns(shrimps)
2 large onions

(Make paste of below ingredients using vinegar)
50 grams Red chilies
2 Large pods of Garlic
5 inch ginger
1 table spoon Cumin seeds
1 table spoon  pepper corns
1 table spoon cloves
2 sticks of cinnamon
1 small ball of tamarind
vinegar to grind

2 table spoon Sugar
salt to taste
oil as required

Method
Firstly Make a smooth paste of all above ingredients and keep aside, later heat oil and deep fry the prawns till light golden brown and keep aside. In other vessel add oil ,add the chopped onions and fry till its soft and cooked well (do not burn the onions),once onion fried add the ground Balchao paste and cook the masala till it leaves oil on top, while the masala is cooking add sugar and salt as per taste. Than add the fried shrimps and again cook well on slow flame. Once cooked than cool it and preserve it in air tight glass bottle .you can eat it with almost any thing !!e.g. chapati,Goan Pav, side dish !!!

 

Thai curry!!!

Servings 4-5
Total Preparation time 30 Min
cooking time : 15 min

ingredients
250 gram Paneer cubes(cottage cheese)slightly tossed in butter
2 small green capsicums cut into cubes
1 large onions cut into cubes
1 large tomato cut into cubes
1 cup boiled sweet corns
1 large bowl of coconut milk extract
1 table spoon soya sauce
1/2 small bowl green coriander
1 tsp brown sugar
salt to taste

For red curry paste
Grind together 1 inch ginger,5 cloves of garlic,20 pepper corns,2 tsp red chili paste,1 tsp cumin seeds,1 tsp coriander seeds,1 tsp vinegar,small piece of lemon grass

Method
In Deep Casserole add oil as required,than toss onions,paneer,capsicums,and corns  for about 5-7 min on high flame ,do not burn.Than add the red curry paste  and allow it to cook for again 5 min.Once the masala is cooked add the coconut milk and tomatoes,mix all well and allow it cook till coconut milk boils,while its boiling add 1 tsp brown sugar and 1 table spoon soya sauce.cook for more 2-3 min,garnish with green coriander leaves  and serve hot with steamed white rice .


Note:to make red chili paste soak chilies in hot water and the grind into small paste.

Cabbage and egg stir fry recipe !!!

Servings 3-4
Preparation time: 15 min

Ingredients
1/2 cabbage shredded
2 eggs
2 green chilies
1 large onion
1 large tomato
3 pinch turmeric
salt as per taste
oil

Method
In deep Pan add oil,once heated add chopped onions,saute for some time ,then add chopped tomatoes chilies and turmeric,once fried for 2 min add shredded cabbage and salt,mix all the ingredients and allow it to cook for about 7 min on low flame.Then add beaten eggs ,cover the lid for 2 min once you see egg is little cooked the mix it well along with cabbage.serve with hot chapati.
Note: add very little water as per your requirements.

Idli's served with Tomato chutney !!!!

Serving 5-6
Batter preparation time 1 day-soaking and fermentation for over night
cooking time : 20 min

Ingredients : Idli
3 cups of idli rice
1 cup of urad dal (black gram)
1/4 tsp salt
1 table spoon sugar
1 small bowl cooked rice or left over rice
(if you planning to make idli's tomorrow ,in that case today morning soak rice,urad Dal and rice in water the entire day,then late evening grind it into fine thick batter,then add in it salt and sugar and mix well,sugar will help in fermentation of the batter).

Tomato chutney
3 tomatoes
1 onion
4-5 red chilies
2 red chilies
5 cloves of garlic
curry leaves
1/4 tsp mustard seeds
(Add oil in pan,once heated add mustard and curry leaves once its spatter,add garlic,red and green chilies ,onion and tomatoes ,fry all the ingredients well for about 10 min.Later allow the mixture to cool down ,add salt and grind into a fine paste).

For the preparation of idli's
Take the idli vessel,in the bottom of the pan add water and allow it to boil,the for the idli tray apply oil and put the prepared batter ,place it in to the container and cover the lid,cook for about 10 min on medium flame and for about 5 min cook on slow flame.Once the vessels cools down remove the idli's with a help of small spoon.

Serve hot with tomato chutney or you can prepare chutney of your choice. :)





Chicken Pakora Recipe !!!

Serving 4-5
Preparation time :30 min

Ingredients
1/2 kg chicken boneless
1/4 kg Besan (chickpea flour)
1 table spoon Garam Masala
1 table spoon coriander powder
1 table spoon red chili powder
1/2 table spoon garlic powder/chopped garlic
lemon
salt as per taste
oil for deep frying

Method
In a large bowl add chicken ,the add all the masala's ie garam,chili,coriander,garlic powder,salt,lemon juice.Mix all the ingredients well so as the masala's nicely get into the pieces of chicken,later add besan and coat nicely to chicken pieces,if the mixer is dry add little water so the flour get coated to chicken. Then.Then marinate for few min and dry deep fry till golden brown.Serve hot with salad of your choice.

Note:do not add extra water otherwise the mixture will be watery and the coating will be not proper for chicken.

Corn Cheese Dosa Recipe !!!!

Serving 4-5
Preparation Time 20 min

Ingredients
1 bowl dosa batter

for stuffing
1 bowl sweet corn chopped
1 onion finely chopped
1 tsp garlic chopped
1/2 bowl cheese grated
1/4 tsp pepper crushed
1/4 tsp basil dry leaves or fresh
1/4 tsp oregano
salt
olive oil

Method

  • For the stuffing preparation add olive oil to a pan,then add garlic,onion and fry well.
  • Then add corns,basil,pepper and oregano .
  • mix all well and allow to cook for few min,then add salt and cheese and mix again till cheese melts.
  • Than keep a dosa pan on stove ,once heated add the dosa batter and spread in to a round dosa.
  • on top of the dosa spread the stuffing prepared and cove the lid on ton for 1 min .
  • serve hot with tomato chutney/ketchup.


Rice Stir fried in corns,potatoes and pineapple +chicken shallow fried in xacuti Masala !!!!

servings 4-5
Total time 1 hour !! 45 min for marination chicken

Ingredients : Rice Stir fried in corns,potatoes and pineapple!!!!
For Rice
200 gram of cooked rice(add salt)
1/2 cup Pineapple small cubes
2 small potatoes cubes
1 cup sweet corn
1 inch ginger julienne
1 table spoon of garlic chopped
1 large onion chopped
1/2 table spoon pepper crushed
1/2 chili flakes
oil for tossing

method

  • In a large deep vessel/casserole add oil ,once heated  add ginger/garlic/onion and fry well.
  • Once fried well add potatoes/pineapple/corns,stir all well and cook for 5-7 min till potato is tender.
  • Then add pepper/chili flakes/salt as per taste(already salt is there in cooked rice) and mix all ingredients well.
  • Lastly add the cooked rice and toss well ,cover the lid and cook for few more min and its all done.



Ingredients: chicken shallow fried in xacuti Masala !!!!
1/2 kg chicken
2 table spoon xacuti Masala( since ready made masala we only get in Goa so you guys can refer to my Xacuti recipe to know how to make masala,again i will mention what all falls in the masala in brief make -roasted coriander seeds/poppy seeds/sesame/nut meg/cloves/peppers/cardamon/cinnamon/dry red chilies/star anise (dagad phool) /fennel seeds/cumin seeds/grind all these into fine paste or powder)
1/4 turmeric
1 tsp ginger/garlic/green chili paste
1 small lime
4-6 pieces of pineapple
salt

Method

  • wash chicken and put in one large bowl,the add salt,turmeric,lime,ginger/garlic/green chili paste ,pineapple and the roasted masala ,mix all well into the chicken and marinate for about 45 min.
  • Then shallow fry the chicken and pineapple till golden brown.
  • serve hot with Rice Stir fried in corns,potatoes and pineapple.

Semolina coated banana fry Recipe !!!!

Servings 4-5
Total time for cooking 15 min

Ingredients
2 Raw Bananas
1 cup Rava
1/4 tsp turmeric powder
1/2 tsp red chili powder
salt as per taste
1/2 tsp pepper crushed
1/2 tsp white sesame
oil for frying

method

  • First peel the raw bananas and cut into rounds ,wash well and keep aside.
  • then add in bananas salt,turmeric,chili powder and mix well.
  • in other plate take rava and in that add pepper and sesame and mix well
  • then coat each rounds of banana and shallow fry on pan till golden brown
  • serve hot as side dish with rice ,Dal and pickle.....just YUM !!!!


Spinach and corn elbow pasta recipe !!!!

Serving 4-5
Total time 25 min

Ingredients
150 gram boiled pasta
1 bunch of spinach (blanched)
1 bowl sweet corn
1 onion chopped
4 cloves of garlic chopped
1 tsp pepper crushed
1/2 tsp oregano
1/2 tsp basil dry
cheese as much required
salt to taste
butter and olive oil for frying

Method

  • In an deep casserole add olive oil and butter ,once heated add onion and chopped garlic.
  • fry onion for about 3-5 min till transparent,then add pepper,oregano,basil,spinach chopped and corns.
  • mix all the ingredients well and cook for about 5-6 min until corn and spinach is cooked.
  • add salt as required and then add boiled pasta,mix well.
  • then add grated cheese , cove the lid  and allow pasta to cook for about 2-3 min,once cheese is melted mix well pasta and serve hot.

Elbows Pasta cooked in minced lamp and green peas !!!!

Servings 5-6
Total preparation time 30 min

Ingredients
250 gram Elbows pasta
1/4 kg minced lamp
1 bowl peas
1 table spoon chili paste
2 medium onions chopped
3 tomatoes purred(blanched and pureed)
1 table spoon garlic
1 tsp ginger paste
cheese grated
olive oil
salt as per taste

Method
In deep pan or casserole add olive oil,then add chopped onion,garlic and fry well,later add ginger/garlic paste,chili paste,tomato puree and mix well,allow it to cook for 5 min till every thing is mixed well.Later add the minced lamp and peas,also add salt as per taste ,cook for about 15 to 20 min till the lamp is cooked.Then add the boiled pasta,mix well,then add cheese and cook for more 2-3 min till the cheese is melted.Can garnish green coriander chopped serve hot.Can say pasta with Indian twist !!!!!





Asparagus and chicken in penne pasta !!!!

Servings 4-5
Total preparation time: 30 min

Ingredients
200 gram penne Pasta Boiled
1 bunch of asparagus(blanched)
1 bowl of boneless chicken
1 large onion
11/2 tsp of chili flakes
2 table spoon of garlic
1 tsp pepper crushed
1 tsp oregano
1 tsp basil dry
Cheese grated
black olives
olive oil

Method

  • Add olive oil in deep pan,then add finely chopped onion, garlic and asparagus , saute well .
  • Once onion is fried then add chili flakes,pepper,oregano and basil 
  • Then add the finely cut chicken pieces and salt ,stir well until chicken cooks well.
  •  Add the boiled pasta and toss well in the mixture,last add cheese and cook for 2-3 min.Serve hot,Kids will just love it :)



Broccoli and spring onion penne pasta Recipe !!!!

Serving 4-5
Total Preparation time 30 Min

Ingredients
200 gram boiled pasta
one small floret of broccoli(cut and blanched)
1 large onion
2 small bunch of spring onions(finely chopped)
2 table spoon of chopped garlic
2 table spoon of black olives
1 tsp of pepper
1 tsp of oregano
1 tsp of bay leaf crushed(fresh or dry)
cheese as per required(best would be Parmesan cheese)
olive oil for seasoning
salt as required for taste

Method
1.Boiled Pasta by adding little salt and oil so as to avoid sticking cook for about 10-15 min .do not over boil.
2.Than in a deep vessel add olive oil,add onion and garlic,stir well
3.one the onion turn transparent,add broccoli,spring onions and all the herbs ie. oregano,basil,pepper and salt and fry well.
4.Add olives cut ,then add pasta and toss well till it get mixed well ,add grated cheese and cover the vessel with lit for about five minutes or till u see the cheese melted.
5.once cooked sever hot .

Note: Blanching is the process were in we add veggies to hot water and cook for around 2-3 min and then transfer the veggies to chilled ice water so as to retain the colour of green vegetables.
