{Recipe}Red Chicken Korma

Red chicken korma is simple chicken curry prepared using powdered spices and few dry spices along with curd for thickening the curry.When there is less time to decide on what to cook specially on busy Sunday,then this red chicken korma is the best recipe to prepare.It takes really little time to prepare and also with less ingredients..
Having these kind of easy recipes of non-veg really makes cooking simpler specially on those busy and sometimes lazy weekends.As we know otherwise non-veg dishes always takes advance preparation because of marinating process.So lets begin with one more quick recipe of Chicken.

Servings 4-5
 Preparation Time : 10 min
Cooking Time : 20 min

Ingredients
500 Gram Chicken pieces
1 Cup Curd
2 Large Onions
10 Garlic flakes
1 Table Spoon Coriander powder
1 Table Spoon chili powder
1 Tsp Turmeric powder
10 Cloves
3-4 Cardamom
10 pepper corns
Salt as per taste
Oil for Frying

Method 

1)Clean the chicken pieces well and drain all the excess water and add salt and lemon .Then arrange all the ingredients required.
2)Then grind the onions and garlic into fine paste.On the other side place the pan on stove,then add oil and once oil is heated add the chopped onion and garlic paste.Fry the paste well.
3)Add the powdered spices and dry whole spices and mix well.Again cook the mixture for about 5 minutes and make sure you can see little oil floating over the masala ,this means the masala is cooked well and not raw.This point you can add the chicken and stir well in the masala.
4)Then add curd into the chicken and mix well.And then cook on slow flame for 15 min.Keep stirring in between so that it doesn't stick to the pan.
5)Once you see oil floating on the gravy then you can switch of the stove and your red chicken korma is all done.Serve the gravy with hot roti's.

Green Chicken curry-Kids Friendly Version

Green Chicken curry prepared keeping in mind the taste and flavour for kids.Its sometimes very difficult for kids to consume spicy curries which we prepare.Kids always prefer mild curries with less spice,so tried this green chicken curry with less spicy and lots of creamy flavour and texture.

Servings 5-6
Total preparation Time : 30 min
Cooking Time : 20 min

Ingredients
500 gram clean and cut
2 Green Chilies
1 Cup of Green Coriander leaves
5 Flakes of Garlic
1/2 Inch of Ginger
5 Cloves
1 stick of cinnamon
2 Cardamom
10 pepper corns
1 Tez Patta
2 Onions
1 Large Tomato
1/2 Lemon
1/2 cup of green peas
1/2 Tsp of Turmeric
1 Cup of Thick coconut milk(half coconut)
1/2 Cup of Curd
Cream
salt as per taste
oil/butter

Method
1.Wash Chicken and drain water,then apply salt,turmeric and lemon.keep it side to marinate.
2.On the other hand make paste of Onion,ginger,garlic and black peppers.
3.Also make paste of Green coriander,green chilies.
4.In pan add butter and little oil,once heated add dry spices like cinnamon,cloves and tez patta(India Bay Leaf)
5.Add paste of onions-ginger-garlic and black peppers,stir well in the oil.Once its fried well then add the other green paste of coriander and green chilies.
6.Let both the paste get nicely fried in the oil.Then add chopped tomatoes and marinated chicken and green peas.
7.Saute the chicken well in the paste.saute well until the chicken colour changes to light brown.
8.Then add hung curd,mix well in the chicken and again allow to cook on slow flame for 2-3 min.
9.Once you see oil coming out of curd then add coconut milk and mix well.Cover and allow the curry to cook on slow flame until the oils are separated from the curry.May be for about 10 min.
10.Last add cream and serve hot with steam rice. Your kid will just love the curry.

Sweet Corn Raita



You must have always tried Tomato raita or onion raita or cucumber riata but just for experimenting tried making Corn Riata and it really turned to be very tasty .The sweetness of corn and the creamy texture of curd and the spicy flavour of green chilies really makes it a yummy raita. A great Raita to be served with Biryani's. You can also use it as some dip with nachos . It is so easy and quick to make ...So do try this healthy sweet corn raita.
Servings 4
Preparation Time : 10 min

Ingredients
1 Tin of Thick curd(approx 400 gram)
1 Cup of sweet corn
1 Cucumber cut into fine cubes
1 Onion finely chopped
1 Tomato cut into fine cubes
1 Green chili finely chopped(can add more for spice)
2 Tsp Green coriander finely chopped
2 Pinch of pepper crushed
salt as per taste

Method
  • In bowl add the chopped veggies that is sweet corn,tomato,onions,Green chilies,cucumber,pepper crushed,salt and green coriander.
  • Than mix the curd until smooth and then add in  the veggies and mix well.
  • Serve chilled with Biryani's or use as dip or enjoy the sweet corn raita JUST LIKE THAT !!!

Mango Lassi Shots

 
As summer approached its time to get our  self refreshed with cooling drinks. Every minute we feel like sipping some liquid, may be lime juice. lime soda, seasonal  fruit juices, lassies or even Soft drinks but it's always better to avoid soft drinks like coke, Pepsi as it's not good for kids and elders as well. 
 
My first liquid lounge recipe for summers . So I thought let me prepare some drink with the ingredients available at home. In refrigerator, I found yogurt, few mangoes in fruit basket, so here is one more recipe of mango Lassi in tequila glasses. Happy Summer .
Servings 4-5
Total time 10 min

Ingredients
400 gram  Yogurt/Curd
2 or 3 mango pulp
8-10 ice cubes
3 Table spoon sugar
pinch of salt
1/4 tsp. cardamom powder
honey for garnishing
Mango Pulp for garnishing
 
Method
  • Clean the mango and remove the pulp and add to a juice jar. Add yogurt, cardamom powder, salt ,sugar.
  • Add ice cubes and blend the yogurt along with all the ingredients for about 2-3 min.
  • Than serve chilled and enjoy the Lassi.
  • For a change I have served in Tequila glasses. For serving wet the edges of glasses with honey and dip into sugar granules, also fix the mango pulp to the glass. Than add lassi and last garnish with honey.

Khaman Dhokla


Khaman Dhokla is common food in Gujarat a state in India.Its made from freshly ground chickpeas or chick pea flour.Generally eaten as a snack .Khaman dhokla is mostly served with chopped onions,sev,fried chilies and green chutney.Generally Khaman Dhokla takes 8-10 hours but this dhokla recipe is instant.

My first try was few months back but to my bad luck it din come the way it has to be soft and spongy but the second time it really came out good.I wont say its so perfect but it so neither bad ;)since it was soft and spongy i thought of uploading the recipe.

Preparation time :30 min
Cooking time : 20 min

Ingredients
1 Cup Chickpea flour
1 Table spoon Rava/semolina
11/2 Tsp lemon juice
1 Tsp crushed green chilies/ginger
3/4 Cup water
1/4 Cup Yogurt
1 Tsp ENO(fruit salt)
1 Tsp oil for greasing
1/2 Tsp salt

For Tempering
3 Green chilies slit lengthwise
2 Table spoon grated coconut
2 table spoon green coriander
1/2 Tsp Mustard seed
1 Tsp white sesame seeds
1 Tsp sugar
Curry leaves
1 Pinch Hing/Asafeotita
1/3 cup water


Method

  • Take all ingredients to make a batter.Meanwhile keep around 2-3 water in steamer to boil.Also grease a pan with little oil and keep aside.
  • In a large bowl add chickpea flour,semolina,salt,yogurt,lemon juice,green chili-ginger crushed and 3/4 cup of water and mix all into smooth batter.
  • Last add the fruit salt(ENO)into the batter and stir for almost 1 min continuously,this will raise the batter to double.
  • Than immediately pour the batter into the grease pan and place the pan in steamer for about 15-20 min.
  • After 15 min check the dhokla if done by inserting a tooth pick or sharp knife, if comes out clean than its done or if not done then can keep for more 2-3 min.
  • Once done allow it to cool down for few min.
  • For tempering add oil in pan, once heated add mustard seeds, curry leaves, asafoetida, sesame seeds, toss them well. Than add green chilies and fry them till brown. Than add 1/3 cup water and sugar ,let it cook for 1-2 min.
  • Cut the dhokla into square cubes and spread the tempering over the dhokla , also garnish with coconut and green coriander.
  • Serve as a morning or evening tea snack along with spicy green chutney or sev with onions chopped.

Cafreal Chicken Tortilla Wrap


Tortilla is a soft flat-bread made either from finely ground wheat or Maize (corn tortilla).Wheat tortilla is innovation of Spanish Jews who did not considered corn meal to be Kosher while in Mexico and central America its corn Tortilla.In appearance and use Tortilla are rather similar to south Asian Chapati or Roti's.

Tortilla remains the stable food of Mexico and Central America.We Indian's have love for Chapati's and Roti's so it was not so very difficult to accept Tortilla's.Its easily available in any super markets.

Tortilla's Stuffing mostly consist of Beans,Onions,tomatoes,chicken,lettuce,Mayonnaise,creams, meats and its goes on along with some sauces of your choice.Anything might be the stuffing Tortilla wraps are always so Tasty and quick to make provided you have stuffing ready in refrigerator ;).Since there was some Marinated Cafreal chicken in my refrigerator so i thought of making Cafreal Chicken tortilla Wrap inspired by our very own Goan Dish Chicken Cafreal. Here we go.....

Ingredients
4 Salsalito Tortilla Wraps
240 Gram of Boneless Chicken(cafreal marination recipe link-)Cocina !!!: Chicken Cafreal !!!
1 Bowl of Red,yellow and green bell peppers julienne
2 Onions chopped
2 Tomatoes Chopped
2 Bowl of lettuce chopped
1 Bowl of Yogurt and mint spread(Mix yogurt and mint Chutney ,you can use mayonnaise)
Tomato ketchup for Taste.





















Method
  • First shallow fry the chicken marinated in Cafreal Masala Paste.Once its fried well allow it to cool and finely shred the Chicken.
  • On the other side cut the other veggies accordingly and keep it in plate.Saute bell peppers with olive oil ,salt and little crushed pepper corns.
  • Than take the  Tortilla wraps and heat it on pan so that it becomes little soft and easy to fold.
  • Place the Tortilla on plate,than in the center add the Cafreal chicken shreds,onions,tomatoes,bell peppers ,lettuce chopped and last on top sprinkle the yogurt mint spread.
  • Fold the Tortilla well so the stuffing doesn't come out.After giving a fold again roast the tortilla on pan ,this will help in sealing the edges of tortilla because of heat.
  • Once done serve immediately along with dip or Tomato sauce.

Dry Fruits Lassi Chuski !!!

Lassi in any which way is one of the best refresher during the summer heat.Dry fruit Lassi chuski is from Punjabi cuisine rich in vitamins as it contains lot of dry fruits and also full of calcium as its made of curd and condense milk.




















Servings 4
Total preparation Time : 10 min

Ingredients
2 Cups of yogurt
1/2 Cup of Condense Milk
2 Tablespoon Cashew Nuts chopped
2 Tablespoon Almonds Chopped
3 Tablespoon of Raisins
1 pack of little hearts biscuit(since ragi cookies were unavailable)
Ice cubes as required

Method

  • In a blender jar add lots of ice,yogurt,condense milk,cashew nuts,almonds,raisins,biscuits and blend it till smooth paste.
  • Pour it into serving glasses,garnish with remaining biscuits and serve chilled

Chicken Korma in yogurt!!!

Chicken Korma just classic Muglai dish  and served as curries or in form of thick gravies.The dish is considered among the rich dishes as it involves slow cooking of chicken in yogurt,ginger garlic paste and onions paste and at last its simmered with thick coconut milk to give the creamy texture and flavour.Its also prepared by adding cashew nut paste,almonds paste to give more royal tag to the dish.

























Servings 4-5
Total Preparation  time: 1 hour
Cooking time:30-40 min

Ingredients
1 Kg Chicken(cut into medium pieces)
1 Cup of yogurt(approx 300 gram)
2 large onions
2 inch of ginger
15 flakes of garlic
1/2 cup of thick coconut milk
3-4 green chilies
1/2 bunch of green coriander
1 Table spoon pepper crushed
1 stick of cinnamon
5 cloves
2 cardamom
1 tsp turmeric powder
salt as per taste
oil
Hot water as required

Method
  • Wash the chicken and drain all the water,than apply salt ,turmeric,pepper crushed and yogurt.Mix the ingredients well into the chicken and keep aside for marination for 20 min.
  • On the other hand make paste of onions ,also grind ginger-garlic,green chilies and green coriander into fine paste and keep aside.
  • Than in casserole add oil,once heated add the paste of onions and saute till the paste changes colour to light brown.
  • Add paste of grind ginger-garlic,green chilies and green coriander,again cook for around 5 min till the pastes are nicely sauteed.
  • Than add chicken and toss well in the paste.Cook the chicken pieces for more 5 min or more till it leaves its own water.
  • Give a quick stir so that chicken does stick to vessel.Add hot water as required and cook on slow flame for 15 min by covering the lid.
  • Last add the thick coconut milk ,mix well and than again let it simmer for more 5-10 min.
  • Once the korma is done you will find the oil layer on top of the gravy.(oils left by curd and coconut milk).
  • Serve hot with roti's or steam rice or any rice items also it will go well.Even with bread it will be great in tastes.

Kashmiri Dum Aloo !!!
























Servings 4
Total Preparation Time :45 min
Cooking time :20 min

Ingredients
20 Baby potatoes
2 Cubs Yogurt
2 Tsp red chili paste
Oil for deep frying
2 Tsp fennel seeds powder(saunf)
1 Tsp Dry Ginger powder
1/2 Tsp Roasted Cumin Powder
1/2 Tsp Green Cardamom Powder
1 Pinch Asafoetida
2 Pinch Clove powder

Method

  • First peel the potatoes and prick it with fork and soak in salt water for 10 min.
  • After 10 min towel dry the potatoes and deep fry till golden brown.
  • Than take yogurt in bowl and beat well ,than add fennel powder,dry ginger powder,cardamom powder,cumin powder and red chili powder ,mix all the ingredients well.
  • Than heat oil in pan once heated add asafoetida and clove powder in pinch,add yogurt mixture and add the fried potatoes and cook for 10 -15 min om medium flame.
  • Serve Hot with steamed rice or roti.

Royal Rustic Veggies!!!






Servings 4-5
Total preparation time : 30 min
Cooking time:15 min

Ingredients
1 Onion cut into cubes
1 capsicum cut into cubes
1 tomatoes cut into cubes or slices
2 table spoon yogurt
1/4 tsp turmeric powder
1/2 tsp garam masala powder
1/2 tsp chili powder
1/2 lemon
salt as per taste
oil for frying

Method
  • In one bowl add yogurt,salt,turmeric,chili powder,garam masala,1/2 lemon juice and mix all the ingredients well 
  • Than in the mixed ingredients add cut veggies and mix well,than allow it to marinate for 15 min.(you can add any veggies/paneer/mushrooms)
  • Than after 15 min of marination shallow fry veggies till golden brown.
  • Serve hot as starters or side dish.

Mango Lassi !!!

400 gram  Yogurt/Curd
2 or 3 mango pulp
8-10 ice cubes
3 tsp sugar
pinch of salt
1/4 tsp cardamom powder
honey for garnishing

Method
Take a juicer jar,pour in it yogurt/curd,add ice cubes,sugar,mango pulp,cardamom powder,salt a pinch .Than add water if required little and whisk it well till you see form coming on top.once done garnish with honey on top serve chilled .So much healthy especially for kids.....

Fig and Almonds smoothie !!!

Servings 4-5
Total preparation time 20 min

Ingredients
200 ml yogurt
5 figs
4 Strawberries
10 almonds
3 cardamon
sugar as required
Ice cubes

Method
In a mixture jar add yogurt,figs cleaned and washed,almonds,sugar,ice cubes,4 strawberries  and cardamon powder.Grind all the ingredients well till smooth.serve chill !!!
