Chocolate Honey Pan Cake

Pan cake as you know is a flat round cake often made with a Starch based batter which consists of eggs,milk,multipurpose flour ,butter and than fried on griddle or pan.The most common pan cakes prepared in our homes is plan one with vanilla flavour with some toppings of our choice.Pan cakes always being Kids favourite  i thought of getting some variation by adding Cocoa Powder and drizzle of chocolate syrup,honey and some strawberry's on top.One of the best breakfast we can give for kids.so lets begin with Chocolate Honey Pan cake.
Servings 4-6
Total Preparation time:20 min
Cooking time :Each pan Takes around 2-3 min
Measuring Units-1 Cup =236 ml/ 1/2 Cup=118 ml/ 1/4=58 ml/1/3=78 ml

Ingredients
11/4 cups of multipurpose flour
1/4 cup of unsweetened Cocoa
1/4 cup of sugar
2 Pinch of salt
2 eggs
11/4 cups of milk
1/2 Tsp of Baking powder
1 Tsp of Vanilla essence
2 Table spoon Butter
Hershey's chocolate syrup to drizzling on top
Honey to drizzle 
1 Cup Fresh strawberry's chopped for topping
Butter for frying the pan cakes

Method
  • First sift flour,baking powder,pinch of salt and cocoa powder through a sieve.In other bowl whisk eggs,milk ,sugar and melted butter.Whisk well till all the sugar gets dissolved completely in the liquids.
  • Than add the liquid mixture into the dry ingredient bowl and mix it well till the batter is smooth.Can add milk if you find batter little thick.Add little(as per your choice chocolate syrup and mix again well.
  • Allow the batter to rest for 2-3 min or if you have time can rest for 5 -10 min.
  • Heat the pan and take about 1/4 cup of batter and pour on pan in round shape.once bubble starts to come add butter from side ,allow to cook for 2 min.Than flip and cook for more one min.
  • Place one serving plate,spread the strawberry toppings and than drizzle on top chocolate syrup and honey.Just enjoy the yummy healthy breakfast along with your kids.
Note:Can add sugar as per you taste avoid sugar if do not like more sweet and can substitute with honey.
For toppings you can add other fruits too like banana's,kiwi etc

Goan Prawns and Clams pulao /Sungta ani Tisreyancho Pulao

In Goa Pulao is the Most important Rice Item and no function is complete with Pulao.we make different Pulao like peas,Prawn,Calms,Sausage and Plain Pulao but whichever the Pulao recipe may be all the Pulao are so Aromatic.
Today my recipe is Made from combination of Prawn and Clams.The Pulao came out to be Just Yum and also the aroma of dry spices and the flavour of Maggi Cubes Just made it Authentic and Classic in Flavour.
Servings 6
Total Preparation Time : 40 Min
Cooking Time : 20 min

Ingredients
1 Kg Basmati Rice
1/2 Kg Prawns Cleaned
1/2 Kg Clams Meat
10-15 Vegetable Maggie Cubes(small size)
2 Onions Chopped
4 Tomatoes Chopped
3 Large Cinnamon Sticks
1 Tsp of Cloves
1 Tsp Pepper corns
5 Cardamom
Oil
Salt if required(since Maggi cubes consist salt)
water double the quality of rice or more if required 

Method
  • First Clean the Prawns and Clams well,than apply 2 pinch salt and keep aside.
  • Place a Pan/or a large vessel.Once heated add oil,than add cinnamon,cloves,pepper corns,cardamom.
  • Than add onions and saute till transparent.Add tomatoes and again cook for 2 min.
  • Add Prawns,clams and vegetable cubes and stir for 2 min.
  • Than add water ,once water starts to boil add rice and stir well.
  • Switch the stove to medium flame and cook the rice.In between just once to check weather rice cooked if water reduced than can add extra water so rice cooks well.
  • Do not stir rice too much because it will break.Once rice is cooked do not open the lid quickly ,let it cool little while than can open and stir the Pulao.
  • Your Pulao is ready can stir with any Non-veg gravy of your choice or you can just enjoy it plain.

Green Masala Mackerel Fry


Green Masala is one of the Magical Masala in our Goan Homes.The Green Masala gives taste and flavours to all possible dishes.You can take anything for tat matter from Fish. chicken,to beef,mutton ,or any kind of veggies this green masala will give awesome Taste which makes anybody attract to the Dish.

Green Masala Mackerels is again favorite Appetizer for Most of Goans. You cannot resist the tangy and spicy  taste of masala which forces you to lick your fingers ;).

Cooking time:20 min

Ingredients
6 Fresh Mackerels
Salt

For Green Masala(Grind into Fine Paste the below ingredients till vinegar)
1/2 Bunch of Green coriander
4-6 Green chilies(adjust according to spice)
2 Cinnamon Sticks
15 Cloves
4 Cardamom
1 Tsp pepper Corns
1/2 Tsp Cumin
2 Inch Ginger
10-15 Flakes of Garlic
1/2 Tsp Turmeric powder
Goan Toddy Vinegar For grinding the paste(can take any other vinegar if Goan not available)

2 Eggs beaten
2 Cups of Semolina(rava)
Oil for frying


Method

  • First Clean the Mackerels well,and than cut it vertically from stomach side till take in a butterfly fillets shape.
  • Than apply required amount of salt to the mackerels and keep aside.
  • Take all the above ingredients in the mixture jar and grind it into smooth green masala paste.
  • Apply the green masala paste to the mackerels properly over the and allow it to marinate for 10-15 min.
  • After 15 min take each mackerel,dip in the beaten egg from both the sides and than coat in semolina from both the side and press the mackerels lightly so the semolina coats well to the fish body.
  • Place the Tava/pan on stove once heated add oil and shallow fry the Mackerels till crispy and golden brown.
  • Relish the Green masala Bangde/Mackerels with chilled beer/or as a appetizer/or as side dish.

Cafreal Chicken Tortilla Wrap


Tortilla is a soft flat-bread made either from finely ground wheat or Maize (corn tortilla).Wheat tortilla is innovation of Spanish Jews who did not considered corn meal to be Kosher while in Mexico and central America its corn Tortilla.In appearance and use Tortilla are rather similar to south Asian Chapati or Roti's.

Tortilla remains the stable food of Mexico and Central America.We Indian's have love for Chapati's and Roti's so it was not so very difficult to accept Tortilla's.Its easily available in any super markets.

Tortilla's Stuffing mostly consist of Beans,Onions,tomatoes,chicken,lettuce,Mayonnaise,creams, meats and its goes on along with some sauces of your choice.Anything might be the stuffing Tortilla wraps are always so Tasty and quick to make provided you have stuffing ready in refrigerator ;).Since there was some Marinated Cafreal chicken in my refrigerator so i thought of making Cafreal Chicken tortilla Wrap inspired by our very own Goan Dish Chicken Cafreal. Here we go.....

Ingredients
4 Salsalito Tortilla Wraps
240 Gram of Boneless Chicken(cafreal marination recipe link-)Cocina !!!: Chicken Cafreal !!!
1 Bowl of Red,yellow and green bell peppers julienne
2 Onions chopped
2 Tomatoes Chopped
2 Bowl of lettuce chopped
1 Bowl of Yogurt and mint spread(Mix yogurt and mint Chutney ,you can use mayonnaise)
Tomato ketchup for Taste.





















Method
  • First shallow fry the chicken marinated in Cafreal Masala Paste.Once its fried well allow it to cool and finely shred the Chicken.
  • On the other side cut the other veggies accordingly and keep it in plate.Saute bell peppers with olive oil ,salt and little crushed pepper corns.
  • Than take the  Tortilla wraps and heat it on pan so that it becomes little soft and easy to fold.
  • Place the Tortilla on plate,than in the center add the Cafreal chicken shreds,onions,tomatoes,bell peppers ,lettuce chopped and last on top sprinkle the yogurt mint spread.
  • Fold the Tortilla well so the stuffing doesn't come out.After giving a fold again roast the tortilla on pan ,this will help in sealing the edges of tortilla because of heat.
  • Once done serve immediately along with dip or Tomato sauce.

Tortilla Chips with Tomato salsa Dip

Tortilla is a snack made of corn tortilla,which are later into wedges and than deep fried of baked.The Tortilla chips are also referred to as Nacho chips.There are many brands in India market which produce tortilla chips like salsalito and cornitos. They are typically served with different dips like salsa dip,cream cheese or you can dip of your choice.

Ingredients
1 Salsalito Tortilla chips Packet
2 Large tomatoes chopped finely
2 Medium Size Onions chopped finely
2 Green chilies for spice
1 Table spoon olive oil
2 Pinch of Pepper crush
1/4 Tsp lemon Juice
1/2 Tsp Garlic chopped
2-3 Table spoon of Tomatoes ketchup
Salt to taste

Method

  • In Bowl add all chopped vegetables like Chopped onions,tomatoes,green chilies,chopped garlic,green coriander chopped,tomato ketchup,pepper crushed,olive oil,lemon juice,salt .
  • Mix all well and serve with Tortilla chips.Its just so refreshing snack.
Note:You can also add sweet corn in the salsa,than cucumbers .

Paneer Vermicelli Croquettes


Paneer Vermicelli Croquettes was specially prepared for my son Clive who is just crazy for Paneer dishes.My sons school had class room party and they had to carry extra snack and so i decided I'll make something healthy and at the same time tasty and attracting to the Nursery Kids eyes :).

So when i was surfing through the You Tube video's i found many paneer and potato snacks but i found this Paneer Vermicelli very interesting.So lets begin with this kids friendly Dish.

Servings 5-6
Total Preparation time:1 hour
Cooking time:30 min

Ingredients
3 Boiled Potatoes
250 Gram Paneer grated)cottage cheese
1 onion Chopped finely
2 Tsp Ginger/garlic paste
2 Green chilies chopped
1 Tsp pepper corns crushed
1 Tsp Garam Masala
salt to taste
Oil for deep frying
Mini Cheese cubes
1 cup all purpose flour for making batter(for liquid coating)
2 Cups of fine roasted vermicelli for outer coating

Method
  • Take the boiled potatoes and mash it in a large bowl,than add grated Paneer,chopped chilies,pepper crushed,ginger/garlic paste,onion chopped and salt.
  • Mix all the ingredients well and make sure its not watery.If you find watery little watery than can add bread crumbs which will help to combine well. Once mixed keep it aside.
  • Than for coating make all purpose flour batter for that take one cup flour in bowl and add required water,pepper crushed.pinch of salt and chili powder and make a thick batter.
  • And for outer coating take the roasted fine vermicelli and crush it into small pieces so it will coat well on the croquettes
  • Than take the mixture of potato and paneer and shape up into round pops or ball and each pop dip in flour batter and than coat it with vermicelli and keep aside.
  • In a pan keep pour oil for deep frying the pops .Once heated deep fry the paneer potato croquettes till golden brown,make sure u do not burn it.
  • Sever Hot as tea time snack or for kids as snack.Enjoy with Tomato ketchup.


Rajma Galouti Kebab

Galouti Means Melts in your Mouth. Galouti kebab is one among the softest kebab prepared from minced lamp meat and was specially prepared for kings.But today i am making Rajma(kidney beans) Galouti kebab which is full of royal flavours of rose water,cashew nuts and paneer. Once taste you wont realise that its kidney beans because the taste is just like some non-veg dish. Rajma Galouti Kebab is the best option for the Vegetarian folks and also to your little kids who are fuzzy in eating nutritious food.

Servings :4-5
Total Preparation time:1 day + 1 hour
Cooking time:1 hour

Ingredients
1 Cup of Cooked Kashmiri Rajma(kidney Beans)
1 Cup Paneer grated
1/4 cup cashew nuts
2 Onions chopped and  caramelized
Little chopped raisins(chopped)
1/4 cup Mint leaves
1/2 Inch Ginger
10 small flakes  of garlic
1 Table spoon Garam masala
2 Green chilies
1 Tsp lemon Juice
1 Tsp Rose water
Salt for taste
Oil for frying

Method

  • First Boil the soaked Kidney beans till its soft for that you can pressure cook the beans until cooked well.
  • Once cooked drain the water from the kidney beans.Take a mixer jar than add the beans,ginger-garlic-green chili paste,cashew nuts,mint leaves,raisins and grind into paste(if its little rough its fine)
  • Than remove the ground paste into a big bowl.Add grated paneer,lime juice,salt,garam masala,rose water and mix all the ingredients well together.
  • Take small amount  of ground mixture and shape up into round patties and keep aside.
  • Keep frying pan for heating.once heated add oil and shallow fry the patties till golden brown.
  • Serve hot with curd as a deep or any other dip of your choice.

{Recipe}Neureos

Neureos is the most important sweet dish in Kuswar(sweet platter)No one can ever serve Kuswar without Neureos. It is flaky pastry loaded with sweet filling which consist of coconut and dry nuts. It is traditionally a Christmas dish. Preparation of Christmas dish starts almost 10 days before Christmas and its just lot of fun to make those sweet dishes along with family members.

Neureos are not just prepared in Goa but other part of India as well like In Hindi its called as Gujia. In Bihar its called as Padaulkiya, Maharashtra it is called Karanji (Marathi) Ghughra in Gujarat(Gujarati), Karachika in Tamilnadu (Tamil) and Karjikayi in Karnataka (kanada) and Andra(Telugu).

Ingredients
For Dough
1/2 kilo gram Multipurpose Flour/Maida
Salt
1/2 Small cup oil heated
Water for kneading

Neureos Filling
2 Scrapped Coconut
1/2 Kilo Gram Sugar(powdered Sugar)
100 Gram Rava/semolina
10 Cardamom
2 Tea spoon Sesame(til)
1 Tea spoon Poppy seeds(kus kus)
2 Table spoon Chopped Cashew Nuts
2 Table spoon Chopped Raisins
Oil for deep frying

Step wise Method
1.First start kneading the dough, for that first heat oil, than add flour to a bowl. Add hot oil, salt and mix with spoon since oil is hot. Then add required water and knead a smooth dough and keep aside to rest till you prepare the filling.

2.For filling, start by first keeping a big deep pan on stove, once heated add the scrapped coconut and roast well till light golden brown. Once roasted well keep in plate.

3.Roast semolina, poppy seeds, sesame seeds roast all well. Next, add powdered cardamom, cashew nuts and raisins. Off the stove and allow the mixture to cool down.

4.Once cooled than add the powdered sugar in he mixture and mix well .Then add the mixture in mixer grinder and grind into roughly fine granules just for about 20 -30 sec .
5.Now start to make Neureos - for that take small amount of dough and roll it into small round roti.


6.Take the Filling and place it in the Center of the roti .
7.Then apply water around the roti and fold it opposite sides in form of dumplings(half moon shape) .
8. Seal the edges well so the filling doesn't spill out and cut the edges or twist and pack the edges of neureos.

9.Till you prepare the Neureos keep the oil for heating. For Christmas tradition we fry a small cross.
                                     
10.Once you finish making Neureos fry the it till golden brown. Make sure later turn the stove to medium heat while frying.
11.Keep it on filter bowl (big bowl with holes) so the oil drips down or place on tissue to absorb extra oil
12.Once Neureos cooled down store it in steel container or dabba.
