{Recipe}Goan Beef Cutlet

"Goan Beef Cutlet" is a thin slice of beef marinated in vinegar, spices and then shallow fried with rava /semolina coating until crisp. Served as side dish or as starter with drinks. However, Beef cutlet is relished when stuffed between pao with fresh salad and called as Beef Cutlet Pao. Beef Cutlet Pao is one of the best street food and mostly enjoyed by Beef lovers.
Once you see the dish you might not say its a cutlet because cutlet is basically a round shaped patty prepared using minced meat or vegetables and then rolled in bread crumbs and then shallow fried but Beef cutlet as mentioned above statement is thin slice which marinated mostly in Goan green masala and the rava coated and shallow fried or sometimes even deep fried. I can easily hog two Beef cutlet pao along with a glass of chilled Pepsi :). I even remember that during my first pregnancy just before a week of my delivery I had hogged beef cutlets and Croquettes ;) hehehe. Beef Cutlet is Goa's street burger which satisfies our cravings to the max.

Ingredients
500 Grams Tender Beef Slices
Fine Semolina For Coating as required
Salt
Oil for frying

For Fresh Salad
1 large onion sliced
1 large tomato julienne
2 Carrots shredded
1 Cup of cabbage shredded
1 Table spoon Goan toddy vinegar
2 Tsp Lemon juice
sprinkle of salt
6 Goan Pao/Unddo or any Bread available

Step Wise Method
1.Wash the Beef slice and pat dry them with kitchen towel or tissue so to absorb the extra water. Flatten the slices with kitchen stone or a Meat Mallet Tenderizer(its a hammer to soften or flatten the meat)I used kitchen stone since i do not have one. 
2.Then apply salt,green masala over the slices and allow the beef slices to marinate overnight in refrigerator or at least for 6 hours.
3.Once you planning to fry ,  then remove the marinated slices from the refrigerator . Coat each slice in the rava well and keep it aside.
4.To shallow fry take a non-stick pan or a cast iron pan.Once the pan heated add oil and shallow fry the beef until you get nice light brown colour. Make sure fry on low low flame because the beef has to cook first and then the rava coating will get colour.
5. Crispy coated and moist inside Beef cutlet you can serve as starter with a chilled Beer or Your favourite Cold Drink.

6. Few Beef cutlets you can chop for the cutlet Pao stuffing. And also you can mix all the salad ingredients and keep it ready.
7.To prepare Cutlet pao take a pao then open it and place the chopped cutlet and the fresh tangy salad.Cover the pao and just have a big bite of the yummiest Goan Cutlet Pao.

 


















8.Next time this yummy street food you can enjoy in your homes with your family.Little lengthy process but you will enjoy you snack to the fullest.


Note:
1.Make sure to have tender meat as it will help cook the cutlet in less time.
2.Cook on slow flame to avoid burning of cutlet.
3.In my recipe i have used Unddo which is hard crust bread available in Goan bakeries you can use Pao or slice bread too if pao not available.

{Recipe}Green Masala Pomfret fry wrapped in Banana Leaf

In My last post you all must have seen the recipe of  Pomfret Recheado fry wrapped in Banana Leaf and it was appreciated by most of the foodies out there.This recipe of Green masala Pomfret fry wrapped in banana leaf involves same procedure as Recheado pomfret fry but only difference will be  substituted with  Goan Green Masala for stuffing and as all you know how tasty the Goan green masala is.So lets begin with the step wise preparation of this recipe.

Ingredients
1 Large Fresh  Pomfret
1 Tender Banana Leaf
Salt
Oil as required

Step Wise Preparation

1. Purchase some Fresh Pomfret .
2.Clean and Cut the Pomfret. Nicely give cuts over the Body for the masala to stuff.
3.Then apply salt and Green masala generously over the pomfret body.Rub it over the body so it gets nicely stuffed inside the cuts and the head.
4.Take the banana leaf and remove the center hard portion.Then place the leaf over the tray and then place the pomfret over it.

5.Once the pomfret placed well,then pack it properly with the leaf and tie with cotton thread or the tread of leaf itself.Make sure its wrapped well other wise masala will come out.
6.Take a large pan and add required amount of oil .Then Place the wrapped pomfret inside and  fry it on slow to medium flame until its cooked well.Make sure to cover the lid and cook .
7.At regular intervals turn the fish so that it cooked evenly.The end you will see the leaf has changed its colour to very light green and at few  places brown. That's the sign the pomfret cooked well.Your can even wait until the leaf is totally brown.
8.Open the leaf slowly and enjoy the super tasty hot Pomfret wrapped in Goan Green Masala.

{Recipe}Goan Mackerel Cutlets/Bangde Almona

The most common fish cutlets found in Goan kitchens. Common dish out of common fish, Mackerel Cutlets or locally called Bangde Almona the best appetizer for parties and other family gatherings.


In my blog you will also find Tuna and King Fish Cutlets where preparation and procedure remains the same but Mackerels cutlets tastes fabulous. 
Bangde Almona preparation is very simple and also involves minimal time.These cutlets are very handy snacks, Hungry? Just place few hot cutlets between the soft pao along with shredded cabbage salad, every bite will be most memorable ones. Most of the goan dishes always taste better the next day after reheating, same goes for these Almonas. Enjoy Bangde Almona as snacks or side dish based on your tummy demand :)

Nothing better than my papa purchasing Mackerels & I getting busy with deboning of the mackerels, mixed with our Goan Green Masala and finely chopped onion. Then round up and shallow fry. There's no quick & easy snack as fish cutlets. So lets begin preparation of Bangde Almona.

Ingredients
6 Fresh Mackerels
1/2 Tsp Salt
1/2 Tsp Turmeric
2 Eggs
1 Cup Rava/Semolina
Oil for frying
Goan Toddy Vinegar(for grinding)
2 Table spoon of Goan Green Masala

Step Wise Method
1.Take around six mackerels and was well.Just remove the head part and keep aside.
2.Place the cleaned mackerels in deep pan or kadai,add little water ,salt, turmeric and cook on medium flame for about 10 to 15 min.
3. Debone the mackerels and smash well.
4.Add green masala and fried onions and mix well all ingredients well.
5.Then take the mackerel mixture on your palm and shape into round cutlets.Dip into beaten egg and then coat into semolina.Place the roundels on a plate and keep aside.
6.Then place a flat pan and shallow fry the cutlets till light golden brown.It might take around 10 min for each batch to fry.
7.Fried cutlets place it on kitchen towel to observe excess oil.
8.The tasty cutlets are ready.Serve hot as snacks or as i said earlier the place it between pao or slice bread and enjoy yummy sandwich.

{Recipe}Goan Beef Mince Potato Chops


Beef Minced Chops are small roundels of mash potatoes stuffed with cooked beef mince ,these beef chops are such a delicious snacks  that it just melts in your mouth and later burst of flavours. Chops are the favourite snack in most of goan Birthday parties ,get together's and other gatherings.Most of the household ladies prepare it in house or its also a famous snacks available in Goan Bakeries like Monginis, Pastry Palace and other local bakeries and local food stalls.


Beef chops are loved by kids and even the elders.I feel chops are perfect snack for hungry tummy as its large in size and tasty as its stuffed with Mince beef.If someone doesn't like Beef the same can be substituted by Mutton mince,chicken mince,boiled egg or vegetables of your choice.


These snack is yummy ,Tasty and Easy too,so lets begin to prepare these soft Beef mince chops.            

Servings 10
Total Preparation Time : 45 min
Cooking Time :25 min and 15 min Frying

Ingredients
1/2 Kilo Gram beef minced
1/2 Cup of frozen peas
2 Onions chopped
6-7 Potatoes boiled and mashed well
1 Tsp Coriander powder
1/2 Tsp Turmeric powder
Salt as per taste
2 Eggs beaten
Rava or bread crumbs for coating chops

Green Masala Ingredients
2-3 Table spoon Green Masala(ingredients below)
3-4 Green chilies
10 Garlic flakes
1 Inch ginger
10 Pepper corns
1 Small cinnamon stick
10 Cloves
1 Cup of Fresh green coriander
Goan Toddy vinegar for Grinding the masala.

Step Wise Preparation With Pictures.

  1. Arrange all the ingredients required,chop onions and also grind the green masala and keep aside.
     
  2. Keep pan on stove,once heated up add oil.
  3. Then add the chopped onions and saute nicely till translucent.
  4. Add the green masala and fry in the well for about 5 min.
  5. Once masala is fried well then add turmeric,coriander powder and the beef minced and frozen peas.Mix well and allow to cook for 5 min.Then add salt and cover and cook until the beef is cooked well.
  6. After some time open and check weather beef minced cooked well and also make sure water is completely dried off.
  7. Take the boiled potatoes ,peel them and mash into smooth dough.Make roundels and keep aside.
  8. The take each roundel of potato ,then flatten it on your palm or on flat surface and add the mince beef in centre.
  9. Cover the beef well with potato and make round patty shape.
  10. Then take the chops and dip in egg and then roll into rava and keep aside.
  11. Roll all the chops and arrange in a plate .
  12. Once all the chops are ready to shallow fry,then place a pan on stove and add oil as required.Place the chops and fry well till it gets light brown or golden colour.
  13. Once finished frying serve hot as a snack for hungry kids and elders. Prefect snack for your family picnic.



Note: You can also place the rava coated uncooked chops in refrigerator for future use.If stored in refrigerator then you can remove the chops 1/2 hour before shallow frying.
