{Recipe}Green Masala Pomfret fry wrapped in Banana Leaf

In My last post you all must have seen the recipe of  Pomfret Recheado fry wrapped in Banana Leaf and it was appreciated by most of the foodies out there.This recipe of Green masala Pomfret fry wrapped in banana leaf involves same procedure as Recheado pomfret fry but only difference will be  substituted with  Goan Green Masala for stuffing and as all you know how tasty the Goan green masala is.So lets begin with the step wise preparation of this recipe.

Ingredients
1 Large Fresh  Pomfret
1 Tender Banana Leaf
Salt
Oil as required

Step Wise Preparation

1. Purchase some Fresh Pomfret .
2.Clean and Cut the Pomfret. Nicely give cuts over the Body for the masala to stuff.
3.Then apply salt and Green masala generously over the pomfret body.Rub it over the body so it gets nicely stuffed inside the cuts and the head.
4.Take the banana leaf and remove the center hard portion.Then place the leaf over the tray and then place the pomfret over it.

5.Once the pomfret placed well,then pack it properly with the leaf and tie with cotton thread or the tread of leaf itself.Make sure its wrapped well other wise masala will come out.
6.Take a large pan and add required amount of oil .Then Place the wrapped pomfret inside and  fry it on slow to medium flame until its cooked well.Make sure to cover the lid and cook .
7.At regular intervals turn the fish so that it cooked evenly.The end you will see the leaf has changed its colour to very light green and at few  places brown. That's the sign the pomfret cooked well.Your can even wait until the leaf is totally brown.
8.Open the leaf slowly and enjoy the super tasty hot Pomfret wrapped in Goan Green Masala.

{Recipe)Pomfret Recheado fry wrapped in Banana Leaf

Pomfret Recheado Fry not a simple Rava fry or Masala fry but this time I have fried Pomfret wrapped in Banana leaf and the out come is just Wow. The best part is fry doesn't require much of oil as its fried in deep pan by covering.
The Pomfret wrapped in banana leaf came on table firstly because I was in Goa, secondly my dad and hubby got some super fresh Pomfrets from Mapusa Fish market, lastly availability of fresh Recheado masala in house and the Banana leaf from our Garden. The only person who enjoyed to the maximum the wrapped  pomfret is Mr.Tony Greg as it is favourite dish predominantly because its oil free dish. So lets begin with this Super tempting and delicious Pomfret Recheado fry wrapped in Banana Leaf.

Goan Recheado Masala Recipe

Here comes the recipe of my favourite masala "Goan Recheado Masala". It's a very versatile Masala paste and must to have paste in all goan Kitchens. Recheado masala is used stuffing fish like Bangde (mackerels),Pomplet (pomfrets),Calamari (squids) and also vegetables like bhende(ladyfinger),eggplant slice etc and then shallow frying. Red Recheado masala is blend of Indian spices which gives Spicy flavour ,vinegar for savoury flavour and last sugar for the sweetness as most of the goan food is.

The preparation of Recheado paste may requires prior 30 min of soaking of the spices in Vinegar and then grinding to fine paste.The paste you can preserve for about six months because there is no water involved in grinding.As you read you might have noticed its ground only by using vinegar.Also because of sugar and fried onions the masala nice sweet taste.
Servings : 250 gram(bottle full)
Preparation Time : 40 min

Ingredients
100 Gram Kashmiri chilies+few small chilies with spice
1 Table spoon Cumin seeds
1 Table spoon of pepper corns
1 Table spoon Cloves
1 Table spoon sugar
3 Inch of ginger
2 Large pod of Garlic(peeled)
1 Large Stick of cinnamon
2 Tsp Turmeric Powder
Salt as per taste
Oil
Vinegar for Grinding the Recheado Paste

Method
1. In large bowl soak all the ingredients accept sugar,onion and oil.(ingredients to be soaked red chilies,garlic,ginger,pepper corns,cumin seeds,turmeric,salt)soak for about 30 min.
2.After 30 min up grind all the ingredients to a fine smooth paste.While grinding add vinegar as an when required.Add sugar and grind again.
3.Chop the onion very fine and the fry till golden brown.After onion is cooled down add the same to the recheado paste and mix well.Using of fried onions is optional you can prepare the paste with onions too.
4.Then nicely store in glass jar and store in refrigerator .Can use for all your fish fries,and other recipes.

Pomfret Recheado


Fish recheado is loved by all goan's and you can say fish recheado is common dish prepared in our homes.Its quite easy to prepare recheado because recheado masala's are always preserved in our kitchens .Red Recheado masala is blend of Indian spices for Spice ,vinegar for savory flavour and last sugar for the sweetness as most of the goan food is.So today lets stuff the Pomfret with recheado masala and fry till golden brown.

Servings 2
Preparation time :40 min
Cooking time:10-15 min

Ingredients

2 White Pomfrets (cleaned and give cut on the back bone of pomfret)
2-3 Table spoon of Recheado Masala
salt o taste
Oil for frying

Ingredients for  Recheado masala(grind into fine and smooth paste store in glass jar)
50 grams Red chilies
2 Large pods of Garlic
5 inch ginger
1 table spoon Cumin seeds
1 table spoon  pepper corns
1 table spoon cloves
2 sticks of cinnamon
1 small ball of tamarind
vinegar to grind and preserve for at least 6-8 months 

Method
  • Take the pomfret and apply salt to it,take generous amount of  recheado masala and stuff properly into the cuts of pomfrets.
  • Keep it side for about 20 min to marinate.
  • Add oil on to the pan and once heated shallow fry the pomfret till golden brown.
  • Once fried well serve hot with steamed rice,fish curry and recheado pomfret as side dish.yummy yummy tummy.
