{Recipe}Goan Roast Masala

As you all know in Goa for most the celebrations and family functions the Chicken, Beef or Pork 
roast is very common and must to have dish in the food menu. Roast is a dry recipe served with Potato wedges or enjoyed as a side dish.

In my Blog you will find recipes Goan Beef Roast and Goan Chicken Roast with detailed instruction and presentation. Roast recipe wouldn't be perfect if appropriate masala is not used, so lets begin with 5 simple spices roast masala which gives authentic flavors to the meat we roast. Roast masala is the mixture of five important spices which needs to be ground into powder and then use for roast. You can prepare this masala and store in airtight container for future roast recipes. Simple but, very aromatic spice must in your Kitchen. So here is the recipe:

Servings : For 1 Kg Chicken/Beef/Pork

Ingredients
2 Tsp Cumin seeds
1 Tsp pepper corns
1 Tsp Turmeric powder
20 Cloves
3 Large sticks of Cinnamon sticks

Method
1)Grind all the ingredients  into fine powder.


2)Here you have the fresh and aromatic Roast masala.

{Recipe}Goan Chicken Roast

Goan Chicken Roast is the main chicken dish in Goan marriage buffets or any other parties held at Goan communities. The juicy chicken roast makes it a perfect side dish on your platter or you can just roast with some fresh salad beside.The masalas used are very minimal & mild.


When you hear a word roast, you might imagine tedious roasting process in oven but, this chicken roast you can conveniently cook at home using common household vessels like oval pan or deep kadai .


Servings 4-5
Total preparation time : Overnight Marination
Cooking time : 30 min

Ingredients
{Below mention ingredients grind into powder}
1 tsp Turmeric powder
2 tsp pepper corns
3 cinnamon sticks
20 cloves
2 tsp cumin

Other ingredients required
1 kilo gram chicken(cut into big pieces)
1 tablespoon Ginger/Garlic paste
1 lemon juice
1 table spoon vinegar
1 Large onion chopped
4 Kashmiri chilies
oil for frying
1 tsp sugar for caramelization

Method

1.First wash chicken properly ,than apply salt,2 table spoon above ground masala,ginger-garlic paste ,sugar,lemon juice,vinegar,onion and broken kashmiri chilies.

2.Mix all the ingredients well into the chicken and allow the chicken to marinate for overnight or minimum of 6 hrs.

3.In a non-stick pan or thick bottom pan add little oil and place the marinated chicken .Cover the pan and cook chicken for about 10 minutes on medium flame.

4.Then uncover the pan and cook chicken roast on slow flame until golden brown.

5.Serve as side dish or enjoy with potato wedges or fries or fresh green salad.
