{Recipe}Crabs Caldine /Crab curry in coconut milk

Caldine or  Caldinha is a  mild yellow coloured curry with less of spice .Caldine curry is mostly prepared using prawns, King fish, Pomfret or any fish with lots of meat and also of veggies like Cauliflower, Bottle guard, Ladyfinger etc. But today for a change and also for the love of carbs tried preparing "Crab Caldhine", it was just amazing.


Caldhine curry is on sweeter side with very mild spice and its favourite among kids . The Caldhine curry is prepared extracting coconut juice so the curry is very creamy and smooth in  texture. Best served with steamed boiled rice or normal steamed rice. There is seldom requirement of any side dish when you have Caldhine curry over your steamed rice ;).

Ingredients
1 Kg Crabs cleaned
1 Coconut milk(thick and thin)
2 Medium sized onions chopped
2 Tomatoes chopped
3 Green chilies chopped
1 Tsp turmeric powder
1\2 Tsp pepper corns
5 cloves
1 Tsp Cumin seeds
5-6 Garlic flakes
1/2 Inch ginger
2 Table spoon coriander seeds
1/2 Cub Tamarind juice
Salt as much required
Oil for sauteing

Step wise method below

1)Take the cleaned crabs,wash well and apply salt.Keep it aside until you prepare other masala paste.
2)Grind the below ingredients to fine paste and keep aside.
3)In Mud pot or stainless steel pan add oil,then add the chopped onions ,tomatoes .Saute both ingredients nicely.
4)Then add the crabs in the pot and give a nice slow turn.
5)Add the ground paste along with tamarind juice in the crabs and mix well.Then cover and cook for 5 min.
6)Then add the thin coconut milk and give it a nice stir.Cover and cook again for 5 min.
7)Last add the thick coconut milk and shimmer the caldhine for more 5 min on slow flame.
8)The crab Caldhine is all set to gobble with steamed white rice.Too Yum.

{Recipe}Goan Crab Masala

Today's recipe is simple Goan Crab Masala. Its a semi coconut based gravy with few spices. Good as a side dish or as a dip with pao/bread. The coarsely ground coconut based masala beautifully coats the crabs and its fun to mess your fingers and enjoy crabs.

Last but not the least "All the recipes have their own distinct flavour and taste". 

Ingredients
1/2 Kilo Gram Crabs
1 Cup grated coconut
2 onions chopped
1 Inch ginger
5 Flakes of Garlic
2 Table spoon chili powder
1/2 Tsp turmeric powder
1 Table spoon coriander powder
1/2 Tsp Cumin Powder
1 Tsp Garam Masala powder
1 Small ball of tamarind( soak and keep aside)
1/2 Cup Green coriander for garnish
Salt as per taste
Oil

Method
1. Clean and wash the crabs. Add salt and turmeric powder and keep aside.


2. Grind together,coconut,ginger,garlic and all the powdered spices to a fine paste.


3. In a pan add oil, once heated up add chopped onions fry well till translucent. Then add tamarind paste and crabs, followed by a good  toss. Cover and cook the crabs for 5 min.


4. After five minutes add the ground fine masala of coconut. Mix the masala well and let it cook again for more 5-10 min.


5. Again give a good stir and allow it cook for more 10 minutes or until the crab is cooked. Once crab masala done its ready to serve with steamed  rice or with pao.

Crab Xacuti

As you all know Xacuti is Goan Gravy prepared by using complex spicing including white poppy seeds,grated coconut,dried chilies and many other medley spices.Generally Xacuti is prepared by using Chicken/Beef/Mutton/Mushrooms/Crabs. 

Early morning today in house my brother got fresh Crabs so was wondering whether to prepare Crab xec-xec or Crab Xacuti and both the gravies are  loved on the dinning .Crab xec-xec already on my blog so thought of preparing Crab Xacuti so i can share with you all. Prepared crab Xacuti after a long time but it was just super tasty with freshness of Crabs,everyone at home cleaned wiped their plate. Xacuti is best served with breads or steamed rice along with fresh onion and tomato salad.

Servings 5-6
Total Preparation Time 30 min
Cooking Time :15-20 min

Ingredients
1 Kg Fresh Crabs cleaned and wash
2 Tsp Ginger/garlic/Green chili paste
1 Tsp Turmeric
1 Lemon Juice
1 small lemon size tamarind ball
1 Coconut grated
3 onion sliced
1 Table spoon Dry Coriander seeds
1/2 Tsp Fennel seeds
1/4 Tsp poppy seeds
1/2 Tsp Sesame seeds
5-6 Dry red chilies
1/4 piece of Nutmeg
10 pepper corns
5 Cloves
2 Cinnamon sticks
3 Medium tomatoes finely cut into cubes
salt as per taste
Oil 

Step wise Method
1)Clean and wash the crabs thoroughly ,then apply salt,turmeric,lemon juice and paste of ginger/garlic/chili paste and marinate for 15 min
2)Arrange the required ingredients,then roast together coconut and onions together in little oil until brown(grind together coconut and onion),in the same pan add little extra oil and dry roast other spices that is red chilies,dry coriander,pepper corns,cinnamon,cloves,nutmeg,poppy seed,sesame seeds.(grind all to fine paste)

3)In Pan add oil and add the remaining chopped onion,saute for some time add the marinated crabs.Toss the Crabs well and allow to cook for 2 min.

4)Then add the white ground paste of coconut and onions.Mix well the crabs in masala and let it cook for 5 min.

5)Add the red ground masala and again let the crabs cook in the same for 5 more min on medium flame.


6)Add chopped tomatoes on top and allow to shimmer the gravy for 5-7 min.

7)let it shimmer on slow flame until the oil starts to float on top and its done.

8)Serve Hot xacuti with pao or unnde or hot steamed rice.

Rava/semolina Fried Crabs


Enjoy the simple Rava/semolina coated crabs and then shallow fried.Crabs marinated with simple herbs and spices.Simple and quick to make.Crabs being favorite of my son and me we just relished every bite of it.

Servings 4
Total Preparation Time : 30 Min
Cooking Time : 15 min

Ingredients
4 Crabs (washed and cleaned)
1/2 Table spoon lemon Juice
1/2 Tsp Chili powder
1/2 Tsp pepper crushed
Less than 1/4 Tsp turmeric powder
Semolina for frying
salt as per taste
Oil for frying

Method
  • Apply all try spices to craps that is salt,chili powder,turmeric,pepper and mix well
  • Than add lemon juice and mix well.Let it marinate for 10-15 min.
  • After 15 min coat the crabs with semolina and shallow fry until golden brown.
  • Serve hot.Just yummy starter or a side dish.

Pepper Garlic Crab Stir fry


Crabs are always loved by people staying in coastal belt and it is called as Kurlo/kurle and the most common recipes prepared out of crabs in Goa are crab xec- xec,Crab masala,crab xacuti ,crab curry etc .Since my dad bought some nice fresh large crabs i thought let me prepare some quick stir fry with limited ingredients.The pepper and garlic flavors just gave the Crabs beautiful spicy taste,it was just kind of joy to relish the meaty crabs.Be ready to messy your fingers with the lip smacking sauces of pepper garlic crab stir fry .






















Servings 4-5
Total Preparation Time : 40 min
Cooking time : 20 min

Ingredients
1 Kg Crabs Cleaned and Cut into two halfs
2 Onions chopped finely
1 large table spoon Garlic chopped
11/2 Tsp pepper crushed
11/2 Tsp Red chili flakes
1 Table spoon Hot and sweet chili garlic sauce
3-4 Small fresh red chilies
1 Table spoon Vinegar
Salt to taste
Oil
water

Method

  • In a large bowl add the crabs,wash them well and apply salt and keep aside .
  • Keep a deep pan or a casserole on stove,add oil and once heated add onions and saute for 1 or two min till translucent.
  • Than add garlic and again saute for few seconds.Make sure the flame is on slow.
  • Now add crushed peppers,fresh red chilies chopped,chili flakes and sweet and hot chili and garlic sauce.
  • Stir all the ingredients well,Than add little water and allow the sauces to cook for 2-3 min.Keep a watch and don't allow the ingredients to burn.
  • Than add the crabs and toss well in the sauces ,add table spoon of vinegar and toss again.
  • Now cover the pan and allow the crabs to cook on slow flame.If you feel the crabs are very dry than can add little water and again cover and allow to cook on slow flame for 10-15 min till the sauces are thick and coats the crabs well.
  • Serve Hot with steamed rice or can just enjoy the Crab stir fry all single as a starter.Be ready to mess your fingers with the lip smacking sauces of pepper garlic stir fry .
