{Recipe}Simple Mutton Kheema

"Mutton Kheema" Once prepared, its all my Son's. Mutton dishes are Clive's all time favourite among Non-veg delicacy and he expects the dish in his plate for Breakfast-Lunch-Dinner, So you all can imagine his love for Mutton.
Its a simple Mutton kheema with very limited ingredients its quick to prepare as Mutton is pressure cooked. The pressure cooked Kheema is really tasty and it really goes well with Roti or rice bhakri and I even prefer eating with dosa or pao.

Ingredients
700 gram of Mutton Minced(Kheema)
2-3 Onions finely chopped
2 Tomatoes Finely Chopped
2 Tbsp of Ginger-Garlic Chopped or paste
1 Tsp of Turmeric powder
2 Table spoon of chili powder(Depends on spice)
1 Tbsp of Garam Masala
2 Bay leaves
Few Dry spices (1 small cinnamon stick,1 Black cardamom,4 cloves,5 pepper corns)
Fresh Coriander for garnish
Oil
Salt as per taste

Step wise Method
1.First Process will be wash the minced mutton and strain the water complete.For water to drain you can use the strainer. 
2.On the other cut the onions,tomatoes and ginger- garlic .

3.Sprinkle the powdered spices over the mutton kheema and keep aside. 

 4.On the other side keep the Pressure cooker on the stove.Once heated add oil,then add the bay leaves and the other dry spices(1 small cinnamon stick,2 cardamom,4 cloves,5 pepper corns).Then add the chopped Ginger-Garlic,chopped onions and tomatoes.Toss all for about 2 min and then add the mutton kheema. allow the kheema to cook for about 5 min by stirring occasionally.Once you little oil on top then add required amount of water and pressure cook accordingly.Once done if you still see Kheema watery then cook more until water dries.
5.Once you see the water reduced the Mutton Kheema is all ready to be served with Hot Chapati or Phulkas or even as a side dish

{Recipe}Green Chicken Fried Rice

Healthy veggies, green leafy vegetables are so very difficult to feed your kids and if at all they ready to eat there should be some sought of innovation in the dish. This recipe of Green Chicken Fried Rice is the result of my innovation.Its been 4 years since I prepared Green Chicken Fried Rice, but after looking at all Green veggies in my refrigerator I planned to recreate this recipe again. Since it is green fried rice, it consists of Spinach, capsicum, french beans, peas, green chilies and the last exciting ingredient is chicken cubes.
Green Chicken Fried Rice is a healthy and tasty option for your quick lunch or dinner. Best options for kids and office lunch too. Its tough to plan kids box perhaps, this recipe can be of great help. Apart from these mentioned ingredients you can also substitute with some continental veggies like  broccoli, green zucchini, asparagus. Fried Rice recipes are always fun to prepare because once you have ingredients ready all you need is toss them along with rice saving your precious time..

How to Prepare Perfect Fried Rice.
  • First point make sure to have proper cooked rice which shouldn't be over cooked but should be around 90 percent cooked .
  • Make sure to keep the veggies finely chopped.
  • Always cook on medium to high flame.
  • Use a high bottom large pan or Wok  so you toss the ingredients well.

Ingredients
250 Gram of Cooked Rice
1 Cup of Chicken cubes
1 Large Onion chopped
1 Bunch of Spinach leaves chopped
1/2 Cup of Chopped capsicum
1/2 Cup of Green peas
1/2 Cup of  French beans Chopped
1 & 1/2 Table spoon of Ginger Garlic Chopped
1-2 Green Chilies chopped
1/2 Tsp of Pepper crushed
1 Table spoon of Chili sauce(optional)
1/2 Tsp Sugar
Salt as per taste
Oil for Tossing

Step Wise Preparation With Pictures.
1.Arrange all the ingredients Before you could start with the preparation.On the other hand keep the kadai or a wok on stove & add oil. Once oil heated add crushed ginger,garlic & onions. Saute for 2 min.
     

2.Then add the marinated Chicken cubes in the sauteed onions & stir fry well until the chicken is cooked.You can Cover the lid and cook the chicken.
             
                                   

3.Once Chicken is cooked properly,add the Green veggies that is peas,beans,capsicum and Spinach. Mix well & stir fry on high flame. Add crushed pepper,chili sauce , sugar & cook the mixture until moisture is reduced.
        
4.At this stage add the cooked rice & toss it well with the chicken veggie mixture.

        
5.And there you have Tasty,spicy and yummy Green chicken Fried rice.

{Recipe}White Sauce Pasta

White Sauce Pasta is easy to make, 30 mins recipe. Restaurant style white sauce pasta can be enjoyed right at your home. It also can be best Dinner or Lunch menu. When you want to be light on your belly. Pasta is always been favourite among Kids and among all pasta dishes, white Sauce Pasta is demanded by most of the Kids because of its Cheesy and Creamy Flavor. In this Pasta recipe I have used colorful Bell Peppers but, you can enhance by adding some nutritious veggies like Broccoli, carrots, corns and many others as per your choice and can also be a great idea for Kids Lunch Box or the weekend meals too.


Pasta as we all know is an Italian delicacy, typically prepared from unleavened dough of wheat mixed with eggs or water and prepared into sheets or other shapes which can be cooked with veggies or meat. For the past recipe the base is either white or red sauce. More to speak about white sauce which is basically called as Bechamel Sauce which originated between France and Italy made from butter , milk, cheese and flour. This Creamy smooth Sauce brings amazing taste to pasta. The sauce is little on sweeter side. Perhaps you can always add spice according to your palette.

How to Prepare Perfect White Sauce Pasta.
  • Do Not over cook the pasta.
  • Make sure while preparing white sauce there are no Lumps in the sauce and for this always keep the flame slow.
  • Pre-Chop the veggies and arrange all ingredients required.
  • Cheese You can use either Grated or Cheese slice too as i have used i above recipe.
  • If No olive oil you can always use butter in preparation of pasta.

Ingredients
250 Gram Pasta(I have used Fusilli Pasta)
2-3 Cubes of Butter 
1 & 1/2 Cup Chopped Red/Yellow/Green Capsicum
1 Large Onion Chopped(I have used White)
10 Garlic Flakes chopped
Salt as per taste & Little oil

For White Sauce
50 Gram of Butter
3 Table Spoon Maida(All purpose Flour)
3 Cheese Slice or Grated Cheese  
1/2 Tsp Chili Flakes
1/2 Tsp Pepper crushed
1/2 Tsp Mixed dry Herb(or just Oregano)

Step Wise Preparation With Pictures

1.Arrange all the ingredients,the keep the pan with water to heat up and add salt and little oil.
               
 2.Once water starts to boil add the pasta and cook for about 10-15 min.Drain the water from pasta and keep it aside.
               
 3.Then in deep pan add butter,add chopped garlic,onions and the chopped bell peppers.Saute for 2-3 min and then remove in plate.
                
4.In the same Pan add 50 grams of Butter ,once melted add the flour and stir continuously so that it gets roasted well in butter.
                    
5.Later add the Luke warm milk slowly in maida and stir simultaneously so as to avoid lump formation in the white sauce .Also add the Cheese slices and stir well to get smooth creamy sauce.
                                                          
                  
 6.Add the Dry herbs and the sauteed veggies and the dry herbs.Mix all well and then add the boiled Pasta.
                        
7.Mix the Pasta in the sauce and there you have the delicious cheesy creamy Pasta.

{Recipe}Methi Paratha|Fenugreek Leaves Paratha

"Methi Paratha" or "Fenugreek Leaves Paratha " is flat Indian bread prepared using methi leaves while kneading and with some other ingredients of your choice. Methi Paratha is one of the healthy option in your Breakfast Plan. As we all aware of its benefits in, digestion, rich in iron, maintaining sugar level and many more .
So its very much essential that we include Methi in our Diet in form of Methi sabzi/Baji or Methi Rice, Methi leaves in Dal, or Methi seeds. Due to its bitter taste its always been disliked by kids and some Adults. So Methi in the form of Paratha can be a great recipe to feed your fuzzy kids .

Methi/Fenugreek Greens was a must at my place and Mum most of the time prepared by adding Tur Dal or Moong Dal or even fresh coconut on top & it tastes great.

3 Cups Of Wheat Flour
2 Cups Of Methi Leaves Finely Chopped
1 Large Onion Chopped

1 Table Spoon Chili paste/Crushed

Water for Kneading
Oil for Toasting the Paratha

1.Take the wheat Flour in a large bowl,ten add the chopped Methi Leaves,Chopped onions,Ginger-Garlic paste,Green Chili paste,Garam Masala,Salt.
                        
   2.Mix all the ingredients well.Add water and start to Knead the Mixture.                                                                                        
 3.Knead to smooth and soft Dough.Then take ball size dough and roll it to thin roti/flat Bread.
                         
  4.The rolled flat bread place it on hot Tava and toast it until light brown.                             
                                             
 5.Place all the fried Paratha's on plate and there the tasty and healthy Paratha's ready to enjoy with Curd or Tomato sauce.
