{Recipe}Goan Beef Cutlet

"Goan Beef Cutlet" is a thin slice of beef marinated in vinegar, spices and then shallow fried with rava /semolina coating until crisp. Served as side dish or as starter with drinks. However, Beef cutlet is relished when stuffed between pao with fresh salad and called as Beef Cutlet Pao. Beef Cutlet Pao is one of the best street food and mostly enjoyed by Beef lovers.
Once you see the dish you might not say its a cutlet because cutlet is basically a round shaped patty prepared using minced meat or vegetables and then rolled in bread crumbs and then shallow fried but Beef cutlet as mentioned above statement is thin slice which marinated mostly in Goan green masala and the rava coated and shallow fried or sometimes even deep fried. I can easily hog two Beef cutlet pao along with a glass of chilled Pepsi :). I even remember that during my first pregnancy just before a week of my delivery I had hogged beef cutlets and Croquettes ;) hehehe. Beef Cutlet is Goa's street burger which satisfies our cravings to the max.

Ingredients
500 Grams Tender Beef Slices
Fine Semolina For Coating as required
Salt
Oil for frying

For Fresh Salad
1 large onion sliced
1 large tomato julienne
2 Carrots shredded
1 Cup of cabbage shredded
1 Table spoon Goan toddy vinegar
2 Tsp Lemon juice
sprinkle of salt
6 Goan Pao/Unddo or any Bread available

Step Wise Method
1.Wash the Beef slice and pat dry them with kitchen towel or tissue so to absorb the extra water. Flatten the slices with kitchen stone or a Meat Mallet Tenderizer(its a hammer to soften or flatten the meat)I used kitchen stone since i do not have one. 
2.Then apply salt,green masala over the slices and allow the beef slices to marinate overnight in refrigerator or at least for 6 hours.
3.Once you planning to fry ,  then remove the marinated slices from the refrigerator . Coat each slice in the rava well and keep it aside.
4.To shallow fry take a non-stick pan or a cast iron pan.Once the pan heated add oil and shallow fry the beef until you get nice light brown colour. Make sure fry on low low flame because the beef has to cook first and then the rava coating will get colour.
5. Crispy coated and moist inside Beef cutlet you can serve as starter with a chilled Beer or Your favourite Cold Drink.

6. Few Beef cutlets you can chop for the cutlet Pao stuffing. And also you can mix all the salad ingredients and keep it ready.
7.To prepare Cutlet pao take a pao then open it and place the chopped cutlet and the fresh tangy salad.Cover the pao and just have a big bite of the yummiest Goan Cutlet Pao.

 


















8.Next time this yummy street food you can enjoy in your homes with your family.Little lengthy process but you will enjoy you snack to the fullest.


Note:
1.Make sure to have tender meat as it will help cook the cutlet in less time.
2.Cook on slow flame to avoid burning of cutlet.
3.In my recipe i have used Unddo which is hard crust bread available in Goan bakeries you can use Pao or slice bread too if pao not available.

{Recipe}Goan Salad Bhaji

"Salad Bhaji" is nothing but a simple Tomato Onion Bhaji prepared in Goa and mostly consumed for Breakfast with Goan Bread that is Pao or Unndo. There is no complicated steps in these recipe, no major ingredients required but a simple Bhaji which required nicely ripe Tomatoes, crunch of onions and few flavours of chili, fresh coriander and generous amount of butter which is my extra ingredients as it really tastes  heaven when added butter.

Ingredients
6-8 Large Tomatoes finely chopped
3 Onions Cut into Thin moon shape/or chopped
2-3 Fresh Red /Green chilies
1 Tsp Mustard seeds
10 Curry Leaves
1/4 Tsp Turmeric Powder
1/4 Tsp Kashmiri chili powder(for color)
1/4 Tsp Pepper Crushed(optional)
Salt as per taste
Fresh Coriander chopped
Butter

Method(Step wise pictures missing but definitely you can view the you tube video attached )
1.First step is to cut the tomatoes,onions,chilies,coriander.Chop all and keep it aside.

2.Then place a kadai on stove,once heated add oil.Then add the mustard and curry leaves.

3.Once mustard crackles add the chopped chilies, cut onions and saute for 2 min.Later add he chopped tomatoes and saute well and then cover and allow to cook for 5 min on medium flame.

4.After 5 min you will notice tomatoes have soften and left water. Now add turmeric,salt ,chili powder and pepper crushed as i mentioned its optional.Mix all the ingredients well and allow it to simmer again for more 5 min on slow flame. Last procedure will be to add the magical ingredients that is butter and last garnish with fresh coriander. Give a gentle stir and allow to rest until you get the pao on plate to enjoy the Yummy Salad Bhaji.

{Recipe}Pineapple and Mango Popsicle

One more addition to the Popsicle list and this time it is "Pineapple and Mango". Nothing much difference in the procedure except division between the two flavours. I didn't blend the flavors together rather, kept the flavors separated in Popsicle so you could feel the switch in taste from sweet to tangy and that's the fun part.
Both pineapple and mango being seasonal fruits very much healthy to consume. Pineapple just being a tropical sweet and tangy fruit its also offers significant health benefits too. More to add about Pineapple - its a great source of Vitamin C, B, fiber and manganese etc. Mangoes as you all know kings of fruits and more over we do not eat mangoes because of its taste but, because we love mangoes :). Mangoes too have many health benefits like helps in Digestion, Boosts Immunity, Promotes eye health, clears skin and many more.

Total Freezing Time 4-5 Hours

Ingredients
1 Ripe and cleaned Pineapple
3 Ripe Mangoes (pulp removed)

Step wise Preparation
1.Clean the Pineapple and make sure there no rough surface is left.
2.Cut the pineapple into pieces and grind into fine paste. Then strain the paste and extract the juice.
3.Pour the extracted and strain juice to the Popsicle molds and place the mold into the freezer for 1 hour.
4.Meanwhile clean the mangoes ,remove he pulp and blend into smooth paste.
5.Once the pineapple juice is frozen ,then you can add the mango paste on top and then cover the molds with the Popsicle cover and again place it into freezer for about 4-5 hours.
6.Once you see the Popsicle frozen well then dip the end part of mold and slowly remove the yummy and chilled Pineapple and Mango Popsicle.

{Recipe}Ginger Tulsi Tea

Ginger and Tulsi always been known to cure several respiratory problems, it also strengthens our immunity. Tulsi or Holy Basil and ginger have many other health benefits too when mixed with other ingredients like honey, turmeric.. 
So if at all your day starts with having your favourite cup of Tea, these medicinal ingredients (Ginger and Tulsi) will boost your energy level throughout the day. If you don't prefer milk then always can have milder version of Ginger Tulsi black Tea. Today's blog will summarize recipe in small video.

Ingredients
3 Cups of Water
1 & 1/2 Table spoon Tea powder
3 Table spoon Sugar
1 Tsp Grated Ginger
10 Tulsi /Holy Basil Leaves
3 Cardamom Crushed
Milk

Step Wise Preparation
1.Keep the 3 cup if water to heat, later add crushed Ginger, Tulsi and cardamoms crushed .
2.Once water starts to boil add tea powder and sugar. Allow it to boil on medium flame for about 3-4 min.
3.Then add hot milk  to the boiling tea and again allow it to boil for 3-4 min or boil until you get the perfect colour for the Tea.:)
4.And there you get your perfect Ginger Tulsi strong Milk Tea. Best way to your enjoy with your favourite childhood biscuits Parle-G.

Note:

  • Always add or reduce Tea Powder or Sugar as per you taste.
  • Make sure to ad always hot milk to the tea.
  • Make sure you boil the Tea well after adding Milk.

(Recipe)Mango Popsicle

Mango Popsicle recipe pending to hit my blog. Recipe already available in my Instagram and Facebook. However, couldn't upload detailed recipe on Blog due to my hectic schedule last year handing little boss baby "Ronny" who was just a year old and along with Clive who felt ignored most of time. So there are many recipes resting in my repository since last two years.

The Mangoes I used are the Mankurad Mangoes which are  among the best mangoes found during the season. You can use any varieties of Mangoes as per availability but, make sure its fully ripe and sweet in Taste.

Ingredients
4-6 Ripe Mangoes
1 Cup Milk Maid
1/2 Cup Of Milk
1/4 Tsp Cardamon Powder

Step -Wise Procedure
1.Make sure to have some fully ripe Mangoes in your fruit basket.
2.Next step will be to wash the mangoes,then peel , scoop off the pulp and add it to the mixture jar.
3.Also add milk,milkmaid and cardamon powder.Blend all to fine paste.
4.Then pour the smooth paste to the Popsicle molds and place the lid. Allow the Popsicle to rest freezer for 4-6 ours until set.
5.Once you see the Popsicle hardened well then dip the end part of mold and slowly remove the yummy and chilled Mango Popsicle.

{Recipe}Breadfruit Rava fry

Breadfruit in English or locally called as Neerpanas/Neerponos in Konkani is my favourite when fried with rava coating, and my cravings are fulfilled by demanding breadfruit when in Goa or when my family visits Bangalore. This recipe is resting for long in my repository, so today am sharing my favourite recipe with you all.

Total Preparation Time : 30 min
Total Cooking Time : 20 min

Ingredients
1 Breadfruit Raw
1 Cup Fine Rava/Semolina
1 Tsp Pepper crushed
1/4 Tsp Turmeric Powder
Salt as per Taste
Oil for frying

Step Wise procedure
1.Make sure you have one fresh raw Breadfruit.
2.Peel the Breadfruit,then cut into half and make sure to remove the center hard portion too. Then cut in equal wadges or moon shape.Add the cut pieces to the water and wash thoroughly twice or thrice.
3.Drain the water completely you can also towel dry the breadfruit cuts.Then sprinkle over it salt,pepper crushed, turmeric and mix all well.
4.In one plate take rava/semolina and also add little crushed pepper to it so its coats over the bread fruit and gives nice taste.Mix the rava well and then coat each breadfruit with rava and keep aside.
5.On the other side place a tava or a pan on the stove.Once heated add the oil and allow it to heat up,then  one by one spread rava coated pieces on the tava.
6.Make sure the flame is medium high or low.After 5-7 min flip the breadfruit pieces.
7.Allow to fry for more 5-7 min and flip again.Make sure the breadfruit is cooked well but coating is not burnt but keep it light brown and crisp.
8.Best to be served as evening Tea time snack or also a side dish with you rice and dal when you do not have Fish on plate.

Note: 

  • You can apply coconut oil to our hands while cleaning the breadfruit to avoid the white gum on your hands.
  • Rava /semolina if possible take the chiroti rava which is very fine and helps in better coating.

- organic wheat flour Chapati(#tattva )with ghee

{Recipe} Chicken Vindaloo/Vindalho

Vindaloo or Vindalho is a Indian curry mostly prepared in the regions of Goa, vasai, surroundings of Konkan, Kerala and other parts of India. In Goa we mostly prepare Vindaloo of Pork and you guys will also find the recipe in my Blog👉 Link Goan Pork Vindalho. Its mostly prepared during Celebrations and Festivals.

But, today I want to present the recipe of Chicken Vindhalo and this recipe is prepared on demand of my Hindu friends who wanted to taste Vindaloo and respecting their religion here I present - Chicken Vndaloo. 

The preparation procedure remains the same as pork recipe as mentioned in the recipe except the substitution of Pork with Chicken and only difference will be the cooking time for Chicken will be less as compared to Pork. 

As you all know its very simple dish which only required few hours of marination with little spices and then just place the pot on the stove and leave the dish to cook on slow flame, see no hard work at all and the tastiest dish is done. I am very happy that all my friends loved the Chicken Vindaloo and their dream of tasting Vindaloo was fulfilled .

Servings 6-8 
Total Preparation Time : Overnight +Cooking
Cooking Time : 20 to 30 min

Ingredients
2 Kilo Gram Chicken(Cut into cubes)
6 Medium Onions slices
2 Green Chilies slit
Salt as per salt
1 Tsp Sugar

Below Ingredients Grind into fine paste
15 Kashmiri Chilies
2 Tsp Cumin
1 &1/2 Tsp Turmeric
10-15 Garlic cloves
2 Inch Ginger
3 Cinnamon stick
12 Cloves
1 Tsp Pepper Corns
Toddy Vinegar to grind

Step wise Method
1)Wash the chicken well and dry it using kitchen towel,Make sure no water in chicken.Apply salt and keep aside until you grind the vindalho masala.
2)Following are the ingredients required.
3)Then Grind all the mentioned ingredients using vinegar into fine paste.(not to grind onions and other ingredients)

4)Then spread the red vindalho masala over the Chicken. Add onions and mix the chicken well in the masala. Marinate at least for 3-4 hours and for best result marinate overnight.This marination process will help masala penetrate into the Chicken.
5)Next morning transfer the marinated chicken into a mud pot or a nice nonstick pan and just place on slow flame and cook for about 30 min.Make sure to cover the lid and stir occasionally.
6)After 20 min Add 1 tsp sugar,salt as per taste and stir well.Cook for more 10 min or until the water is maximum dried and its done. Then enjoy the Goan fiery Vindalho with goan pao or rice or Pulao.
