{Recipe}Pineapple and Mango Popsicle

One more addition to the Popsicle list and this time it is "Pineapple and Mango". Nothing much difference in the procedure except division between the two flavours. I didn't blend the flavors together rather, kept the flavors separated in Popsicle so you could feel the switch in taste from sweet to tangy and that's the fun part.
Both pineapple and mango being seasonal fruits very much healthy to consume. Pineapple just being a tropical sweet and tangy fruit its also offers significant health benefits too. More to add about Pineapple - its a great source of Vitamin C, B, fiber and manganese etc. Mangoes as you all know kings of fruits and more over we do not eat mangoes because of its taste but, because we love mangoes :). Mangoes too have many health benefits like helps in Digestion, Boosts Immunity, Promotes eye health, clears skin and many more.

Total preparation Time :5-6 hours
Total Freezing Time 4-5 Hours

Ingredients
1 Ripe and cleaned Pineapple
3 Ripe Mangoes (pulp removed)

Step wise Preparation
1.Clean the Pineapple and make sure there no rough surface is left.
2.Cut the pineapple into pieces and grind into fine paste. Then strain the paste and extract the juice.
3.Pour the extracted and strain juice to the Popsicle molds and place the mold into the freezer for 1 hour.
4.Meanwhile clean the mangoes ,remove he pulp and blend into smooth paste.
5.Once the pineapple juice is frozen ,then you can add the mango paste on top and then cover the molds with the Popsicle cover and again place it into freezer for about 4-5 hours.
6.Once you see the Popsicle frozen well then dip the end part of mold and slowly remove the yummy and chilled Pineapple and Mango Popsicle.

Hong Kong style Chicken !!!

Before even could start the preparation din think that the result will be so yum and tasty.With the name Hong Kong we feel it will be quite complicated and lot many ingredients ,but to a surprise its so easy and quick to make if you have these few stuff in your homes.This chicken recipe with little tangy flavour created by pineapple and with hit of spice created by chopped green chilies is just awesome combination of sweet and sour taste.




















Servings 4-5
Total Preparation time 1 hour
Cooking time : 20 min

Ingredients
250 Gram boneless chicken(cut into strips)
1 large onion cut into cubes(or large chunks)
1/2 Cup of Pineapple cubes
1 Cup of red/yellow/green bell peppers cut into cubes
1/2 Cup of carrots cut into cubes
2 -3 Table spoon Corn starch
1 Egg whisked
1 1/2 Table spoon of ginger garlic chopped
1/2 Cup of tomato ketchup
1/2 Cup fresh tomato juice
1/2 Cup pineapple juice
3 -4 Green chilies Chopped
Salt to taste
1/2 Table spoon of sugar
Oil for deep frying

Method

  • In Bowl add whisked egg,corn starch ,salt,ginger/garlic and mix well.Add chicken strips and mix well again and let it marinate for 20 min.Keep the pan on stove and heat the oil for deep frying.
  • After marinating for 20 min deep fry the chicken strips still golden brown.Keep it aside on tissue paper to absorb extra oil.
  • Meanwhile cut all the vegetables as mentioned.In Pan/wok add oil and let it heat at the highest temperature,than add chunks of vegetables one by one starting with onion and saute for about 5 min than reduce the flame to medium.
  • Add chopped ginger/garlic,tomato ketchup,pineapple juice,sugar,salt,green chilies and fresh tomato juice and stir it well.
  • Than allow the juices to reduce a bit so that when you add chicken the sauces will coat it well.
  • Once you feel the juices and reduced and thicken than add fried strips of Chicken and toss well in sauces.Cook for more 5 min on low flame and its done.
  • Consume hot with steam rice or as a starter.

Pineapple Mint Mocktail !!!

Mocktail Is non-Alcoholic Continental drink consisting of mixture of fruits juices or other soft drinks,Pineapple mixed with Mint and lemon gives so refreshing flavour. In any sunny Summer day i think this Mocktail will just make your day :).



Servings 3-4
Total preparation Time:15 min

Ingredients
5 Slices of Pineapple
2 table spoon Sugar
1 Lime Juice
10 Mint leaves
1/4 tsp of pepper corns
Salt for taste and dressing the Glass
Ice cubes

Method

  • In Jar Add Pineapple slices along with ,lemon juice,salt,sugar,pepper corns,ice cubes and mint,blend until you get to see the froth of pineapple around the jar.
  • Once done strain the juice and discard thick residue.
  • Again add ice cubes and little chilled water and blend the Mixture again for few seconds or 1 min.
  • Take one glass,apply lemon on the brim of the glass and dip in salt,pour the Mocktail and for garnish add mint leaves and fix a slice of pineapple.

Pineapple & Potato Bhajiya!!!

"Pineapple"
Natives of Southern Brazil and Paraguay spread pineapple across south America,and it eventually reached Caribbean,south America and Mexico,where it was cultivated by Mayas and Aztecs(Greatest ancients civilisations)"Pineapple"is a tropical fruit that has yellow flesh and a prickly peel that has a diamond shape pattern to it.

We generally consume Pineapple as a fresh fruit or in form of jams,juices,wines,or in ice-creams,cakes or as preserves,pineapple is also grilled or deep fried ...Surprising isn't it.So you can say use of pineapple in culinary world is unending.

Today is going to be Pineapple and potato Bhajiya/pakora/or baji in Konkani.Seen ,tried and learnt from the show snack attack hosted by one of my Favourite Chef Ranbir Brar.























Servings 4-5
Total Preparation time:15 min min
Frying/cooking time 10 min min

Ingredients
5-6 Rounds/slices of Pineapple(centre removed)
5-6 Potatoes slices
Oil for deep frying
2 tsp gram flour/besan
Salt to taste
1/2 tsp crushed pepper for taste
1 tsp chili powder

For Batter
1 cups of Gram flour
2 tsp chili flakes
1 tsp Turmeric powder
1 tsp Carom seeds/Ajwain
salt to taste

Method

  • To prepare the batter add gram flour,salt,chili flakes,turmeric,carom seeds and water,mix all ingredients well into a smooth batter (not watery) and allow it to rest for 10-12 min.
  • Meanwhile keep oil for heating in kadai/or deep frying pan
  • In a plate add 2 tsp gram flour,salt,chili powder and pepper crushed,mix well and coat the pineapple and potato slices.
  • And deep fry the pineapple and potato slices on medium flame till golden brown.
  • Serve Hot as Tea time snack with Tomato sauce or Green chutney.
