{Recipe}Goan Beef Cutlet

"Goan Beef Cutlet" is a thin slice of beef marinated in vinegar, spices and then shallow fried with rava /semolina coating until crisp. Served as side dish or as starter with drinks. However, Beef cutlet is relished when stuffed between pao with fresh salad and called as Beef Cutlet Pao. Beef Cutlet Pao is one of the best street food and mostly enjoyed by Beef lovers.
Once you see the dish you might not say its a cutlet because cutlet is basically a round shaped patty prepared using minced meat or vegetables and then rolled in bread crumbs and then shallow fried but Beef cutlet as mentioned above statement is thin slice which marinated mostly in Goan green masala and the rava coated and shallow fried or sometimes even deep fried. I can easily hog two Beef cutlet pao along with a glass of chilled Pepsi :). I even remember that during my first pregnancy just before a week of my delivery I had hogged beef cutlets and Croquettes ;) hehehe. Beef Cutlet is Goa's street burger which satisfies our cravings to the max.

Ingredients
500 Grams Tender Beef Slices
Fine Semolina For Coating as required
Salt
Oil for frying

For Fresh Salad
1 large onion sliced
1 large tomato julienne
2 Carrots shredded
1 Cup of cabbage shredded
1 Table spoon Goan toddy vinegar
2 Tsp Lemon juice
sprinkle of salt
6 Goan Pao/Unddo or any Bread available

Step Wise Method
1.Wash the Beef slice and pat dry them with kitchen towel or tissue so to absorb the extra water. Flatten the slices with kitchen stone or a Meat Mallet Tenderizer(its a hammer to soften or flatten the meat)I used kitchen stone since i do not have one. 
2.Then apply salt,green masala over the slices and allow the beef slices to marinate overnight in refrigerator or at least for 6 hours.
3.Once you planning to fry ,  then remove the marinated slices from the refrigerator . Coat each slice in the rava well and keep it aside.
4.To shallow fry take a non-stick pan or a cast iron pan.Once the pan heated add oil and shallow fry the beef until you get nice light brown colour. Make sure fry on low low flame because the beef has to cook first and then the rava coating will get colour.
5. Crispy coated and moist inside Beef cutlet you can serve as starter with a chilled Beer or Your favourite Cold Drink.

6. Few Beef cutlets you can chop for the cutlet Pao stuffing. And also you can mix all the salad ingredients and keep it ready.
7.To prepare Cutlet pao take a pao then open it and place the chopped cutlet and the fresh tangy salad.Cover the pao and just have a big bite of the yummiest Goan Cutlet Pao.

 


















8.Next time this yummy street food you can enjoy in your homes with your family.Little lengthy process but you will enjoy you snack to the fullest.


Note:
1.Make sure to have tender meat as it will help cook the cutlet in less time.
2.Cook on slow flame to avoid burning of cutlet.
3.In my recipe i have used Unddo which is hard crust bread available in Goan bakeries you can use Pao or slice bread too if pao not available.

{Recipe}Batata Vada


Batata Vada
is one of the India street food and more famous in streets of Mumbai. Batata  translates to potatoes and Vada to fried dumplings. So you can sum up together and say its a Batata Vada is a spicy potato filling coated with chickpea batter and deep fried until golden brown.This Potato fritters can be best  served with hot spicy green chutneys or and other savory chutneys including tomato ketchup.



Although it considered as famous snack from Mumbai streets but its also popular snack through out India .The only difference can be in the flavours otherwise the method and preparation remains the same. If you ever visit southern Part of India then it will be called as Aloo Bonda,if you are in Goa you will hear people call it Batat Vada.



How the Batata Vada's are prepared.

1.First Make sure to boil the potatoes well so while mashing you do not find any hard parts.

2.The potato bhaji or the stuffing is not liquidity but should be thick in consistency so you can shape it into round balls or patti.

3.The Chickpea batter shouldn't be liquidy .It should be thick enough to coat the potato balls.

4.Oil shouldn't be very hot while frying.Make sure to keep the flame on medium while frying.

5.Fry until Golden brown and crisp   




Servings 4-5
Total Preparation time:45 to 1 hr min
Cooking time :20 min

Ingredients
For Potato Mash/Bhaji
4-6 Medium boiled potatoes
2 Medium onions chopped finely
2-3 Green Chilies chopped
1 Tsp of garlic chopped
1 tsp mustard seeds
5-6 Curry leaves
1/2 Tsp Turmeric powder
Green coriander for garnishing
Salt as per taste

For Chick pea Batter
150-200 gram Chick pea flour
1/2 Tsp chili powder
1/2 Tsp crushed pepper
1/2 Tsp Garam Masala
Salt for Taste
Oil for Deep frying

Step Preparation with Pics and Video


1.Add Besan /Chickpea in a bowl.















2.To the chickpea add crushed pepper ,garam   masala,chili powder,salt.Mix all the dry ingredients well before adding water.

  
   
3.After mixing the dry ingredients add water as required and prepare a smooth thick batter.Make sure the batter is not very liquidy. Keep the batter aside until you prepare the stuffing.
















4.In pan add oil,once heated add mustard,once it starts to splatter add curry leaves,green chilies , garlic chopped. Saute for 40 secs.
















5.Add to same chopped onions stir for some time and then cover the pan and saute for 1 min so the onions become soft.
















6.Than add turmeric powder,salt .Keep stirring to avoid turmeric from burning.
















7.Then add mashed potatoes  in pan and stir well.Cover and cook on low flame for 1-2 min.open the lid,add the chopped coriander and mix well.Off the stove and keep the potato bhaji to cool down.
















8.Mean while on the other side keep oil in deep kadai for heating for deep frying the batata vada.
















9.Once the potato mix is cool down take small amount of potato mix on your hands and roll it into small roundels of your choice and keep aside on plate. 



   


  









10. Take each roundels and deep inside the chick pea batter and coat it well .
















11.Now drop the batter coated vada's in the hot oil. Now you can reduce the flame from high to medium.
















12.Fry the Batata Vada until they turn nice golden brown and crisp from outside.


13. Once the Batata Vada's are fried well remove them out of the oil and place it on kitchen tissue to absorb extra oil.

14.The hot Batata Vada's ready to be enjoyed with hot tea and for dip you can use sauces or chutneys of you choice.

Tawa Pulao-Street Food !!!

"Tawa Pulao"is basically a Maharashtrian street food.The pulao is basically prepared by tossing boiled rice along with vegetables and some spicy masala's.You will just fall in love with the smell of tawa pulao,no wonder people like you and me go mad for Mumbai street food :).























Servings 4-5
Preparation Time:15 min
Cooking time :12-15 min

Ingredients
3 cups of Boil rice
Oil 2 tablespoon
1 Potato Boilied and cut into cubes
4 florets of cauliflower boiled and cut
1 capsicum finely chopped
3 Tomatoes chopped finely
1/2 tsp cumin seeds
1 onion chopped
1/2 tsp Garlic paste
1/2 tsp Ginger paste
1/2 cup Green peas boiled and mashed
1 tsp chili powder
1 tsp lemon juice
21/2 tsp Pav bhaji masala
4 tsp coriander chopped
salt as per taste

Method

  • Heat oil in deep non-stick pan.Add cumin seeds and when they change colour .add potato,cauliflwer,capsicum and ginger paste.
  • Stir and saute well till the raw smell of ginger disappers.add red chili powder and saute.
  • Add two tsp of pav bhaji masala and stir well.Add the tomatoes,salt and stir.
  • Cover and cook till vegetables become soft.Keep aside few peas and the the remaining add in the pan and stir.
  • Cover and cook for two min.Mash the vegetables lightly.add little water if the mixture is too dry.Add the rice,lemon and toss well.
  • Cover and let the rice get heated through.Garnish with the reserved peas,corinder leaves and sprinkle the remaining pav bhaji masala and serve Hot.I M JUST LOVING IT !!!! :)
