Home-made Mango Jam| Goan Mangaad| 3 Ingredients Jam | 100% Natural Mango Jam


 Home-Made Mango Jam is all summer favourite in most of the Goan homes and this Mango Jam is locally known as Mangaad .This Mango jam is super delicious and 100 % natural without any preservatives.

Mangaad is prepared using mostly Goan Mussarat or Monserrate De Bardez mangoes or any other locally available mangoes but make sure to pick the sweetest mangoes for best taste. Mangaad is best enjoyed with Goan hard crust bread, chapati or a slice of bread. 










Today this luscious Mango Jam is prepared in my kitchen using the locally available mangoes in Bangalore. This Mango is called as Malika and its too sweet which eventually gives us tasty Jam. Hardest part of the process is stirring the mixture until you get the jelly consistency. So lets get started with the recipe.

So what you require to prepare Mango Jam /Goan Mangaad

  • Ripe Mangoes
  • Sugar
  • Lemon Juice
To prepare mango Jam you need to wash the Mangoes, clean and cut them. Later remove all the pulp and grind to puree. To the same add sugar and lemon. Mix all well and cook all together on medium flame. Stir on regular intervals to avoid the burning or sticky nature to pan. It takes about 40 to 50 mins for Jam to derive perfect consistency. Once done, allow the Mango Jam to cool down and store it in sterilized bottle. To enjoy the jam refrigerate it.

Ingredients 
1 Kilo Gram ripped Mangoes
200-150 Gram Sugar
1 Tbsp Lemon juice

Step by step instruction to Prepare Goan Mangaad/Home-Made Mango Jam


1. Wash the Mangoes and dry them. Then cut the mangoes and remove all pulp in a large bowl as shown in the picture below.










2. Add the cut mango cubes to a mixer jar and grind it to smooth puree.The same pour it in pan in which you planning to cook the jam.











3. To the puree add the Sugar and Lemon.











4. After adding the above ingredients mix it all really well and then place the kadai on stove to cook.











5. Once the Jam mixture starts bubbling reduce the flame and cook by stirring on regular intervals.Cook until the mixture starts to leave the edge of the pan or kadai. Also the mixture should hold to the spatula and not flow down. It will take about 40 to 45 minutes for the jam to be ready.











6. At this point when all liquid evaporates the jam will leave the sides of kadai or pan and you will see a jelly like consistency of Jam.For better result you can do the below one more test to get proper consistency of Jam. Drop a spoon full of Jam on cold plate and pass your finger through the Jam drop. You will find the spread intact and clean surface. This means the Jam is perfect and  you can stop the cooking.











7. Allow the Jam to cool down and then stored it in a sterilized airtight glass jar. Store the Jam after cooling in refrigerator and use max 3-4 months. 











8. The Home-Made Mango Jam or Goan Mangaad can be best enjoyed with Pao,Slice of bread or Chapati.Healthy,Zero preservatives and super healthy Jam is ready.

{Recipe}Authentic Goan Prawn Curry|Goan Sungta Kodi


 









"Goan Prawn Curry " or "Goan Sungta Kodi" is a Curry that can be listed on top among the other fish Curries.As we all know Goan Stable food is Rice and Fish curry and when its Prawn curry in home i  can say its feast at least for me. Almost all the fish curries are same but there are few fish like prawns the process is little different and also few spices variations. Ingredients

250 Gram Cleaned & devein prawns

1/2 Freshly Grated Coconut

1 Onion Finely Chopped

1 Tomato Finely Chopped

2 Green chilies Slit

1/2 Tsp Turmeric Powder

1/4 Tsp Pepper Crushed

2 Tablespoon Coriander Seeds

15-20 pepper corns

8-10 Garlic flakes

Small Tamarind Ball

Salt as per taste

Water as required

1 Table Spoon Oil


How to Prepare Authentic Goan Prawn Curry-Below are the Step wise method and the Video.



1.In a Mixture Jar add Freshly grated coconut , Dry Coriander seeds,Tamarind,Turmeric,Garlic and water .

2.Grind all to a fine smooth paste as shown in the picture below.

3.Now add salt,turmeric powder & pepper crushed to the prawns and allow to marinate. 

4.For Seasoning of the curry add oil in pan and allow it to heat up.

5.Then add Chopped onions,tomatoes and slit chilies.Saute all for 1-2  minutes.
















6.You take a bigger spoon and mash the tomatoes well.


7.Once Tomatoes release water you can add the marinated Prawns. 
8.Nicely stir the prawns and you will notice change prawns colour to white.

9.At this point add the ground curry masala.

10.Give a gentle stir .

11.Cover and cook on slow flame for 5 min.

12.Once you see bubbles add the extra masala water and get the curry to proper consistency.

13.Add salt to the curry as per taste and also stir gently.

14.Cover and shimmer  the curry for last 2-3 min .and the curry will be all done.As prawns will not take much time to cook.

15.The Authentic super delicious Goan Prawn Curry is all ready to be served.

16.Server the Prawns Curry with Hot steam Rice ,fish fry  and small piece of Pickle.The Lunch is supper Yum Combo with Prawn Curry.

{Recipe} Goan Green Chicken Curry in Coconut Milk


















''Goan Green Chicken Curry in Coconut Milk'' is a Tasty dish and simple to prepare. This yummy Chicken Curry is prepared using Goan Green Masala and shimmered at last with thick coconut milk. It is similar to Green Chicken but what makes it unique is addition of coconut  milk. The Green Chicken curry in coconut milk goes really well with Pulao or Goan bread or even slice bread and also with everyone's all time favourite Chapati or also known as - English Indian Flat Bread.

















This Curry being mild in spice is best options for kids menu and also for these summers its a superb options for your Sunday lunch or dinners. This chicken curry is quick to prepare with limited ingredients. These kind of easy recipes are always required handy on lazy days yet when we want tasty dish on Plate.

Ingredients required to Prepare Goan Green Chicken Curry with coconut Milk.
1.5 kg Chicken(cut medium pieces)
1 Lemon juice
1 Table spoon Ginger /Garlic paste 
1 Tsp Pepper powder
1/2 Coconut Milk(Yields around 1 cup Milk)
2 Large Onions Finely chopped
3 Large Tomatoes Chopped 
1 Tsp Turmeric powder
Salt to Taste

For Green Masala
1/2 Bunch of fresh coriander
6-8 Garlic flakes
1 Inch Ginger
6-8 Green Chilies
1 Tsp pepper corns
1 Tsp Cumin 
5 Cloves
2 sticks of Cinnamon
2 Table spoon Toddy Vinegar


How to Prepare Goan Green Chicken Curry with Coconut milk - below are the step wise method and the video.


1.In Cleaned and washed Chicken add salt, lemon juice, ginger/garlic paste and pepper crushed. Mix all well and let it marinate until we make other ingredients ready.

















2.On the other hand add the all the ingredients mentioned for Green Masala into a mixer jar. 

















3.Grind the ingredients to fine paste. Add little water only if required.

















4.Also chop onions and tomatoes to fine cubes and keep it aside. Extract the Coconut milk and also keep it ready.

5.Now Place a Kadai or a deep pan on stove and add oil. 

















6.Once oil is hot enough add the chopped Onions and sauté then until translucent.

















7.Then add the chopped tomatoes and cook well until soft .

















8.Add turmeric powder and quickly mix so it doesn't burn.

















9.At this point add the green masala paste and cook on slow to medium flame until you see the oil top of the masala.


10.Now add the marinated Chicken and toss well in the masala. Let the chicken nicely get coated with the Green Masala.

















11.Cover and cook the Chicken on medium to low flame without adding any water for about 10 -15 min. Make sure to stir occasionally  to avoid the burn at bottom. 

















12.Once you see the chicken cooked 50 % add coconut milk and give a good mix .

















13.Cover and cook the chicken for around 5-10 min .After few min when you see oil layer over the Chicken Curry time to off the stove.

















14.Allow to rest the curry for few minutes and then serve. Best goes well with Pulao, Chapati/roti, Goan bread ,or white steamed rice.
