Home-Made Mango Jam is all summer favourite in most of the Goan homes and this Mango Jam is locally known as Mangaad .This Mango jam is super delicious and 100 % natural without any preservatives.
Mangaad is prepared using mostly Goan Mussarat or Monserrate De Bardez mangoes or any other locally available mangoes but make sure to pick the sweetest mangoes for best taste. Mangaad is best enjoyed with Goan hard crust bread, chapati or a slice of bread.
Today this luscious Mango Jam is prepared in my kitchen using the locally available mangoes in Bangalore. This Mango is called as Malika and its too sweet which eventually gives us tasty Jam. Hardest part of the process is stirring the mixture until you get the jelly consistency. So lets get started with the recipe.

So what you require to prepare Mango Jam /Goan Mangaad
- Ripe Mangoes
- Sugar
- Lemon Juice
2. Add the cut mango cubes to a mixer jar and grind it to smooth puree.The same pour it in pan in which you planning to cook the jam.
3. To the puree add the Sugar and Lemon.
4. After adding the above ingredients mix it all really well and then place the kadai on stove to cook.
5. Once the Jam mixture starts bubbling reduce the flame and cook by stirring on regular intervals.Cook until the mixture starts to leave the edge of the pan or kadai. Also the mixture should hold to the spatula and not flow down. It will take about 40 to 45 minutes for the jam to be ready.
6. At this point when all liquid evaporates the jam will leave the sides of kadai or pan and you will see a jelly like consistency of Jam.For better result you can do the below one more test to get proper consistency of Jam. Drop a spoon full of Jam on cold plate and pass your finger through the Jam drop. You will find the spread intact and clean surface. This means the Jam is perfect and you can stop the cooking.
7. Allow the Jam to cool down and then stored it in a sterilized airtight glass jar. Store the Jam after cooling in refrigerator and use max 3-4 months.
8. The Home-Made Mango Jam or Goan Mangaad can be best enjoyed with Pao,Slice of bread or Chapati.Healthy,Zero preservatives and super healthy Jam is ready.
