{Recipe}Chicken and Spinach Pasta

Simple pasta recipe with Chicken cubes and spinach. The only interesting part of the recipe is the design of the pasta. Do not remember the brand of the pasta but really cute shape pasta which kids will love to Eat. When it comes to consuming spinach kids will always be fuzzy so preparing it by adding in pasta is really good way as most of the kids love it. Also addition of chicken pieces will give it wonderful taste along with its cheesy flavour.
I love experimenting with pasta's as it is best meal for kids when we have less time to prepare. Few  basic ingredients, along with some chicken or cottage cheese and few colour full healthy veggies makes quick and easy pasta Meal. If your kids love pasta make sure to add lots of healthy veggies which they do not consume otherwise. Lets begin to prepare the yummy and healthy recipe.

Cooking Time : 10-15 min

Ingredients
250 Gram of Pasta
1 Bowl boneless chicken pieces
1 Small Bunch of Spinach leaves chopped
1 Medium size onion
5 flakes garlic finely chopped
1 Tsp of chili flakes
1/2 Tsp of fresh pepper crushed
1 Tsp of dry Basil and oregano
1 Bowl of cheese grated
1 Table spoon veg Mayonnaise
Salt as per taste
Butter
Olive oil

Method
1.First cook the pasta for 10 min or until done.For cooking pasta add water in pot.Then add a tsp of oil and salt.Once water starts boiling add pasta.cooking time of pasta depends on brands too.

2. Once pasta cooked remove it from hot water and pass clod water.Drain completely and keep aside.

3.On the other side blanch the spinach leaves and chop.
(Blanching process is nothing but boiling leaves in hot water for 2 min and then immersing them ice water  for a min and then squeeze out the water completely.)

4.Cut the boneless chicken in fine cubes and keep aside.Also cut one medium size onion very fine.

5.Then keep one pan on stove,once heated add olive oil and little butter.Then add onions,saute for 1 min and add chopped garlic along with finely cut chicken.Saute well in the butter and cook for about 10 until chicken cooked.

6.Later add chopped spinach,pepper crushed,mixed dry herbs,chili flakes and mix all herbs well.

7.Add 1 table spoon of mayonnaise  lots of grated cheese and mix well.You will see the mixture becoming melty and creamy.

8.Then add the boiled pasta and mix well in the smooth mixture.Sprinkle little more chess and you can also add the pasta water if you see the pasta is too dry. Then allow it to cook for 1 or 2 min on very slow flame.

9.And the creamy and cheesy pasta is done.

{Recipe} Instant Bimbli Pickle

In Goa every garden you will find a Bimbli Tree, Bimbla is a soar fruit which is mostly used in Goan curries specially prawns and also consumed by preparing mouthwatering pickles. Until today i never knew what bimbli called in English but thanks to Google I got so much wide information about Bimbli. 

As per Google its is called Averrhoa bilimbi(and commonly know as bilimbi tree,cucumber tree or tree sorrel)a fruit bearing tree of the genus averrhoa,family oxalidaceae. Further it describes that Averrhoa bilimbi is a small tropical tree native to Indonesia and but now species is cultivated and found throughout Indonesia, Philippines, Sri Lanka, Bangladesh, Maldives, Myanmar and Malaysia. It is also common in southeast Asian countries.In India is mostly found in the gardens specially in coastal regions south India ,Goa ,Karnataka and Maharashtra.

The culinary importance of this tiny fruit is used for sour or to give acidic flavour mostly for  seafood substituting tamarind or tomato.It is also cut and dried and preserved for later use.In India bimbli is mostly used in Kerala, bhatkal, Goa, places in Karnataka and Maharashtra basically mostly used in coastal belt.

Today here I come with simple instant Bimbli pickle which is my mum's recipe. No experiments just did exactly how my mum does.

Servings approx 500 Grams Bottle

Ingredients
500 Grams Bimbli fruit
3-4 table spoon of Chili powder
1 tablespoon of Turmeric powder
1 Table spoon of Mustard seeds
15 -20 Garlic flakes
1/2 Tsp  Meethi/fenugreek seeds
2 table spoon of Jaggery (just for sweetness)
Salt 
Oil

Step wise Method
1.Take fresh bimbli from the tree,wash them well and towel dry.

2.Then cut the bimbli in cubes and keep it aside.
3.Prepare the seasoning of the pickle .For that heat the oil ,then add mustard seeds,once you see mustard seeds splatter add fenugreek, chopped or crushed garlic and mix well.Then off the flame and add turmeric powder and chili powder.Mix all well and keep aside.
4.Add the mixture in the bimbli , then add salt, jaggery and mix all nicely.Can add extra chili powder for more spice.


5.Then Store it Glass Bottle and consume within a week or two. Advisable to keep the pickle in refrigerator or it might get fungus or become more watery.

6.Consume any time ,best with dal rice and also can enjoy with fish curry rice.

{Recipe}Masala Omelette Sandwich

 
Simple masala  Omelette sandwich best options for Sunday breakfast with Family members.We all love eggs, and most of the folks enjoy egg recipes because its easy and quick to cook.

More people like sunny side fry, boiled egg, egg bhurji, scrambled egg and many more. Masala omelette between the slice bread or the hard crush pao gives amazing taste which makes it a good addition to your breakfast menu.You can also roll the omelette in chapati .

Ingredients
4 Eggs
2 Medium onions finely chopped
1 Medium Tomato finely chopped
2 -3 Green chilies finely chopped
1/2 small cup chopped coriander
1/4 Tsp pepper crushed
1 Tsp of garam masala
1/4 Tsp Turmeric
Salt as per taste
Oil for frying

Step wise preparation
1.Take a big bowl and add the chopped ingredients that is onions,tomatoes,chilies,coriander.
2.Also add dry ingredients and eggs.
3.Mix all the ingredients well.Make sure masala and salt mix well.
4.Keep a Tawa or non-stick pan.Once pan heated add oil ,Then once pan little heated pour the egg mixture and spread all over the pan.
5.Cover the lid over the pan cook on slow flame for 3-5 min.
6.Open the lid and turn the egg carefully,repeat the flipping twice until the egg masala nicely cook.
7.Once done place the egg masala between the slice bread and enjoy,You an also enjoy egg with Goan pao.

{Recipe}Goan Stuffed Calamari

Goans prepare squids in different ways and among them one is stuffed squids. Squids stuffing generally consists of squids tentacles or chopped shrimps, onions, which are then cooked in red recheado masala and fried in oil. Stuffed squids is a great starter and appetizer in your party menu. So let’s start with the preparation.
You can refer Stuffed Calamari with shrimp filling recipe prepared in the past, but today its detailed recipe of stuffed calamari with calamari tentacles, onions, tomatoes cooked in  Recheado Masala. We can also do the stuffing of calamari with green masala mixture.So here comes simple yet delicious recipe of Stuffed Calamari.

Ingredients
10-12 Big sized Calamari(cleaned)
1 Bowl chopped Calamari Tentacles
2 Large onions finely chopped
2 Large Tomatoes finely chopped
2-3 Green chilies chopped
2-3 Table spoon of  Recheado Masala
Salt to taste
Oil for frying
Tooth pick to seal the Calamari

Step wise preparation Method
1. Make sure you get the fresh Calamari/Squid .
2. Clean the Calamari well and separate the tentacles. Wash well the squids pocket and the tentacles .
3. Chop the tentacles fine and keep aside.
 
4. In pan add oil,then add the chopped onions,fry until translucent.Then add chopped chilies and tomatoes.Mix all well and cook by covering for about 2-3 min on slow flame.

5. Add recheado masala and saute for 2 min.Then add salt ,give a stir and allow to cook for more 2 min.


6. Add the Squid tentacles and mix well in the ingredients.Cover and cook for 5-7 min more.

7. Allow the mixture to cool down.The take the calamari and fill each with the red masala mixture using a small spoon.Seal calamari opening using a tooth pic as shown in the below picture.

8. Once all squids done filling then place them on pan and shallow fry.Make sure to cover the lid because squids pops out of pan sometimes.
9. Turn the squids occasional until you get the light brown caramelised colour over the squids. 
10. Serve when hot as side dish or just enjoy as snack. You cannot stop with one.

{Recipe}Rava Fried Squids


Today's recipe Rava fried Calamari or Squids. Rava fried fish is very common in Goan Cuisine .When i think of fried fish i can never imagine fish without rava coating.The main reason to roll fish in rava because it fries fish well and also crisp.So today's recipe on my blog is "Rava fried Squids".


Rava coated fish is always delicious,you just cannot stop by just eating one .The best part is the semolina crumbs on the tava,i always like to wipe the crispy rava and enjoy.So today lets learn how prepare squid rava fry.There are also other fish rava fry on my which you can have a look,link added .Xinanio Rava fry/Mussels Rava Fry,Rava/Semolina coated Prawns Fry,Lepo Fry (sole/tongue fish)Rava Fried Talle /Semolina Coated Sardine Fry,Chonak Fry Recipe.

Ingredients
500 Gram Squids/Calamari
1 Tsp Chili powder
1/4 Tsp Turmeric powder
1/2 Lemon
Rava/Semolina for coating.
Salt to Taste
Oil for frying

Step Wise preparation 

1.Get the fresh Squids, clean them properly and Cut into roundels,also make sure you use tentacles too.





2.Drain all the water and for the squids apply salt,turmeric,chili powder,lemon.Mix all well and keep it aside to marinate for 10 min.
3.Then take rava in plate and coat the squids rings .Dust the extra semolina and keep aside.

4.In pan add oil ,once heated shallow fry the squid rings until crisp.
5.Your final crispy rava fried squids will be like below.
