Colocasia and Flat rice Croquettes.


Colocasia is also called as Aarvi in Hindi and maddi in konkani , its roots and leaves are also used in cooking.In Gujarat the leaves recipe is called as patra,in Maharashtra as aalu Wadi,and in few regions the leaves are also used for preparing savory curry by adding pea and cashew nuts.The Colocasia roots are also used for preparing dry dishes like dry Sabzi, kababz, and shallow fry dishes .The Colocasia once boiled is little slimy veggie so its better to have some dry dish out of it.

My mum prepares Sabzi/Bhaji of Colocasia roots which is also called as Maddi .The bhaji is papered by adding dry prawns or prepared just plain using Indian spices and it really tastes good with rice roti/bhakri. I had never tried preparing dishes out of colocasia and these croquettes are my first experiment with these healthy roots which are also rich in Iron. Its really impossible to make today's kids to feed these healthy veggies .So Tried doing healthy croquettes combining maddi/Colocasia and flat rice ( poha ) and few ingredients like cheese,smashed potato and herbs.Hope you mommies out there like the recipe.

Ingredients
4 Colocasia roots boiled
1 Boiled Potato
1 Cup Soaked flat rice
1/4 Cup spring onions chopped
1 Chopped onion
1 Cup grated cheese
1 Tsp pepper crushed
2 Tsp fresh coriander
1 Tsp Garam Masala
1 Cup Multipurpose flour paste(little watery)
Bread crumbs for coating
Oil for deep frying(can do shallow frying as well

Method
1.) Boil the colocasia roots and peel it .
2.)Soak flat rice(poha)in water and drain the extra water completely by squeezing between your palms. 
3.)Then a bowl add mashed colocasia,mashed potatoes,flat rice (poha),spring onions,fresh coriander,onion chopped,cheese,pepper crushed,garam masala and salt.
4.)Mix all the ingredients well to a smooth dough like and make sure its not watery as you wont able to roll croquettes.If its watery can add corn flour.
5.)Roll into cylindrical size croquettes and keep in plate.
6.)Then dip each croquette into maida batter and then coat with bread crumbs and place in a plate and keep in refrigerator for 5 to 10 min.
7.)Later deep fry until golden brown and serve hot with sauce or dip of your choice.

Tuna Croquettes Recipe


Tuna Croquettes a quick and easy snack for kids ,or for Tea time snack ,or can be one among the party snack.Since Tuna used is canned Tuna so much of struggle  is saved and just you can start with preparing the round cylindrical shaped croquettes by adding few other ingredients like mashed potatoes,herbs of your choice.some spices and additional veggies if required.

Servings 4
Total Preparation Time : 30 Min
Cooking Time : 10 min

100 Garam canned Tuna
1 Large Mashed potato
1/4 Tsp pepper crushed
1/4 Tsp Chili Flakes
1/4 Tsp Garlic crushed
1 Table Spoon Coriander leaves Chopped
salt to taste
1 Egg
Bread crumbs
Oil for Frying

Method

  • Take a large bowl,in that add the tuna meat,add mashed potatoes,pepper crushed,chili flakes,garlic crushed,chopped coriander,salt.
  • Mix all the ingredients well and keep aside.
  • On the other hand beat one egg and place bread crumbs in a plate and also keep oil for heating.
  • Take the Tuna Mix and shape it into cylindrical shape and keep aside.
  • One bye one take the prepared croquettes,deep into the eggs then roll into the bread crumbs and deep fry till golden brown.  
  • The croquettes are done,enjoy it Hot with tomato sauce or ketchup.

Paneer Vermicelli Croquettes


Paneer Vermicelli Croquettes was specially prepared for my son Clive who is just crazy for Paneer dishes.My sons school had class room party and they had to carry extra snack and so i decided I'll make something healthy and at the same time tasty and attracting to the Nursery Kids eyes :).

So when i was surfing through the You Tube video's i found many paneer and potato snacks but i found this Paneer Vermicelli very interesting.So lets begin with this kids friendly Dish.

Servings 5-6
Total Preparation time:1 hour
Cooking time:30 min

Ingredients
3 Boiled Potatoes
250 Gram Paneer grated)cottage cheese
1 onion Chopped finely
2 Tsp Ginger/garlic paste
2 Green chilies chopped
1 Tsp pepper corns crushed
1 Tsp Garam Masala
salt to taste
Oil for deep frying
Mini Cheese cubes
1 cup all purpose flour for making batter(for liquid coating)
2 Cups of fine roasted vermicelli for outer coating

Method
  • Take the boiled potatoes and mash it in a large bowl,than add grated Paneer,chopped chilies,pepper crushed,ginger/garlic paste,onion chopped and salt.
  • Mix all the ingredients well and make sure its not watery.If you find watery little watery than can add bread crumbs which will help to combine well. Once mixed keep it aside.
  • Than for coating make all purpose flour batter for that take one cup flour in bowl and add required water,pepper crushed.pinch of salt and chili powder and make a thick batter.
  • And for outer coating take the roasted fine vermicelli and crush it into small pieces so it will coat well on the croquettes
  • Than take the mixture of potato and paneer and shape up into round pops or ball and each pop dip in flour batter and than coat it with vermicelli and keep aside.
  • In a pan keep pour oil for deep frying the pops .Once heated deep fry the paneer potato croquettes till golden brown,make sure u do not burn it.
  • Sever Hot as tea time snack or for kids as snack.Enjoy with Tomato ketchup.
