{Recipe} Goan Prawn Rissois/Rissóis de camarão


"Prawn Rissois"
or as called in Portuguese "Rissóis de camarão " (Rissois means a small patty  and camarão means Prawns) I can term it as the princess of snacks. Rissois is yet again among the recipes which Portuguese people introduced in  Goan Cuisine. It is one of the delicious starter for small parties, festivals and weddings ."


What Is Prawn Rissois

Prawn Rissois are small half moon shaped snack filled with cheesy creamy prawn filling which tastes amazing. It does involve lengthy process and requires lot of patience but all the hard work what you put in is all worth it because result you get delicious Snack melting in your mouth. Best part is you can refrigerate(Freeze) the prepared Prawn Rissois for about a Month and its so handy when you have unexpected guest at home, just drop the Rissois in heated oil and serve hot .


How to Get Perfect Prawn Rissois?
  • Make sure to have the Elements ready i.e. Dough/Prawn filling/Bread crumbs and Whisked egg /oil for deep frying.
  • Once the Prawn stuffing prepared make sure keep in refrigerator because it will hardened if any liquid remaining .
  • Make sure to prepare the Dough with proper consistency or else you might end up having cracked Rissois.
  • Need to be quick while using the dough and also cover the other dough portion with damp cloth other wise chances are that dough might become hard.
  • While coating the Rissois in egg and bread crumbs try to keep one hand dry and one for wet other wise you will not get smooth surface of Rissois.
  • You can either take bread crumbs or semolina for coating But I always prefer both mixed because it gives nice texture and also doesn't burn the outer cover of Rissois.
  • While deep frying the Rissois make sure to keep the flame medium to low.

With out wasting any further Time lets begin with the process involved in Prawn Rissois.

Total Preparation Time : Minimum 1 hour
Cooking Time : 30 Min
Time Frying : 5 Min

Measurement: 1 Cup = 256 ml

Ingredients

(A)Dough Preparation
3 Cups Maida (All Purpose Flour)
2 Cups of water
2 Tsp Butter
Salt as per taste

(B)For Stuffing of Rissois
250 Gram of Cleaned Prawns(deveined)
2 Tsp of Butter
1 Tsp of Olive oil/any normal cooking oil
2 Large Onions finely chopped
1 Tsp of finely chopped garlic
1 Tsp of crushed pepper
2 Pinch of Nut Meg Powder
1/4 Cup Milk
2 Tsp of corn flour
1/2 Cup of grated Cheese 
Little fresh coriander for Garnish(if you wish)
Salt only if required(Because Cheese & butter has salt)

(C)For Coating of Rissois
2 Eggs beaten/whisked
1 Bowl of Bread Crumbs
1 Bowl of Fine Semolina

Step wise Preparation with pictures

1)First lets start with preparing the stuffing of the Rissois. For that start with keeping the pan on the stove. Once heated add butter and then add the cleaned prawns and saute them well until they turn pinkish.

  

2)Transfer the prawns in a bowl and once the have cooled down chop the prawns into small pieces. 

                          
                                                           
3)In the same pan add 2 tsp of butter ,olive oil and now add the chopped onions. Saute onions for about a min and then add the chopped Garlic & prawns . one quick stir and allow to cook for a Min.

                          
4)Then Add crushed pepper, nut meg  milk and corn flour. After mixing all ingredients in pan add       the grated cheese and stir well. You will get creamy cheese stuffing. Last add fresh coriander only if   you wish. Remove the stuffing in bowl and keep it in refrigerator until you prepare the Dough     of Rissois

                                                                                       
5) Now comes the Dough Procedure. Start with placing a deep pot on Stove .Then add Water, salt &      butter.Once water boils reduce the flame and add the Maida flour /all purpose flour. Keep stirring until it binds well. It might take around 3-5 min.

     
                      
6)Now transfer the hot dough on large plate and when little hot knead it well until you get smooth dough.Cut it into two half and the other keep it covered until you work on the one dough portion.

                                                                                                      
7)Keep rolling into a large round but make sure to keep little thickness. Once rolled Cut into small roundels with help of cutter .

                                                                                                           
8)Place the roundels on a flat surface and start placing the prawn stuffing at the center of the rounds .You can use small spoons for the same.To seal use water around the edges of the rounds and press the edges with finger tip. Arrange all the moon shaped Rissois into a tray.

  

9)Once all done filling start with the coating process. For this take each small Rissois and dip into egg beaten and then drop into crumbs and semolina mixture. Coat well and place in a tray.

       

10) The coated Rissois you can now store in box and store it in Freezer and Fry when required. Before frying you can defrost Rissois for 20 min at room temperature and then fry in Hot oil.

                       






11)Fry until the Rissois get nice lovely golden brown colour. Make sure to adjust the flame accordingly or else Rissois will burn.Serve the hot Rissois for snacks, for parties its a great and handy snack. Server with sauce or ketchup .

{Recipe}Potato Cheese Balls

It was Children's day Celebration in Clive's School and they had some cultural fest along with many Food stalls .so i was much relaxed today😁
But how could i not prepare something Special for my kids on children's Day😍.so prepared some yummy cheesy potato cheese balls for Tea time snack 🧀🥔.This recipe will post soon on blog.Already there are two cheese balls recipe on my blog

My kids enjoyed it and wiped out the plate so their tummy happy and their Mummy Happy😍❤

Ingredients
4-6 Potatoes boiled and mashed
1 Green Capsicum finely chopped
1/4 Tsp crushed pepper corns and chili flakes
1/4 Mixed herbs(oregano,basil,rosemary)
1 Cup of Cheese grated
1 Cup of maida slurry
1- 2 Cups White Vermicelli crumbs for coating 
Salt as required
Oil for deep frying

Step wise Method
1.Add Mashed potatoes along with all other ingredients like capsicum,herbs,pepper and chili flakes,cheese,salt as required.
2.Mix all ingredients well and make small bite size rounds.Place it on a plate and keep the potato ball in refrigerator for 10-15 min. 
3.until the potato balls rest in fridge,other side prepare the white vermicelli crumbs by spinning in mixture for few 2-3 seconds. 

4.Also prepare the miada slurry by add water in maida and the consistency should be little liquid and not too thick  . 
5.Like below pic.

 6.Then remove the potato rounds from refrigerator and deep in to the maida slurry .
 7.Remove from slurry and coat with vermicelli crumbs and keep it aside.On the other side keep the oil to head n a deep pan or kadai.

8.Once oil proper temperature deep fry the potato cheese balls until they get nice light brown colour.
 
9.See the below how light brown colour they got.You will notice the potato balls will be crisp from outer cover and soft from inside.Once fried place them on kitchen napkin to absorb extra oil. 

 10.Server these cheesy potato balls to you tiny kids or big kids with dip sauce like tomato ketchup or mayo or just like that also kids will enjoy these flavorful Potato Cheese Balls.

{Recipe}Goan Beef Mince Potato Chops


Beef Minced Chops are small roundels of mash potatoes stuffed with cooked beef mince ,these beef chops are such a delicious snacks  that it just melts in your mouth and later burst of flavours. Chops are the favourite snack in most of goan Birthday parties ,get together's and other gatherings.Most of the household ladies prepare it in house or its also a famous snacks available in Goan Bakeries like Monginis, Pastry Palace and other local bakeries and local food stalls.


Beef chops are loved by kids and even the elders.I feel chops are perfect snack for hungry tummy as its large in size and tasty as its stuffed with Mince beef.If someone doesn't like Beef the same can be substituted by Mutton mince,chicken mince,boiled egg or vegetables of your choice.


These snack is yummy ,Tasty and Easy too,so lets begin to prepare these soft Beef mince chops.            

Servings 10
Total Preparation Time : 45 min
Cooking Time :25 min and 15 min Frying

Ingredients
1/2 Kilo Gram beef minced
1/2 Cup of frozen peas
2 Onions chopped
6-7 Potatoes boiled and mashed well
1 Tsp Coriander powder
1/2 Tsp Turmeric powder
Salt as per taste
2 Eggs beaten
Rava or bread crumbs for coating chops

Green Masala Ingredients
2-3 Table spoon Green Masala(ingredients below)
3-4 Green chilies
10 Garlic flakes
1 Inch ginger
10 Pepper corns
1 Small cinnamon stick
10 Cloves
1 Cup of Fresh green coriander
Goan Toddy vinegar for Grinding the masala.

Step Wise Preparation With Pictures.

  1. Arrange all the ingredients required,chop onions and also grind the green masala and keep aside.
     
  2. Keep pan on stove,once heated up add oil.
  3. Then add the chopped onions and saute nicely till translucent.
  4. Add the green masala and fry in the well for about 5 min.
  5. Once masala is fried well then add turmeric,coriander powder and the beef minced and frozen peas.Mix well and allow to cook for 5 min.Then add salt and cover and cook until the beef is cooked well.
  6. After some time open and check weather beef minced cooked well and also make sure water is completely dried off.
  7. Take the boiled potatoes ,peel them and mash into smooth dough.Make roundels and keep aside.
  8. The take each roundel of potato ,then flatten it on your palm or on flat surface and add the mince beef in centre.
  9. Cover the beef well with potato and make round patty shape.
  10. Then take the chops and dip in egg and then roll into rava and keep aside.
  11. Roll all the chops and arrange in a plate .
  12. Once all the chops are ready to shallow fry,then place a pan on stove and add oil as required.Place the chops and fry well till it gets light brown or golden colour.
  13. Once finished frying serve hot as a snack for hungry kids and elders. Prefect snack for your family picnic.



Note: You can also place the rava coated uncooked chops in refrigerator for future use.If stored in refrigerator then you can remove the chops 1/2 hour before shallow frying.
