{Recipe)Pomfret Recheado fry wrapped in Banana Leaf

Pomfret Recheado Fry not a simple Rava fry or Masala fry but this time I have fried Pomfret wrapped in Banana leaf and the out come is just Wow. The best part is fry doesn't require much of oil as its fried in deep pan by covering.
The Pomfret wrapped in banana leaf came on table firstly because I was in Goa, secondly my dad and hubby got some super fresh Pomfrets from Mapusa Fish market, lastly availability of fresh Recheado masala in house and the Banana leaf from our Garden. The only person who enjoyed to the maximum the wrapped  pomfret is Mr.Tony Greg as it is favourite dish predominantly because its oil free dish. So lets begin with this Super tempting and delicious Pomfret Recheado fry wrapped in Banana Leaf.

Ingredients
1 Large Fresh  Pomfret
1 Tender Banana Leaf
Salt
Oil as required

Step Wise Preparation
1. Purchase some Fresh Pomfret .

2.Clean and Cut the Pomfret. Nicely give cuts over the Body for the masala to stuff.
3.Then apply salt and recheado masala generously over the pomfret body.Rub it over the body so it gets nicely stuffed inside the cuts and the head.
4.Take the banana leaf and remove the center hard portion.Then place the leaf over the tray and then place the pomfret over it.
5.Once the pomfret placed well,then pack it properly with the leaf and tie with cotton thread or the tread of leaf itself.Make sure its wrapped well other wise masala will come out.
6.Take a large pan and add required amount of oil .Then Place the wrapped pomfret inside and  fry it on slow to medium flame until its cooked well.Make sure to cover the lid and cook .
7.At regular intervals turn the fish so that it cooked evenly.The end you will see the leaf has changed its colour to very light green and at few  places brown. That's the sign the pomfret cooked well.Your can even wait until the leaf is totally brown.
8.Open the leaf slowly and enjoy the super tasty hot Pomfret wrapped in recheado.

{Recipe}Prawns with raw mango

This recipe is my Mum's style Prawn in raw mango.We in Goa so lucky that we get fresh fish in our markets,and when in Goa i never miss out on preparing all my favourite fish recipes. Prawns are loved by all and we prepare many recipes like prawns Chili Fry,Prawn Balchao,Rava/Semolina coated Prawns Fry,Goan Prawns and Clams pulao ,Prawns Recheado fry GoanPrawn Rissois and many more, these are few you can find on my blog .Prawns is also prepared by using tamarind paste or just vinegar,or sometimes we use bimbli or even raw mango and it just tastes heaven. Not giving further more information presenting this simple with very minimal ingredients my mum style prawns in raw mango.

Ingredients
500 Gram Prawn Fresh and cleaned
2 Large onions finely chopped
2 Large Tomatoes finely chopped
4 Green chilies chopped
1/2  Cup raw mango chopped
1/2 Tsp turmeric
Salt

Step wise Method.
1.Firstly pick some fresh prawns.Fresh prawns will give the dish awesome taste.
2.Clean and devein the prawns and if the prawns are big then cut into two.
3.The chop onions,tomatoes ,green chilies and raw mango and keep it aside.
4.Then in the pan add oil,once heated add the onions,saute for 2-3 min on medium flame.Then one by one add the green chilies,then the tomatoes and last the raw mango and little turmeric too.
5.Cook all the ingredients for about 10 to 15 min on medium flame.
6.Last add the prawns and mix all well.Allow to cook for more 10 min on high flame or medium flame until water reduces .And there we get spicy tangy raw mango prawns dish.Goes well for side dish or with chapati or pao.

{Recipe}Ragi ladoo / Finger millet Laddu


Ragi or finger millet, you all are aware of its health benefits and i don't think i have to give further details  on it.
Its been in our diet from ages but because of its colour or flavour kids or even adults don’t like it. But as we see these days how modern food impacting our health so its beneficial that we redirect to basic food which is commonly available and so inexpensive as compared to junk food.

In early life Ragi was only used to prepare rotis or porridge.  But, today you have countless recipes, you can add ragi to any recipe and make the dish healthy. Name it Ragi dosa, idly, ragi poha,ragi cakes,cookies, in Goa we prepare dodol, Tizzan and the ragi recipes don’t stop here. So lately i make sure to add ragi in my diet regularly. Perhaps came up with this idea of ragi ladoo..

Gluten free, sugar free & and oil free Ragi ladoo...Super healthy for your kids and also Adults. Hungry tummy? just grab two and eat it rather grabbing chips or other junk food. You can see in pic my little one picking 😋 and elder one munching😍
Its been a month i got ingredients either to prepare dry fruit ladoo or ragi ladoo ,but after enquiring with my mum, my aunties i got idea about mixing the ingredients. Wanted to use jaggery but instead of jaggery used soft dates ,raisins and peanuts for stickiness and binding. While surfing you tube also got to know how dates or raisins can be used for binding instead of jaggery or ghee . And actually  flour nicely gets incorporated with dates , raisins and peanuts .

Servings 25-30
Total preparation Time : 1 hour

Ingredients
1 cup  of Ragi flour
1 cup roasted peanuts
1 cup of soft dates
1 cup of soft raisins
6 Cardamom
1/2 Inch cinnamon

Step wise method
1. Slightly roast the ragi/finger millet flour for 3 -5 minutes on slow flame and make sure you keep stirring it.This roasting method is to cut down the raw smell of Ragi.

2. Di seed the dates and cut half.Add it to mixer jar along with raisins and peanuts. Also add cardamom pearls n cinnamon to the jar. Grind it coarsely .

  3.To Mixer jar add ragi flour and grind all ingredients together. 
4.Once you see all incorporated well,remove it in bowl.Nicely knead the mixer and make round ladoo.


6.Once ladoo done store it in steel container or a glass container.At room temperature can be store up-to 2 weeks and for more you can store in refrigerator.
7.Healthy bite size power pack ladoo's are ready for your growing kids and your hardworking family:)
