{Recipe} White Coconut Chutney

White Coconut Chutney is one of the essential dip served along with Dosa, Idli, Vada and many other Dishes. There are many Chutney's prepared as dip like Green Coconut chutney, Red Coconut Chutney ,Pudina or Mint Chutney and many More. Chutney can be Spicy or slightly sweeter depending upon one's taste buds. White Coconut chutney is widely prepared in south India, chutney is not only used as dip for Dosa, Idli or Vada but also goes well with other dishes like Sabudana Vada, Chana dal Vada, Spicy Pongal, Lemon rice or even Roti. 
 
Its only after coming to Bangalore I have been exposed to more of Chutney, Dosa, Idli, Samabar and other south Indian Dishes. Other wise back in Goa its hotel Navtara well known in Panjim served Good South Indian Menu. In Bangalore I have visited many restaurants were they served tasty White Coconut Chutney. Few to mentioned A2B, MDP, Carnatic, Aggarwal Bhavan and few street side stalls located in Shivajinagar serves the tasty Chutneys. So over the period of time White Chutney has become one of our favorite Chutney when there's Dosa prepared for Breakfast.

1 Cup =250 ml

Ingredients
1 Cup Fresh Grated Coconut(Half Coconut)
1/4 Roasted Chana Dal(Chickpea )
3 Green chilies
10 Garlic Flakes
1 Tsp Mustard Seeds
10 -15 Curry leaves
Salt as per taste
Oil for seasoning

Step Wise Preparation With Pictures.

1.  Keep ready all the ingredients in a plate.
2. Then Add the freshly grated in the mixer jar.
3. Add Roasted chana dal and Green Chilies
4. Then goes the salt
5. Add the cleaned Garlic flakes.
6. Pour required amount of water depends on whether you want the Chutney thick or liquidy. 
7. Grind Coarsely if you want thick chutney or other wise grind into fine paste if liquidy.
8. For seasoning keep a small pan on stove ,add oil and allow it to heat.
                              
9. Add the mustard seeds in hot oil and allow it to splatter .
                                
10. Then add the curry leaves.Be careful while adding it, 
11. Together the seasoning of mustard and curry leaves add to the chutney when hot.
12. Give the chutney a good stir .
13. The White Coconut Chutney is ready to be served with hot crispy Dosa or Idli.

{Recipe}Tava Fry Bhindi |Tava Fried Okra|Tava Fried Lady Finger

"Tava Fried Bhindi "
or "Tava Fried Okra" is a spicy and slightly tangy side dish which goes best with Indian flat bread "Chapati", "Rice Roti's" or the Fulkas (a method practiced in India by preparing roti's on stove flame). It tastes good when prepared on tava because of the flat surface and tossing on high flame. If the same dish is cooked on Indian Chula it will taste more authentic with smokey flavour. Tava fried bhindi is classic and easy to cook as you require limited ingredients which you use to prepare Bhindi Sabji. Only difference is using of Tava instead of kadai. 

Okra or Lady Finger has many Health Benefits too. Its rich in Magnesium, folate (a salt or ester of folic acid), fiber, antioxidant and Vitamin C, K1 and A. Okra is also considered to be beneficial during Pregnancy, for heart health, helps control sugar level and also considered to have anti-cancer properties. (Details from Google)

For the Best Tava Fried Bhindi
  • Wash the Bhindi/Lady Finger and wipe it.
  • Cut into small roundels or like julienne.
  • Tossing of other ingredients should be on high flame 
  • No water used as the tomatoes and onions will leave its juices.
  • Also add little lemon juice to cut the slimy texture.
In this recipe I have used the flat Tava which is almost 7 years old and use it regularly for preparing Roti's. The surface being flat its little difficult to stir so its better you prepare dish in small quantity. Apart from Tava Bhindi you can try many other recipes like Tava potatoes, Tava Chicken, you can also prepare dry baby prawns chili fry and many more because the recipes prepared on Tava are always very tasty.

Ingredients
250 Gram Lady Finger/Bhindi
1 Large Onions chopped
1 Large Tomato Chopped
2 Green Chilies Slit
Curry Leaves
1 Tsp Chili powder
1/4 Tsp Turmeric Powder
1/4 Tsp Garam Masala
!/2 Lemon Juice
Salt as per Taste
Oil

Step Wise Preparation With Pictures.
1. Arrange all the Ingredients and begin to cook.Mean While Place Tava on stove.
           
2. Once oil is heated add oil,the add chilies,curry leaves,chopped onions saute for a min  and Tomatoes . Saute all ingredients well until tomatoes leave water.Cover and cook a min or 2.   
      
3. Open the cover and then add turmeric, chili powder, garam masala salt and mix all well.Then add the Bhindi and saute well again.

                

4. Saute the bhindi in the masala for 2 in continuously on medium high flame. Then add lemon juice and the chopped coriander. Toss well and the Tava Bhindi ready to be enjoyed with Hot Chapati or Fhulka's.
