Sweet Corn Raita



You must have always tried Tomato raita or onion raita or cucumber riata but just for experimenting tried making Corn Riata and it really turned to be very tasty .The sweetness of corn and the creamy texture of curd and the spicy flavour of green chilies really makes it a yummy raita. A great Raita to be served with Biryani's. You can also use it as some dip with nachos . It is so easy and quick to make ...So do try this healthy sweet corn raita.

Preparation Time : 10 min

Ingredients
1 Tin of Thick curd(approx 400 gram)
1 Cup of sweet corn
1 Cucumber cut into fine cubes
1 Onion finely chopped
1 Tomato cut into fine cubes
1 Green chili finely chopped(can add more for spice)
2 Tsp Green coriander finely chopped
2 Pinch of pepper crushed
salt as per taste

Method
  • In bowl add the chopped veggies that is sweet corn,tomato,onions,Green chilies,cucumber,pepper crushed,salt and green coriander.
  • Than mix the curd until smooth and then add in  the veggies and mix well.
  • Serve chilled with Biryani's or use as dip or enjoy the sweet corn raita JUST LIKE THAT !!!

Ambade sansav( Goan Hog Plum curry)

Ambade Sansav is Tangy curry prepared in Goa by using Ambade.(Hog Plum).Sansav is loved by every one from kids to elders to old.The Tangy ,spicy and sweet taste of the sansav makes every one lick their fingers. In Goa Ambade sansav is also included in the festival menu of Ganesh Chaturti and Diwali. My Mom prepares the best sansav and its  my all time favorite.Being in Bangalore its was little difficult to find ambade,so  when my mom send me few ambade from Goa i din't miss a chance to make the recipe and Post it and i also enjoyed it.Yum!!!
Servings 6 to 8
Total Preparation Time : 45 Min
Cooking Time : 20 min

Ingredients
20 Ambade (Hog plum)
1 Cup grated coconut
2 Table spoon of grated jaggery
4-5 Dry chilies
1/2 Tsp Dry coriander seeds
1/4 Tsp turmeric powder
2-3 Tsp spoon oil
1/2 Tsp Mustard seeds
5-6 Curry leaves
Water as required
salt as per taste

Method
  • First peel the Ambade and soak in salt water for 1/2 hour.
  • On the other hand grind grated coconut,coriander seeds,dry chilies,turmeric powder and jaggery .make sure its little rough and not smooth mixture.
  • Than in kadai add oil,once heated add mustard and allow it to crackle .Add curry leaves and also add ambade and toss well.Cover and cook for 2-3 min
  • Add the ground masala ,salt and mix well.Cover the lid and simmer for 5 min.
  • Add required water and cook for more 10 min.
  • Serve Hot or mild Hot along with Steamed rice,dal curry and some Bhaji and Ambade as side dish.

Sheera/shiro/Suji Halwa

"Sheera" or "Shiro"a sweet dish prepared in most of the goan homes during morning or evening tea time. Shiro or sheera is quick sweet dish which can be prepared. Most of the kids relish the taste of Shiro/ Sheera,its a sweet dish prepared by roasting semolina in ghee and then cooked by adding sugar water and garnishing with dry nuts. In sheera we can also add milk and saffron  but today i have cooked by using just sugar water .My son's favourite sweet dish. Sheera is not just famous in Goa but also in states of Maharashtra, Karnataka and also in Northern states.

Ingredients

1 Cup Rava/Semolina
3/4 Cup Sugar
2 Cup Water
1/2 Tsp Cardamom Powder
3 Cloves
10-15 Raisins
3 Table Spoon Ghee

Method

  • In Pan add ghee,once heated add semolina/rava and roast well,along add raisins as well,let the colour change to light brown.
  • Remove the roasted rava in one plate and keep aside.
  • In Pan add water,cardamom powder,cloves and allow it to boil,then add sugar and stir well.
  • Once water is boiling add semolina/rava,stir for a while.
  • Cover the pan and allow it to cook on slow flame for 5 min.
  • open the pan and stir the sheera well. Sheera is described as good only if its not sticky so make sure you add generous amount of ghee.Serve Hot and enjoy.

Rava/Semolina coated Prawns Fry

Prawns is always categorised among royal fish, you consume in any form you will relish the taste of Prawns.In Goa Most of the fish fry is done by coating with Rava/semolina and we just love it.So lets begin with Rava Prawns fry.

Ingredients

20 Fresh Prawns 
1 Tsp lemon juice
1/2 tsp pepper crushed
1/2 tsp turmeric powder
1/2 tsp chili powder
Rava/semolina for coating
salt as per taste
Oil for frying

Method
  • Clean the Prawns,(can keep the shells but cut the extra legs)then apply salt,pepper,turmeric,chili powder,lemon.
  • Mix well and allow it to marinate for 5 to 10 min.
  • Then coat prawns in rava/semolina and keep aside.
  • Heat oil in pan and shallow fry the rava coated prawns.
  • Serve Hot with steam rice and fish curry.So yumm ,can be a best starter as well.
