Goan Beef Roast


"Goan Beef Roast "The Most awaited recipe which i wanted to post on my Cocina. Its simple to make with simple ingredients involved . Preparation of beef roast involves marinating beef with the aromatic spices for a night and then cook on slow flame for and hour.

The caramelized onion juices and the oil of dry red chilies just gives extra flavour to the Beef roast.Best to serve as a appetizer or you can place a slice of Beef roast in pao and just enjoy the sandwich.

Total Preparation Time :12 hours
Cooking Time:1 Hour

Ingredients For Marination
1/2 Kg Beef Uncut Piece
1/2 Tsp of Cumin seeds
10 Pepper corns
5-6 cloves of Garlic
1/2 Inch Ginger
1/2 Tsp Turmeric Powder
5 Cloves
1/2 Inch Cinnamon
1 Table spoon of Vinegar

For Roasting
1/2 Tsp Sugar for Caramelization
2 Onions finely sliced vertically
6 Kashmiri chilies
1/2 Lime Juice
2 Large potatoes for making wadges(sprinkle pepper and chili flakes)
Salt as per Taste
Oil for Frying

Method
1.First wash the uncut piece of Beef and towel dry.Then give some cut over the meat and apply salt and lemon and keep aside.Grind cumin seeds,ginger,garlic,pepper corns,cloves,cinnamon,turmeric powder ,vinegar and grind into fine paste.Apply the paste to beef, and marinate for over night.

2.After the marination is done,add few tsp of oil in pan and fry for about 15 min till the beef pieces till golden brown.

3.In other pan add again 2-3 tsp of oil and saute onions and red chilies.cook for 1-2 min on slow flame.

4.Then add chunks of beef and roast in onions on slow flame for an approx of hour or till you feel its cooked well.Make sure you also add the juices of the beef from the earlier pan,also keep turning the pieces of beef in process of roasting.cook till colour changes to golden brown.

5.While the Beef cooks,on the other side fry some potato wadges for serving along with roast.Once beef roast is done allow it to cool down.Than cut the beef into thin slices and serve along with potato wadges.Heat the Beef roast before serving and Enjoy the every bite of beef roast because its taste is just classic.

Chettinaad Chicken Fry Recipe


"Chettinaad Chicken"is a Classic Indian recipe from the region of Chettinaad which belongs to Sivaganga district of southern Tamil Nadu. Chettinaad Chicken is either made in gravy form,dry or fry.Be it fish,chicken or mutton chettinaad preparations,the flavours of freshly ground spices such as onions,curry leaves ,ginger-garlic,peppers and chilies and with liberal amount of oil makes every chettinaad preparation a speciality. So today i have tried preparing Chettinaad Chicken Fry by Chef Sanjeev Kapoor .

Since today is Mother's Day i thought let me treat my Mom and my son with something special and yummy.When i first tried Chettinaad chicken fry i just loved the crispy and spicy flavour, so i again wanted my mommy to Try the taste of Chettinaad in Goa.

Servings 4
Total Preparation Time :2 hrs 40 min
Cooking Time :40 min

Ingredients
1 Kg Chicken cut into medium
6 Dried red chilies
Few pepper corns
5-6 Flakes of garlic
1 Inch of Ginger
2 Medium size of onions
1 Stick of fresh curry leaves
2 Table spoon of rice flour
1 Lime juice
1/2 Tsp Turmeric powder
1 Green chili for extra spice
Salt as per taste
Oil for shallow frying

Method

  • First wash Chicken and drain out the water well.Apply salt and keep aside.
  • In Mixer jar add red chilies,onions chopped,ginger -garlic,pepper corns,turmeric,green chili and curry leaves.Grind the spices into fine paste.
  • Apply the ground paste to chicken,also add lime juice and rice flour to the chicken.
  • Mix all the ingredients well into the chicken and keep aside to marinate for 2 hours or more.
  • Than spread oil in pan and fry chicken on slow and later on medium flame till crispy or till the masala coats well to the chicken pieces.
  • Serve Hot as a appetizer or side dish.

Virgin mojito


"Mojito"is traditionally Cuban highball,consisting of five ingredients ie. white rum.sugar,lime juice,sparkling water(soda)and mint leaves.Today's mojito non-alcoholic,prepared by adding lime,sugar,mint and sparkling water.It is so refreshing in this scorching heat .

Serving 2
Total Preparation time :10 min

Ingredients
1 Lime cut into small pieces
1 Table spoon lime juice
1 table spoon sugar(use as required)/can use sugar syrup also
2 pinch of salt
1 Bottle of sparkling water/soda
10 mint leaves
Ice cubes as required
1 Nutella bottle for serving

Method

  • In a steel glass add lime juice,lime pieces,sugar,salt and mint leaves.
  • Muddle the ingredients well with a muddler or a wooden stick available in the kitchen.
  • Mix it so well that the lime and mint leaves gets crushed properly.Once all the ingredients mix well than add the mixture in a large glass or a nutella bottle.
  • Add sparkling water and stir the mojito well.At last at ice cubes and serve chilled.
