{Recipe} Rava Ladoo/Semolina Ladoo

Rava Ladoo or semolina Ladoo is  more loved dish during festival of Ganesh Chaturthi. The festival being tomorrow why not share this simple recipe of ladoo's. A quick sweet dish prepared by using few ingredients like semolina,sugar,coconut and nuts.You could also check festival sweet recipes on my blog which includes Milk Sheera,Besan Ladoo,Neureos and now one more edition Rava ladoo. I have always seen my mum and aunty prepared ladoo's but never tried hands on it.Today followed their recipes but only added koya to get extra flavour and this khoya idea i got it from one of the you tube chef from Ruchkar Mejwani.

Ganesh Chaturthi Special

Ingredients
250 Gram Rava/Semolina
200 Gram Sugar
200 Gram Fresh grated coconut
50 Gram Khoya
2 Table spoon Ghee
2 Tsp Cardamom powder
3 Table spoon water

Method
1)First process begins with roasting of rava in ghee,roast for little while may be for about 3 min.Make sure the rava colour remains white.
2)Then remove the roasted rava in separate plate and in the same pan add grated coconut,sugar and water.Cook for about 3-4  min until the sugar melts and becomes liquid.
3)After sugar melted well,then add khoya and dry fruits and again cook for 2-3  min.
4)Allow the mixture of sugar,coconut and khoya to cool down for 15 min.Later add the cooled mixture into roasted rava and mix well.Then again allow to rest for 5 min so the rava soaks the sugar liquid.
5)The give one mix and shape into round ladoo's and spread on plate.
6)Your ladoo's are all ready to serve .Prepare during Christmas or Diwali or Ganesh Chaturthi or just any time when you feel like preparing and you will enjoy every bite of it.

Never had a clue how to start blogging. But, once my bundle of joy "Little Clive" arrived I had to quit my corporate role. Switching to full time Mommy and relishing it to the fullest,Clive would keep me on my toes but my passion & love for cooking never stop rather, doubled. Clive has been a fussy eater during his initial years which pushed me to invent new recipes.

My quest to utilize the "little time" from all this chores was ON. A day when I was looking for recipes over the internet I just realized, when I can search for recipes why not add my own. That's how my journey of blogging began and its going on :). I love every bit of sharing recipes with you all.

Also not to forget Mr.Tony Greg my Husband who is also very supportive in what I do and also a food judge along with my son Clive.

My small world includes my Family which always motivates me to move forward, not to forget my friends,well wishers who constantly appreciate my cooking and this keeps me motivated to try different recipes and cuisine.

Cooking thrills me, Motivates me, Innovates me, Surprises me, Mesmerizes me making me fall in love with it all over again. Though cooking is a routine task, it doesn't make me feel tired rather makes me feel Happy. I Can only end by saying the below Quote

{Recipe}Chicken sesame stir fry

Chicken sesame stir fry is the amazing chicken recipe prepared by tossing ingredients on high flame until light brown in colour. The recipe also includes honey ,sugar and other sauces which gives it distinct brown caramelization and also the roasted sesame gives a nice crunch while consuming chicken. Just goes well with steamed rice or can use as stuffing in your roti's,tortillas or pita breads.

Servings 4
Total Preparation Time : 40
Cooking Time : 20 min

Ingredients
200 Gram Boneless chicken
1/2 Cup sliced yellow and red bell peppers
1/2 Cup Broccoli florets
1 Onion sliced
1 Table spoon Ginger chopped
1 Table spoon Garlic chopped
1 Tsp corn starch
1 Table spoon roasted sesame seeds
1 Tsp pepper crushed
2 Table spoon of Honey
1 Tsp sugar
Salt for taste
olive oil

Method
1)wash the chicken and dry it nicely.Then cut the chicken into strips.
2)Arrange all the ingredients required.
3)Add olive oil in pan,once heated throw the chicken strips and saute on high flame,once nicely cooked keep aside.Sprinkle salt while tossing

4)Same way saute other veggies too,saute in oil on high flame,sprinkle little salt while tossing.

5)In pan again add oil.once heated then add onion,ginger,garlic chopped and saute.Then reduce the flame and add soya sauce,green chili sauce and honey.Stir all the liquid ingredients well .Once they get boil add the sugar and corn starch by mixing in little water.Mix well and cook until u see a glaze like texture.

6)Then add the tossed chicken and veggies and mix in that caramelized sauce .cook by stirring continuously so it doesn't stick to a pan.

7)Sprinkle on top pepper crushed and sesame and toss well again.may cover and cook for 2-3 min on slow flame.

8)Chicken sesame stir fry is ready .Serve hot and enjoy.

{Recipe}Chicken Pakoda or Chicken fritters


Chicken Pakora is tempting boneless chicken fritters recipe prepared by coating the chicken with besan batter/Chickpea batter and deep frying.Although i have already Chicken Pakora Recipe but this one is with little twist.

Servings 6
Total Preparation Time: 40 min
Coking Time : 15-20  min

Ingredients
250 Gram Boneless Chicken cut into cubes
1 Onion sliced
1 Table spoon chopped ginger/garlic
2 Green Chilies chopped
1 Lemon juice
1 Table spoon chopped spring onion leaves
1/2 tsp turmeric powder
1/2 tsp Pepper powder
1/2 tsp Garam masala
1 Table spoon chopped green coriander leaves
1 Cup Gram flour/Chickpea flour
Salt as per taste
Oil for deep frying

Step wise Method
1) Take washed and towel tried boneless chicken bowl.Then add salt,turmeric powder,garam masala,pepper crushed,green chilies chopped,ginger/garlic chopped,chopped spring onion leaves,chopped coriander ,lemon juice.
2)Then add sliced onions to the chicken and mix well.
3)Add chickpea flour and mix well .At the same time keep oil for heating in deep pan.
4)Let the oil get nicely heated.
5)start to add the chicken pieces and fry them.
6)Deep fry them until crisp and serve hot as starter or side dish.

{Recipe}Chicken Stuffed Paratha

Paratha's have always been great options for mommies to feed their fussy kids.There is no imagination limit for mommies as to what stuffing they will add in paratha's. Some stuff paratha on my blog are like Stuffed aloo paratha recipe,Mango stuffed paratha,royal koya and dry fruits paratha,paneer stuffed paratha and there is no end for what stuffing you want to add. So today one more add on to my paratha list that is Chicken stuffed paratha and it was just loved by my little Clive :).
Chicken stuffing prepared by using minced chicken and then by adding few ingredients available in your kitchen like chopped onions,green chilies,ginger garlic paste and other dry powdered masalas's that all.Just fry the rolled stuffed chicken paratha in Ghee or butter and just enjoy for breakfast or dinner time.Any point of time chicken paratha's will be awesome snack.

Servings 6
Total Preparation Time : 25 min
Cooking Time : 10 -15 min

Ingredients
250 Gram Boneless boiled chicken
2 Large Onions finely chopped
4 Green chilies
2 Table spoon ginger/garlic roughly ground
1 Tsp pepper crushed
1/2 Tsp Cumin Powder
1/2 Tsp Garam Masala
1 Cup fresh coriander chopped
Salt as per Taste
Ghee for frying

Method

1)Knead dough and keep aside to rest.

2)First take the boiled boneless chicken and get it minced by using mixture grinder.Then in pan add oil,once heated add chopped onions.Let the onions saute until transparent.Also add to it ginger garlic crushed  and green chilies.Saute again for 1 min.Pour the cooked ingredients in boiled chicken along with cumin powder,pepper crushed, garam masala,chopped coriander and salt.Mix all the ingredients well in minced chicken and keep aside.
3) Then take a small ball size dough and roll into small roti,then fill the chicken mixture.
4) Pack well and make sure the stuffing doesn't spill out.
5) Roll into normal paratha ,make sure the edges are roll thin.
6) The fry the paratha using ghee.Fry until both sides are light brown in colour.
7) The paratha is done.Serve hot with tomato ketchup or sauce.

{Recipe}Goan Chanya Ros/White Pea Curry

Chanya Ros is one among authentic vegetarian recipe in Goan Cuisine.This recipe of ros is prepared by using pulses and most common pulses used are white peas ,green peas or Alsande(Black eyed beans) and then cooked in roasted  coconut gravy .Its mostly prepared in Hindu household and its common dish for festivals like Ganesh Chaturthi or Diwali. Ros is loved by Christians too especially for breakfast with hot paos or unnde.
Chanya Ros is one my favourite curry which i just  relax and enjoy with Goan pao or unno for breakfast. Ros is also best option for lunch with pickle and papad or some semolina coated fried veggies like potato fry as side dish just makes your lunch wow.Its been long that i wanted to post the recipe but couldn't  because most of the time after finishing ross(gravy) i would remember of clicking pic.

Total Preparation Time : 12 hours

Ingredients
200 Gram White Peas
1/2 Coconut Grated
2 Onions
1 Table spoon Coriander seeds
4 Dry Red chilies
1 Tsp Turmeric Powder
1 Tsp Cumin
1 Tsp of  Fennel seeds
1 Tsp of Poppy seeds
20 Pepper corns
5 Cloves
1 Small stick of cinnamon
Small ball of Tamarind
Salt as per taste
Oil

Method
  1. Soak the White peas overnight.Next day morning drain the water and then boil by adding salt and turmeric powder it until soft.Do not over cook.
  2. Roast the one onion,coconut and all the above dry spices mentioned by adding little oil.(coriander seeds,pepper corns,cinnamon,cloves,poppy seeds,dry chilies,fennel seeds).
  3. Then Grind all the ingredients along with tamarind to fine paste using required water.
  4. In Pan add oil,once heated up add mustard seeds and curry leaves.Then add onions and saute for 1 min.
  5. Once onions turns translucent add boiled chana and mix well.
  6. After shimmering for 2 min add the ground masala .Mix all well and cook for 10 min on medium flame.
  7. Serve this mouthwatering Chanya Ros with steamed rice/Roti/Chapati or Goan Pao or Undde.
