Tawa Chicken Fry


Tawa Chicken is the chicken cooked on a flat pan which we use to make roti's. Tawa Chicken is again a form of dry chicken dish which is the best starter and a treat for our  tongue. Yet again a dish with limited ingredients and also you don't require sophisticated or trendy vessels or pans .

Total Preparation Time : 1 Hour 40 min
Cooking Time : 30 min

Ingredients
1 Kilo Gram whole chicken(can cut into Just 4 pieces or can keep whole)
1/2 Table spoon Fresh Garlic Paste
1/2 Table spoon Fresh Ginger paste
1 Table spoon Yogurt
2 Large ripe tomatoes finely chopped
4 Fresh chilies 2 red and 2 green slit vertically
1/4 Bowl of green coriander for garnishing
2 Table spoon of roughly ground Cumin and dry coriander seeds
1 Tsp of chili flakes
Oil for Frying

Method
  • Take a whole Chicken and give it few cuts to make it flat or you can cut into 4 pieces so its easy to turn on Tawa.
  • Than apply salt,ginger-garlic paste and yogurt,rub the ingredients well on the body of chicken and into the cuts.Allow the chicken to marinate for 1 hour.
  • Place the Tawa on stove,add oil once oil is heated place the chicken and after few seconds cover it with large steel bowl which is deep and of the size and radius of Tawa .
  • Allow the Chicken to cook for 10 min.After 10 min turn the chicken with tongs and again cover it and allow to cook for more 10 min.
  • Than again flip the Chicken,it must have changed the colour to light brown.At this stage add chopped tomatoes and chili flakes.Cover the chicken and allow it cook for more 10 min so that the tomatoes gets cooked and leaves its juices.
  • Then flip it again ,but at this stage do not cover the lid because now we should make sure the liquid gets dried from the tawa.
  • Now sprinkle the roughly ground cumin -coriander ,flip it one more time so that spices goes down the chicken.Take the gravy from the Tawa and place it on top of the chicken.
  • Than sprinkle fresh coriander leaves,spread the chopped fresh chilies,Turn one more time the Chicken so that the fresh chilies gets roasted .At last add the chopped onions and cover it with bowl and switch off the stove.Onions will get cooked inside since its covered .
  • Serve chicken in other plate or Tawa and serve Hot and enjoy .I just loved it,hopefully even you guys will love it.Do try and enjoy with Family.Cheers

Pepper Garlic Crab Stir fry


Crabs are always loved by people staying in coastal belt and it is called as Kurlo/kurle and the most common recipes prepared out of crabs in Goa are crab xec- xec,Crab masala,crab xacuti ,crab curry etc .Since my dad bought some nice fresh large crabs i thought let me prepare some quick stir fry with limited ingredients.The pepper and garlic flavors just gave the Crabs beautiful spicy taste,it was just kind of joy to relish the meaty crabs.Be ready to messy your fingers with the lip smacking sauces of pepper garlic crab stir fry .

Total Preparation Time : 40 min
Cooking time : 20 min

Ingredients
1 Kg Crabs Cleaned and Cut into two halfs
2 Onions chopped finely
1 large table spoon Garlic chopped
11/2 Tsp pepper crushed
11/2 Tsp Red chili flakes
1 Table spoon Hot and sweet chili garlic sauce
3-4 Small fresh red chilies
1 Table spoon Vinegar
Salt to taste
Oil
water

Method

  • In a large bowl add the crabs,wash them well and apply salt and keep aside .
  • Keep a deep pan or a casserole on stove,add oil and once heated add onions and saute for 1 or two min till translucent.
  • Than add garlic and again saute for few seconds.Make sure the flame is on slow.
  • Now add crushed peppers,fresh red chilies chopped,chili flakes and sweet and hot chili and garlic sauce.
  • Stir all the ingredients well,Than add little water and allow the sauces to cook for 2-3 min.Keep a watch and don't allow the ingredients to burn.
  • Than add the crabs and toss well in the sauces ,add table spoon of vinegar and toss again.
  • Now cover the pan and allow the crabs to cook on slow flame.If you feel the crabs are very dry than can add little water and again cover and allow to cook on slow flame for 10-15 min till the sauces are thick and coats the crabs well.
  • Serve Hot with steamed rice or can just enjoy the Crab stir fry all single as a starter.Be ready to mess your fingers with the lip smacking sauces of pepper garlic stir fry .
