Potatoes tossed in garlic and pepper!!!

When there is very little time to think as to what to make for Lunch box??This is the best recipe which is easy and quick to make !!!

Servings 2
Total Preparation time : 10-15 min

Ingredients
2 large potatoes cut into cubes
10 cloves of garlic chopped
1 tsp pepper crushed
1/2 tsp garam masala
1 tsp lemon juice
green coriander for garnish
salt to taste
little oil for frying

Method
Keep pan for heating,add little oil,than add the garlic chopped and pepper and fry well in the oil .Than add the potatoes cut into cubes,salt and garam masala,toss well in the garlic .Cover the pan and let it cook on slow flame till the potatoes are cooked.once cooked add lemon juice and garnish with coriander leaves.Best served with chapati!!!!



Quick Chicken Fry !!!

Servings 3
Total preparation time 20 min

Ingredients
250 gram chicken
1 lemon
1/2 tsp garam masala
1 table spoon barbecue sauce
salt to taste
1/2 tsp tomato sauce
1/4 tsp soya sauce
1/4 tsp pepper crushed
onions rings and lemon for dressing

Method
Take the Chicken pieces and apply the ingredients ie salt,lemon,garam masala,barbecue sauce,tomato sauce,soya sauce,pepper,now mix all the ingredients well into the chicken pieces.You can allow marination for about 5-10 min or you can quickly place the chicken in pan for frying.Let the chicken fry on slow flame for about all 20 min till its color changed to dark golden brown.Serve with salad of your choice.

Drumstick stir Fry !!!

Servings 3-4
Total Preparation Time : 15 min

Ingredients 
4 drumsticks cut and cleaned
1 large onion
1 tomato
1/2 coconut scrapped
curry leaves
1 tsp mustard seeds
1/4 tsp turmeric
salt to taste
oil for frying

Method
In one deep pan add oil ,once oil is heated add mustard and curry leaves,once splattered add chopped onions and stir well.Than add chopped tomatoes,turmeric powder and mix well,add drumsticks,salt and toss well ,allow it cook for 5 min,add water if required.Remove the lid than add the scrapped coconut on top and again let it cook on for 5-7 min on slow flame.Serve hot as side dish or can eat just plain .!!!

Fig and Almonds smoothie !!!

Servings 4-5
Total preparation time 20 min

Ingredients
200 ml yogurt
5 figs
4 Strawberries
10 almonds
3 cardamon
sugar as required
Ice cubes

Method
In a mixture jar add yogurt,figs cleaned and washed,almonds,sugar,ice cubes,4 strawberries  and cardamon powder.Grind all the ingredients well till smooth.serve chill !!!

Watermelon punch !!!

Servings 3-4
Preparation Time : 10-15 min

Ingredients
1/2 watermelon cubes
5-7 ice cubes
1/2 inch ginger
10 leaves of fresh mint
1/2 lemon
salt to taste
sugar as required

Method
Take a mixture jar or a hand blender,then add watermelon cubes,ginger,mint,sugar or honey,pinch of salt and lemon.Then blend properly and strain well.Serve chilled by adding ice cubes .Enjoy the summery drink.

Spicy Poha Recipe !!!

Servings 3-4
Total preparation time : 15 min

Ingredients
2 large cups poha/Flatten rice
1 large onion chopped
2 green chilies
1 tsp mustard seeds
10 curry leaves
1/4 tsp turmeric powder
1/2 tsp sugar
7-10 cashew nuts broken
1/2 cup scrapped coconut
green coriander for garnishing
Aloo Bhujia for sprinkle
oil for frying

Method
Firstly soak flatten rice in water for few min may be 1-2 min and squeeze out excess water and place on other plate .In other Vessel add oil,once heated add mustard ,curry leaves,than once its splatter add chopped onions and chopped green chilies,later add turmeric ,cashew nuts ,salt and sugar ,stir all well.Finely add the flatten rice and toss well in the ingredients,on top add the scrapped coconut ,cover the plate and let it cook on low flame for 2 min.last garnish with green coriander and mix well.While serving can also garnish with aloo bhujia or in local language chivda :)


Note: Do not over soak Flatten rice other wise Poha wont be separated and ultimately the recipe wont be perfect  .


Chicken soup with Fusilli Pasta

Servings 5-6
Total preparation Time : 30 min

Ingredients
1/2 cup boiled Pasta of your choice
1 onion chopped
5 cloves of garlic
1/2 cup potatoes cut in cubes
1/2 cup corn kernels
1 cup boneless chicken cut into pieces
1/2 cup carrots finely chopped
1/4 tsp basil
1/4 pepper crushed
pinch of red chili flakes
1 Maggie cube
2 tsp corn powder mixed in water
salt as per taste
butter for frying

Method
First of all boil corns,potatoes,carrots and chicken till its cooked,can us pressure cooker or normal vessel.Meanwhile add butter in pan ,once heated add chopped onions,chopped garlic and fry well ,than add the boiled chicken and veggies ,stir well than add the pepper,chili flakes and basil leaves.Than add  required water ,once its start boiling add boiled pasta, Maggie cube and salt as per taste.For thickening the soup add corn starch,make sure you keep stirring once starch is added.Serve hot in cold weather or anytime when you feel like having some light meal.

Crab xec-xec !!!


Servings 6-7
Total Preparation time: 30 min

Ingredients
1 kg fresh sea water Crab
1 small coconut scrapped
2 large onions
3 table spoon dry coriander seeds
10 red chilies
5 gloves of garlic
4 cloves
1 tsp. turmeric
1 tsp. cumin seeds
small round tamarind
10 pepper corns

Method
In pan add oil once heated add onions ,sauté till golden brown ,than add the crabs which are already marinated in salt and turmeric powder for 5-10 minutes, toss it well in onion, cover the lid and allow it to cook on slow flame. Meanwhile on other side ,add little oil in pan and fry onion and coconut till golden brown, then add the remaining ingredients i.e. coriander seeds, cumin, tamarind, red chilies, garlic, and pepper corns, roast it for 1-2 min along with coconut. Once the ingredients are cooled grind it into fine paste. The same ground masala add in crabs and cook until the masala nicely gets immersed in crabs. Serve with Hot rice .Can also eat  with Goan Pav.  If eaten on next day its more tastier :)

 

Goan Style Fish curry & Fish fry !!!

Servings 5-6
Total Preparation  time 30-40 min

Ingredients: for fish curry
1 kg lady-fish/half use for frying
(In konkani its called Mudoshi,can take fish of your choice)
1/2 scrapped coconut
1 table spoon dry coriander seeds
1/2 tsp cumin seeds
5 cloves of garlic
2 small onions
small amount of tamarind
1/2 tsp turmeric
5-7 dry red chilies
1 green chili
salt to taste

Method
In mixer jar add scrapped coconut,one onion,cumin seeds,coriander,garlic,tamarind,turmeric,red chilies,add water and grind till smooth paste by adding required water. Till its grinding add salt to fish and keep aside.Than once ingredients ground well pour it into a clay pot or any vessel .once its starts boiling add remaining cut onion and one slit green chili,lastly add the fish and allow it to shimmer on slow flame till the fish is cooked well.Serve hot with Steamed rice with fish fry as side dish !!!


For frying 
Apply salt,lemon,turmeric and pepper crushed for the remaining fish ,mix well and allow it to marinate for 5 min ,than apply rava/suji for fish and shallow fry till crisp or golden brown.











Kashmiri Rajma Masala !!!

Servings 4-5
Soaking time : whole night
Total preparation time : 60 min

Ingredients
200 gram Kashmiri Rajma
(red kidney beans)
2 table spoon ginger/garlic/green chili paste
1 large onion chopped
1 large tomato chopped
1/2 tsp turmeric powder
1/2 tsp red chili powder
1 tsp coriander powder
1 tsp garam masala
1/2 tsp cumin powder 
1 stick of cinnamon
5 cloves
3 cardamom
10-15 pepper corns
2 table spoon ghee
salt to taste

Method
In pressure cooker add soaked kidney beans,along with that add all the ingredients mentioned above and water as required,cook until the kidney beans are soft .Once cooked if required you can do seasoning of curry leaves. Is it not so simple to make and  yet the taste will be amazing in taste.Serve hot with steamed rice or roti.
